Champagne-Infused Blackberry Soup with Sour Cream Sorbet image

Number Of Ingredients 11

2 cups water
1/2 cup sugar
Juice from 1/2 lemon
3 cups blackberries
3 mint leaves
1/4 cup Champagne or sparkling wine
1 tablespoon sugar
1 cup water
1/2 tablespoon corn syrup
Juice from 1 lime
1/2 cup sour cream

Steps:

  • Soup: In a saucepan, bring water, sugar, blackberries and lemon juice to a boil over medium-high heat. Simmer for approximately 10 minutes, then add mint leaves. Remove from heat and let cool. Blend mixture together in a mixer or food processor, then strain through a sieve.
  • Sorbet: In a medium saucepan, bring sugar, water and corn syrup to a boil over medium-high heat. Let cool, then stir in lime juice and sour cream. Churn in an ice cream maker until proper consistency is achieved.
  • To serve: Divide blackberry soup into four equal parts and pour into separate bowls. Put 1 scoop of sorbet in the middle of each bowl and drizzle with champagne.

4 cups water
9 cups strawberries (frozen can be used)
1 cup sugar
1 lemon, juice of
1/2 cup champagne (or sparkling wine)
6 mint leaves, plus more, for garnish
lime sorbet (yogurt or vanilla ice cream may be substituted) (optional)

Steps:

  • In a saucepan, bring water, strawberries, sugar, lemon juice, and Champagne to a boil.
  • Let simmer for 10 minutes, then add mint leaves. Let cool to room temperature.
  • Blend together with an immersion blender or in a standing blender, then strain through a sieve. Chill in the refrigerator, covered, for 3 hours.
  • Serve in soup bowls with a scoop of ice cream, sorbet, or plain/vanilla/lemon yogurt. Or just plain! Garnish with mint leaves.

St. Martin's, and their sister restaurant, Arthurs Steak House are my two favorite, quiet, romantic, restaurants in Dallas. This Champagne Brie Soup is one of their signature items. It is like velvet. It is SO easy! St. Martin's is also nice enough to post the recipe on their web site! I wanted to be sure that I posted it and "advertised" it here too, so that even folks who do not live in Dallas can enjoy it!

2 cups dry champagne
2 cups white wine
1 tablespoon finely chopped shallot
2 chicken bouillon cubes
8 ounces brie cheese, with rind left on
1 1/2 quarts heavy cream

Steps:

  • 1. Sauté shallots and bouillon in wine.
  • 2. Add remaining wine and champagne and then add brie and heavy cream.
  • 3. Bring to a boil for an instant just until head forms then remove from heat and let stand for 5 minutes.
  • 4. Strain.
  • 5. Taste for adding salt if you want.

1 cup sugar
1/2 cup water
1 1/2 pints fresh raspberries
2 tablespoons balsamic vinegar
2 1/2 tablespoons chopped fresh rosemary
1/2 cup sugar
1/2 cup water
1 1/2 pints fresh raspberries
2 cups good-quality Champagne or other sparkling wine, chilled

Steps:

  • To make the sorbet, combine the sugar and water in a small saucepan over medium heat. Simmer for 5 minutes and set aside to cool. Place the raspberries, sugar syrup, vinegar and rosemary in a blender and puree until smooth. Let stand for 1 hour. Strain through a fine-mesh sieve. Refrigerate until cold. Freeze according to the directions on your ice-cream machine.
  • To make the soup, combine the sugar and water in a small saucepan over medium heat. Simmer just until the sugar dissolves. Let cool. Place all but one-half cup of the raspberries in a blender with the sugar syrup. Puree until smooth. Strain through a fine mesh sieve and refrigerate until cold.
  • Just before serving, divide the soup mixture among four bowls and add one-half cup of Champagne to each. Place a scoop of the sorbet in the soup and garnish with the remaining raspberries.
