SALMON CAVIAR TORTE

6 tablespoons mayonnaise
3/4 stick (6 tablespoons) unsalted butter, melted and cooled
8 hard-cook large eggs, chopped fine
1/2 cup finely chopped celery
1/3 cup finely chopped red onion
1 1/2 tablespoons fresh lemon juice, or to taste
1/4 cup finely chopped scallion greens
1/4 cup minced fresh chives
1/4 cup minced fresh dill
8 ounces cream cheese, softened
1/2 cup sour cream
6 ounces salmon caviar
Garnish: dill sprigs
Accompaniments: pumpernickel and rye toast points

Steps:

  • In a bowl whisk together mayonnaise and butter and stir in eggs, celery, onion, lemon juice, and salt and pepper to taste. Spread mixture in an oiled 9-inch springform pan and sprinkle evenly with scallion greens, chives, and dill.
  • In a small bowl stir together cream cheese and sour cream until smooth. Drop dollops of cream-cheese mixture over herbs and spread carefully (keeping herb layer intact) to form an even topping. Chill torte, covered, at least 8 hours and up to 1 day.
  • Just before serving, run a thin knife around edge of pan and remove side. Transfer torte to a serving plate and spread caviar over top. Garnish torte with dill sprigs and serve with toast points.

Served at my wedding and it was the biggest hit. People cannot quite identify what is in it, but they love it.

6 hard-boiled eggs, very finely chopped
3 tablespoons mayonnaise
salt and pepper
1 sweet onion, very finely chopped
8 ounces cream cheese
2/3 cup sour cream
black caviar
20 crackers, to serve

Steps:

  • Mix the bottom layer ingredients and put in an 8 inch springform pan.
  • Put middle layer on top of that; and then mix top layer ingredients and put on top.
  • Chill overnight.
  • Use a cookie cutter on top and fill with caviar to make a nice design.
  • We used a heart shape at the wedding and filled it with salmon roe and made a nice design of salmon roe around the border-- one of our colors was orange for the wedding so it looked lovely.
  • I've also seen this with small red caviar in the middle in a heart shape with black caviar all around the edges-- gorgeous.
  • remove the sides of the springform pan to serve with crackers.

Appetizer torte has layers of red onions sauteed in Champagne with cream cheese, hard-boiled eggs, avocado, and topped with caviar. It is a great way to stretch your caviar investment without breaking the bank. This makes enough for a crowd, but you may easily cut it in half for smaller parties.

Number Of Ingredients 12

1 cup finely chopped red onion
1 cup Champagne
2 (8-ounce) packages cream cheese, whipped
16 eggs, hard-cooked, coarsely chopped
1/2 cup mayonnaise
1 teaspoon salt
1/2 teaspoon white pepper
4 large, ripe avocados, mashed
1/2 clove garlic, minced
2 teaspoons fresh lemon juice
1/2 ounce black caviar or lumpfish roe
Water crackers

Steps:

  • Place the red onions and Champagne in a large skillet over medium-high heat. Cook until the Champagne reduces completely, 10 minutes.
  • Remove from the heat and stir into the cream cheese. Cover and set aside.
  • In another bowl, mix together the hard-boiled eggs and mayonnaise. Season with 1/2 teaspoon of the salt and 1/4 teaspoon of the pepper, and mix until thoroughly combined. Cover and set aside.
  • In another bowl, mix together the avocados, garlic, and lemon juice. Season with the remaining 1/2 teaspoon salt and 1/4 teaspoon pepper, and mix until thoroughly combined.
  • Layer ingredients in a 10-inch springform pan. Spread the egg mixture on the bottom and smooth the top until even. Spread the avocado mixture on top of the egg mixture and smooth the top until even. Spread the cream cheese mixture on top of the avocado mixture and smooth the top until even.
  • Cover with plastic wrap and chill at least 3 hours or until firm. (Torte can be made up to 2 days in advance.)
  • Just before serving, spread an even layer of caviar on top of torte. Place the torte on a silver tray or serving platter. Undo the springform pan latch.
  • Carefully run a knife around the edge of the torte to loosen from the pan. Gently lift away the pan's side. Wipe the side of the serving tray if necessary.
  • Place flowers or a thin lemon or lime slice in the center of the torte. Set crackers around the base of the torte and place on the buffet table with a serving knife.
  • Yield: 100 servings on an hors d'oeuvre buffet
