BRIE BURGERS WITH FRIES



Brie Burgers with Fries image

12 ounces frozen French fries
1 tablespoon plus 1 teaspoon Dijon mustard
2 teaspoons white wine vinegar or champagne vinegar
1 small shallot, minced
1 tablespoon plus 2 teaspoons vegetable oil
1 1/2 pounds ground beef
1 tablespoon Worcestershire sauce
Kosher salt and freshly ground pepper
6 ounces brie cheese, cut into 8 thin slices
4 brioche buns, split
1 small bunch watercress, tough stems trimmed
Cornichons and ketchup, for serving

Steps:

  • Bake the fries as the label directs. Meanwhile, whisk 1 teaspoon mustard, the vinegar, half the minced shallot and 2 teaspoons vegetable oil in a large bowl; set aside.
  • Combine the beef, remaining minced shallot, remaining 1 tablespoon mustard, the Worcestershire sauce, 1/2 teaspoon salt and a few grinds of pepper in a medium bowl. Form into four 4-inch patties (about 3/4 inch thick). Heat the remaining 1 tablespoon vegetable oil in a large skillet over medium-high heat. Add the patties and cook until browned, 3 to 4 minutes per side for medium rare; top each with 2 slices brie during the last 2 minutes of cooking and cover to melt.
  • Toast the buns. Add the watercress to the bowl with the dressing, season lightly with salt and pepper and toss to coat. Put the burgers on the buns and top with the watercress salad. Serve with the fries, cornichons and ketchup.

With gooey, melty cheese on a double burger with browned and crusty bits, plus fresh, crunchy toppings and a soft, steamy bun served alongside golden fries, this is pretty darn close to the real thing served at that restaurant chain run by those five brothers. Make these burgers and fries at home and save lots of money while satisfying your fast food cravings. Serve the fries with malt vinegar and enjoy with a cold beer... you can't get that at the restaurant!

2 medium russet potatoes
8 cups peanut oil for frying
14 ounces ground chuck
4 thick slices American cheese
1 teaspoon hot sauce (such as Frank's Red Hot ®)
1 tablespoon mayonnaise
2 medium sesame seed burger buns
½ cup shredded iceberg lettuce
2 thick slices tomato
2 tablespoons diced onion
1 tablespoon pickle slices
2 teaspoons mustard
2 teaspoons ketchup
1 teaspoon kosher salt

Steps:

  • Cut potatoes in 1/2-inch wide strips. Place in a large bowl filled with warm water and soak for 20 minutes.
  • Pour oil in a Dutch oven and heat over medium-high heat until it reaches 350 degrees F (175 degrees C). Line a rimmed baking sheet with paper towels and set a wire rack on top.
  • Drain potatoes well and dry thoroughly with paper towels. Add 1/2 of the dried potatoes to the hot oil and cook, stirring often, until they soften slightly, about 3 minutes. Remove potatoes to the wire rack to drain. Repeat with remaining potatoes. Maintain oil temperature at 350 degrees F (175 degrees C) for finishing fries just before serving.
  • Divide ground chuck into 4 portions and flatten to form 1/4-inch thick patties.
  • Heat a large skillet over medium-high heat. Add burger patties to the hot skillet and cook undisturbed, until a brown crust has formed around the edges, 2 to 3 minutes. Flip, press down with a spatula to flatten, and cook for 2 more minutes. Flip again, press down once more, then top each patty with a slice of cheese; cook for 1 minute.
  • While the burgers cook, spread mustard and ketchup on bottom halves of the buns. Drizzle hot sauce on the top halves of the buns, then spread mayonnaise over top. Layer with lettuce, tomato slices, pickles, and onions.
  • Invert 1 patty onto a second patty so the cheese sides are touching. Repeat with remaining 2 patties. Place a stacked patty onto each top bun, and cover with a bottom bun, condiment-side down. Wrap burgers in foil.
  • Return fries to the hot oil and cook until golden brown, 3 to 4 minutes. Drain on paper towels and sprinkle with salt. Serve immediately with burgers.

1 1/4 pounds, 4 large handfuls, haricots verts - thin green beans, trimmed
2 tablespoons light in color oil, such as vegetable oil or peanut oil
2 tablespoons sesame seeds
Salt

Steps:

  • Bring 2 inches water to a boil in a large skillet. Salt water once it comes to a boil. Blanch haricots verts in boiling water 2 minutes, drain and cool. Pat beans dry on paper towels.
  • Dry skillet as well and return to heat. Heat pan over high flame and add oil to coat the bottom of pan. Add beans to hot oil and stir fry using tongs to move and toss the beans until they are charred and very hot, 3 to 4 minutes. Sprinkle beans with sesame seeds and cook 30 seconds more, to both toast the seeds and distribute them. Pile fried beans onto a serving plate and sprinkle with salt, to your taste.

Why should potatoes have all the fun? These cute little French green beans are a lower-carb, lower-fat alternative to pommes frites, also known as: a pile of fries. Pair these with any of the Burgers, No Buns.

Yield 4 regular servings or 2 supersized servings

1 1/4 pounds (4 large handfuls) haricots verts (thin green beans), trimmed
2 tablespoons light-colored oil, such as vegetable oil or peanut oil
2 tablespoons sesame seeds

Steps:

  • Bring 2 inches water to a boil in a large skillet. Salt the water once it comes to a boil. Blanch the haricots verts in the boiling water for 2 minutes, then drain and run under cold water to cool. Pat the beans dry on paper towels.
  • Dry the skillet as well and return it to the heat over high flame. Add oil to coat the bottom of the pan. Add the beans to the hot oil and stir-fry using tongs to move and toss the beans until they are charred and very hot, 3 to 4 minutes. Sprinkle the beans with the sesame seeds and cook for 30 seconds more, to both toast the seeds and distribute them. Pile the fried beans onto a serving plate and sprinkle with salt to taste.
