TANGY PIT BEANS

Sweet and tangy, these are everything you want barbecue beans to mean and more.

3 cups ketchup
1 cup diced onion
1 green or red bell pepper, seeded and diced
1 1/2 cups packed brown sugar
1/2 cup sorghum or honey
2 tablespoons prepared yellow mustard
1 to 1 1/2 tablespoons Magic Dust
1 large can (28 oz.) pork and beans
1 can (19 oz.) large red kidney beans, drained and rinsed
1 can (15 1/2 oz.) chili beans
1 can (15 1/2 oz.) large butter beans, drained and rinsed
1 can (15 1/2 oz.) of great northern beans, drained and rinsed
4 or 5 slices bacon or a few cooked ribs or some barbecued pulled pork

Steps:

  • Preheat oven to 350 degrees. Mix ketchup, onion, bell pepper, brown sugar, sorghum or honey, mustard, and Magic Dust together in a large bowl.
  • Gently stir in beans with hand or large wooden spoon until evenly distributed.
  • Pour beans into a 13x9-inch baking dish. Lay strips of bacon, ribs or pork across top. Cover with aluminum foil and bake for 45 minutes. Remove foil and bake for an additional 15 minutes or until bubbly. Remove from oven and let cool for 15-30 minutes. Serve immediately or transfer to an airtight container and store in refrigerator for up to 1 week or freezer for up to 1 month.

2 tablespoons prepared yellow mustard (such as French's)
3 cups ketchup
1 cup diced onion
1 medium green bell peppers or 1 medium red bell pepper, diced
1 1/2 cups brown sugar
1/2 cup sorghum or 1/2 cup honey
1/2 teaspoon paprika
3/8 teaspoon table salt
3/8 teaspoon granulated sugar
1/4 teaspoon mustard powder
3/8 teaspoon chili powder
3/8 teaspoon ground cumin
1/4 teaspoon fresh ground black pepper
3/8 teaspoon granulated garlic
1/8 teaspoon cayenne pepper (to taste)
1 (28 ounce) can pork and beans, such as Campbell's
1 (19 ounce) can red kidney beans, rinsed
1 (15 1/2 ounce) can large butter beans, rinsed
1 (15 1/2 ounce) can navy beans or 1 (15 1/2 ounce) can great northern beans, rinsed
1/4 cup pulled pork or 2 -3 cooked pork ribs

Steps:

  • Preheat oven to 350°F.
  • In a large bowl, mix together mustard, ketchup, onion, bell pepper, brown sugar, sorghum or honey and spices. Stir until smooth. Add beans and stir gently until combined, being careful not to smash the beans too much.
  • Pour into a 9x13 pan. Lay bacon strips over the top, or sprinke pulled pork evenly over the top. If using ribs, remove and shred the meat, then sprinkle over the beans. Cover with foil and bake 45 minutes.
  • Remove foil and bake another 15 minutes, or until bubbly. Serve hot. Keeps refrigerated up to 1 week, or frozen up to 1 month.

1 1/2 pounds squid, cleaned
1/4 cup olive oil
Salt and freshly ground black pepper
1/4 cup red wine vinegar
2 lemons, juiced
3/4 cup extra-virgin olive oil
2 cloves garlic, minced
1 teaspoon fresh oregano, chopped fine
1 teaspoon chile flakes
2 teaspoons salt
1 teaspoon black pepper

Steps:

  • Preheat grill.
  • Clean the squid thoroughly, removing the backbone and head. Separate the tentacles from the body. Leave the tentacles and the body, whole.
  • Brush the squid with the olive oil and season with salt and pepper. Place on a hot grill and mark on all sides. Grill until cooked through about 3 minutes.
  • In a bowl mix together the vinegar, lemon juice, extra-virgin olive oil, garlic, oregano, chile, salt, and pepper. Pull the squid from the grill and cut the body into inch-sized rings leaving the tentacles whole. Put the squid in the marinade hot. Mix well. Serve warm or chilled as a meze with a glass of ouzo.

Loukoumathes: Fritters with Honey and Cinnamon image

1 envelope active dry yeast
3 cups warm water
4 cups flour
1 cup milk
2 eggs, beaten
1 teaspoon vanilla
Vegetable oil, for frying
2 cups honey
1/4 cup sugar
1 cup water
Cinnamon, ground, to taste

Steps:

  • In a large bowl, dissolve yeast in 2 cups warm water, proof for 5 minutes. Add 2 cups of flour to the yeast mixture, whisk to incorporate. Add in the milk and eggs. When fully mixed, add in the other 2 cups of flour. Batter should be thick but not solid, if necessary, thin with more water. Whisk in vanilla. Cover and let rise for about 2 hours.
  • For the syrup, in a small pot mix together the honey, sugar, and water and bring to a boil, turn down and simmer until completely dissolved and keep warm.
  • Heat the oil to 360 degrees and with a large spoon, drop the batter into the hot oil. It will immediately puff and come to the surface. When golden brown on both sides, remove with a slotted spoon and drain on paper towels. Drizzle with warm syrup and sprinkle with cinnamon. Serve immediately.

4 tablespoons cane sugar, plus more to rim glass
4 cups ice
6 ounces light rum
10 to 12 mint sprigs
6 tablespoons fresh lime juice
Club soda
4 slices lime

Steps:

  • Moisten the rims of 4 glasses with lime and dip into cane sugar. Set aside.
  • Place ice in beverage shaker then add in the rum. Break up half of the mint leaves and add to the shaker with the lime juice and sugar. Shake well and serve over ice in a funky glass. Top off each glass with a splash of club soda. Garnish each glass with a slice of lime and a sprig of mint.

2 teaspoons chili powder
1/4 cup dark molasses
1/2 cup bottled chili sauce
2 tablespoons white vinegar

  • Combine all ingredients in bean pot or crock pot with lid, mix well.
  • Cover and bake at 400ºF for 1 hour for thin bean mixture, or 1-1/2 to 2 hours for thicker bean mixture.

Quick, simple and packed with goodness, try these beans as part of a pick-and-mix Mexican supper

1 tbsp olive oil
1 onion , thinly sliced
2 garlic cloves , chopped
1 tbsp white or red wine vinegar
1 heaped tbsp soft brown sugar
400g tin pinto beans , drained and rinsed
400ml tub passata
1 tsp Worcestershire sauce or vegetarian alternative (optional)
small bunch coriander , chopped

Steps:

  • Heat the oil in a small pan. Fry onion until starting to brown, then add garlic and cook for 1 min. Add vinegar and sugar and cook until onions are caramelised. Stir in beans, passata, Worcestershire sauce (if using) and seasoning and simmer for 10-15 mins until thickened. Stir through coriander and serve.

I got this just a couple of days ago from an emailing in another recipe group I'm in...they are quite good. I added a small diced jalapeno for a bit of bite. Even my 7 y/o liked these.

1 cup packed brown sugar (I used Dark Brown)
2 tablespoons Worcestershire sauce
1/4 cup dark molasses
1/2 cup chili sauce
2 -4 tablespoons vinegar (I ended up using more like 4)

Steps:

  • Combine all ingredients in oven proof dish or crock pot; mix well.
  • Cover and bake on high in crock pot or 350 in oven, until desired thickness; about an hour to an hour and a half.

1 lb thick cut apple-smoked bacon
2 large onions, medium dice
1 (117 ounce) can baked beans
1 (108 ounce) can dark red kidney beans, drained and rinsed
2 (15 ounce) cans butter beans
1 cup ketchup
1 cup dark brown sugar, packed
1/2 cup yellow mustard
1/4 cup cider vinegar
1/8 cup Worcestershire sauce
1 cup barbecue sauce, your favorite brand

Steps:

  • bake the bacon on a sheet pan at 350 degrees until crispy.
  • remove bacon and crumble it.
  • on the sheet pan add the onions to the bacon drippings in a single layer and place back in the oven for a few minutes until they are translucent.
  • place all of the ingredients in a large aluminum roasting pan and gently fold until all of the ingredients are combined.
  • Bake at 350 degrees for 1 to 1/2 hours.

I found this recipe online after searching for quite a while. These beans are the recipe from Love's restaurant that is no longer in West Covina that I loved so much as a kid. This recipe was taken from a previous employee at Love's. It's spot on!

3 can(s) (1 lb) ea. pork and beans
1 c packed brown sugar
2 Tbsp worcestershire sauce
2 tsp chili powder
1/4 c dark molasses
1/2 c bottled chile sauce
2 Tbsp vinegar

Steps:

  • 1. Combine all ingredients in bean pot or crockpot with lid, mix well. I used a pyrex 13 x 9 or bigger which worked fine too.
  • 2. Cover with foil or lid and bake at 400 degrees F for 1 hour for thin bean mixture, or 1 1/2 to 2 hours for thicker bean mixture.
  • 3. Sprinkle with crumbled bacon bits to serve if desired.
  • 4. *Special tip that a reviewer wrote: I tested the recipe,added some fried bacon and the left over bacon drippings, and smoked the beans for four hours on my Traeger Pellet Smoker. The recipe was spot on, even the chile sauce (Hienz Chili) was right. It was like being at Love's all over again.
