Number Of Ingredients 13

1/3 cup finely chopped carrots
1/3 cup finely chopped celery
1 cup thinly sliced green onions
2 cups water
1 medium onion, chopped
3/4 cup butter, cubed
1 cup plus 2 tablespoons all-purpose flour
4 cups whole milk
4 cups chicken broth
1 jar (15 ounces) cheese dip
1/8 teaspoon cayenne pepper
Salt and pepper to taste
1 tablespoon prepared mustard

Steps:

  • Combine carrots, celery and green onions in water; cook until tender. Set aside. Saute onion in butter until limp; stir in the flour and blend well. Do not brown. Combine milk and broth; bring to a boil. Whisk in onion mixture. Add cheese dip, cayenne, salt and pepper, and mustard. Slowly stir in vegetables and water they were cooked in. Bring just to a boil; serve immediately.

Modified version of a recipe from Cracker Barrel® restaurant's excellent brunch dish. It can be cooked the day before and reheated or frozen and reheated.

1 (2 pound) package frozen hash brown potatoes, thawed
1 (16 ounce) container sour cream
12 ounces shredded sharp Cheddar cheese
1 (10.75 ounce) can cream of celery soup
1 onion, chopped
½ cup butter, melted, divided
¼ teaspoon ground white pepper
⅛ teaspoon cayenne pepper
1 cup crushed corn flakes
1 cup crushed cheese-flavored crackers (such as Cheez-It®)

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix potatoes, sour cream, Cheddar cheese, cream of celery soup, onion, 1/4 cup butter, white pepper, and cayenne pepper together in a bowl; spread into a 9x13-inch baking dish. Sprinkle corn flakes and cheese-flavored crackers over potato mixture and drizzle remaining butter over the top.
  • Bake in the preheated oven until bubbling and cooked through, about 1 hour.

3 ½ cups shredded cheddar cheese
1 cup shredded parmesan cheese
1 tablespoon cornstarch
¼ teaspoon cayenne pepper
½ clove garlic
3 cups milk
1 cup chicken stock
1 cup broccoli, finely chopped
1 baguette

Steps:

  • Over medium heat, combine cheese with cornstarch and cayenne pepper.
  • Once melted, slowly add garlic, milk, and chicken stock.
  • Add finely chopped broccoli and allow to simmer about 5 minutes while making cheese toasts.
  • Cover slices of baguette bread with shredded cheddar and broil for 3 minutes.
  • Enjoy!
