SPARKLING COSMO
The inspiration for this cocktail came from a girls night last week where we splurged on a few bottles of Champagne and, as per usual, everyone wanted me to make cocktails to get the night going. We were initially saving the Champagne for later in the evening, but as the Cosmopolitans were going down so well, we just started topping them off with the Champagne. This new and improved Cosmopolitan was such a hit that we named it the Sparkling Cosmo and never looked back. Using fresh cranberry and lime juice in this cocktail makes all the difference, pairing nicely with the light citrus notes in the vodka and the sweet, mellow orange flavor of triple sec. Finally, topping off each glass with Champagne gives the cocktail a celebratory feel while also adding a note of freshness. Here's to the new Cosmo that sparkles.

A light and sparkling take on one of our favorite cocktails, the cosmopolitan. Tips for making this for a crowd are below. If you prefer slightly sweeter cocktails, consider add dash of simple syrup to the cocktail. One 750-ml bottle of champagne will serve 10 to 12 people.

- Combine vodka, triple sec, cranberry juice, lime juice, and ice in a cocktail shaker. Shake until very cold. Taste and if the mixture seems to tart, add a dash of simple syrup or agave.
- Pour into a chilled martini glass then top with champagne or sparkling wine.

- Place cranberry juice in a medium saucepan and bring to the boil over high heat. Cook, uncovered, for 10 minutes or until reduced by two-thirds. Remove from heat and set aside for 30 minutes to cool.
- Combine the cranberry juice, Cointreau and lime juice in a small jug. Place a sugar cube in each serving glass. Pour the cranberry mixture over the sugar. Top with Champagne or sparkling wine and serve immediately.
