Puree of Celeriac Soup with Glazed Celeriac and Curried Apple image

Provided by Food Network

Time 2h45m

Yield 8 servings

Number Of Ingredients 20

5 cups water
2 cups chopped celery root (chopped in food processor)
1 teaspoon celery seed (tied-up in a swatch of cheesecloth)
1 teaspoon kosher salt
1 teaspoon sugar
4 cups peeled and small-diced celeriac
4 cups heavy cream
2 1/2 cups celeriac stock
Salt
1 cup peeled and medium-diced celeriac
1 cup water
2 teaspoons unsalted butter
1 teaspoon sugar
Pinch salt
5 tablespoons honey
3 tablespoons butter
2 tablespoons spicy curry powder
1 teaspoon kosher salt
4 Granny Smith apples, peeled
3 celery stalks, leaves removed and reserved for garnish

Steps:

  • Make the Stock: Combine all the ingredients in a large pot and bring to a boil. Lower the heat and simmer for 45 minutes. Strain the stock, return to the pot, and bring to a boil. Reduce the stock to 2 1/2 cups. (The stock can be made up to 3 days in advance and refrigerated, covered.)
  • Make the Soup: Combine all of the ingredients in a non-reactive pot, season with salt, to taste, and bring to a boil. Lower the heat and simmer until the celeriac is tender.
  • Strain the soup, reserving the celeriac and liquid separately. Working in small batches, puree the celeriac with enough liquid to let the blender blades spin, and transfer to a bowl. Whisk enough liquid into the puree to reach a soup-like consistency. Strain the soup through a fine-mesh sieve. . (The soup can be made up to 3 days in advance and refrigerated, covered.)
  • To make the Glazed Celeriac: Combine all the ingredients in a large skillet over medium heat and cook, stirring occasionally, until the water has evaporated and the celeriac is glazed. Set aside.
  • To make the Curried Apple and Celery: Preheat the oven to 300 degrees F. Combine the honey, butter, curry powder, and salt in a medium oven-proof skillet and cook, until fragrant and bubbling, stirring occasionally over medium heat. Add the apples and baste them with the curry mixture, using a kitchen spoon. Transfer the skillet to the oven and bake, basting every 15 minutes, until the apples are tender and glazed, about 1 hour. Let the apples and cool. Core the apples and cut into slices about 1/16 inch thick. Set aside. (The apples can be made up a day in advance and refrigerated, covered.)
  • Meanwhile, bring a small saucepan of salted water to a boil. Using a peeler, peel the celery, removing the strings. Thinly slice the celery on the diagonal, add to the water, and cook until crisp-tender, about 30 seconds. Using a slotted spoon, transfer the celery to a bowl of ice-water, to stop the cooking. Drain and set aside.
  • When ready to serve, arrange the glazed celeriac, curried apple, and celery in the bottom of 8 soup plates. Meanwhile, bring the soup to a boil in a teapot. Place the soup plates in front of your eagerly awaiting guests, and dramatically pour the soup from the teapot into each plate.

LAVENDER ROASTED VENISON SWEET POTATO-CELERIAC PUREE AND SHERRY VINEGAR GASTRIC

Lavender Roasted Venison Sweet Potato-Celeriac Puree and Sherry Vinegar Gastric image

Provided by Food Network

Yield 6 servings

Number Of Ingredients 15

1 ounce dry lavender
1 ounce salt
1/2 ounce cracked back pepper
3 pounds venison loin, boneless and trimmed
4 sweet potatoes
1 large celeriac
1 lemon, juiced
3 tablespoons unsalted butter
1 cup sugar
1/2 cup water
1/2 cup sherry vinegar
2 teaspoon fresh thyme, chopped
2 cups canola oil for frying
1 bunch Swiss chard, cleaned and chopped into 1- inch ribbons
2 tablespoons unsalted butter

Steps:

  • Four Hours Prior: In a spice grinder, combine lavender, salt and pepper. Pulse 2 or 3 times only, to lightly grind together. Coat the venison generously with the lavender rub. Set aside in the refrigerator for at least 3 hours.
  • 90 Minutes Prior: Preheat oven to 400 degrees. Roast 3 whole sweet potatoes in the oven for 45 minutes or until very soft. Set aside, but do not allow them to cool completely. While the sweet potatoes are roasting, peel and dice (1 inch cubes) the celeriac. Simmer the celeriac in salted water until very tender, test with a paring knife. Drain the celeriac and hold in a warm place while you peel the sweet potatoes. Place the warm celeriac and warm sweet potatoes in the food processor and pure until very smooth, add the butter and lemon juice and season to taste with salt and pepper. Hold the puree in a warm place until you are ready to serve.
  • 45 minutes prior: In a heavy stainless steel pan, mix sugar and water. Simmer over medium high heat, brushing the sides with a wet brush to prevent crystallization. Once the mixture has become caramel, with a medium amber color, remove from the heat and whisk in the sherry vinegar. Once the vinegar is fully incorporated, whisk in the fresh thyme and set the sauce aside, holding at room temperature. Cut the remaining sweet potato into a very fine angel hair. In a small, heavy stainless steel pan, heat the canola oil to 300 degrees. Carefully fry the sweet potato straw until crisp but not browned. Drain the straw well on paper towel, season with salt and set aside.
  • 30 minutes prior (Oven should still be on at 400 degrees): Preheat a large saute pan on the stove over high heat. In the hot pan, sear the venison evenly until the entire piece of meat is dark brown and crusty. Place the venison on a roasting rack in a roasting pan and roast for approximately 20 minutes. The internal temperature of the meat should be no more than 115 degrees for a perfect medium rare. Once the meat has reached desired temperature, remove from the oven and allow to rest in a warm place for at least 10 minutes.
  • To complete the whole meal: In a large saute pan, over medium heat, gently steam the Swiss chard with 2 tablespoons of butter, covering the pot. When the chard is appropriately wilted, carve the venison and plate all of the components in the desired fashion, garnishing with the sweet potato straw.

2 heads garlic, top 1/3 trimmed to expose cloves
2 tablespoons olive oil
1 1/4 teaspoons kosher salt
1/4 teaspoon plus 1/8 teaspoon freshly ground black pepper
2 tablespoons canola oil
10 heads celeriac, roughly chopped (about 7 1/2 pounds total)
8 tablespoons butter cut into 8 pieces plus more if needed
2 cups celery, peeled and finely minced (about 6 stalks)

Steps:

  • Preheat oven to 375°F.
  • Place garlic in small baking dish. Drizzle with olive oil and sprinkle with 1 teaspoon salt and 1/8 teaspoon pepper. Cover tightly with foil and roast until golden brown and fragrant, about 50 to 60 minutes. Uncover dish and cool garlic, then squeeze softened cloves into small bowl and set aside.
  • In heavy stockpot over moderate heat, heat canola oil. Add celeriac and sauté, stirring frequently, until starting to soften, about 8 minutes. Drain celeriac, reserving liquid, and transfer to food processor. Add roasted garlic. Turn motor on, then slowly add butter, 1 piece at a time, pureéing until smooth. Pureé should appear slightly thinner than mashed potatoes. If too thick, add small amount reserved cooking liquid, 2 tablespoons at a time. If too thin, add additional butter, 1 tablespoon at a time.

BROWN BUTTER-POACHED HALIBUT WITH CELERIAC PURéE & CAPER CRUMBS

Brown butter-poached halibut with celeriac purée & caper crumbs image

This elegant seafood dish will really wow someone special with its delicate flavour and texture - pollock or plaice also work well

Provided by Good Food team

Categories     Dinner, Main course

Time 1h5m

Number Of Ingredients 14

200g butter
1 shallot , finely chopped
1 bay leaf
4 peppercorns
2 skinless, boneless halibut fillets, cut from the thick end, about 100-150g/4-5.5oz each
cavolo nero , kale or spinach, to serve
knob of butter (from the amount above)
300g celeriac , peeled and cut into bite-sized pieces
200ml milk
75ml double cream
knob of butter (from above)
4 tbsp fresh breadcrumbs
1 heaped tsp capers , roughly chopped
1 tbsp roughly chopped parsley

Steps:

  • To make the purée, melt a small knob of butter in a saucepan, add the celeriac and cook over a medium-high heat until starting to brown a little, about 5 mins. Pour over the milk and cream, and season well - the celeriac should be just covered, so add more milk if needed. Bring to a simmer, cover and cook for 15 mins or until tender. Drain, reserving the cooking liquid, and transfer to a food processor. Blend until smooth, then sieve into a clean saucepan, pushing the celeriac through with the back of a spoon or spatula. Add a little of the cooking liquid to loosen the purée if needed, and taste for seasoning.
  • To make the crumbs, heat a small knob of butter in a frying pan, add the breadcrumbs and cook, stirring, until golden brown. Throw in the capers and cook for 30 secs more. Tip into a bowl and leave to cool a little, then stir through the parsley.
  • Heat oven to 140C/120C fan/gas 2. Gently melt the butter in a small ovenproof saucepan or frying pan, big enough for the fish fillets to fit snugly. Once melted, add the shallot, bay leaf and peppercorns. Keep heating until the butter turns a light brown colour and smells nutty. Leave to cool a little. Gently lower the fish fillets into the warm butter, basting any exposed fish, and transfer to the oven. Cook for 3-4 mins, depending on the thickness of the fish, then turn the fillets over and cook for a further 3-4 mins or until just opaque and feeling firm.
  • While the fish cooks, reheat the purée and steam the greens. To serve, spoon the purée into the centre of each plate; use the back of the spoon to spread out slightly into a circle. Top with the greens, then carefully place the halibut on top. Drizzle with a little of the poaching butter and scatter with the crumbs.
