1 tablespoon coconut oil
1 large onion, chopped
4 cloves garlic, minced
1 tablespoon minced fresh ginger, or more to taste
1 tablespoon curry powder, or more to taste
2 teaspoons ground coriander
2 teaspoons ground cumin
8 cups vegetable broth
1 cup dry red lentils, rinsed and drained
1 head cauliflower, broken into florets
2 cups cubed sweet potato
3 cups fresh spinach

Steps:

  • Heat coconut oil in a large saucepan over medium heat. Add onion and garlic and saute until translucent, 5 to 6 minutes. Stir in ginger, 1 tablespoon curry powder, coriander, and cumin and saute until fragrant, about 2 minutes more. Pour in broth and lentils and stir to combine. Bring mixture to a low boil; reduce heat and simmer for 5 minutes.
  • Stir in cauliflower and sweet potato. Cover, reduce heat to medium-low, and simmer until cauliflower and sweet potato are tender, 20 to 25 minutes. Season with salt and pepper and add more curry powder if desired. Stir in spinach and cook until wilted, 3 to 5 minutes.

1 large head cauliflower, coarsely chopped
2 medium white onions, halved and thinly sliced
3 tablespoons olive oil
1 ½ teaspoons ground cumin
1 ½ teaspoons ground coriander
1 teaspoon salt
½ teaspoon ground black pepper
2 tablespoons salted butter
4 cloves garlic, crushed
1 large potato, with skin, cut into 1-inch pieces
1 teaspoon ground turmeric
1 (32 fluid ounce) container vegetable stock
2 tablespoons sliced almonds

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Place cauliflower and onions on a baking sheet. Drizzle with olive oil and sprinkle with cumin, coriander, salt, and pepper; mix to coat.
  • Place in the preheated oven and roast until cauliflower is browned and cooked, but not too soft, about 25 minutes.
  • While cauliflower is roasting, melt butter in a large saucepan over low heat. Add garlic and cook until fragrant, about 3 minutes. Stir in potato and turmeric. Add stock and increase heat to medium; bring to a simmer. Cover and cook until potato is soft, about 10 minutes.
  • Remove cauliflower and onions from the oven. Place 1 cup cauliflower in a bowl and set aside. Add remaining cauliflower and onions to the soup. Return soup to a simmer and cook until flavors have melded, about 5 minutes.
  • While soup is simmering, place almonds in a dry skillet over low heat. Cook, stirring frequently, until golden, 3 to 5 minutes.
  • Puree soup with an immersion blender until smooth. Adjust seasoning as needed. Ladle into bowls, add reserved cauliflower, and top with toasted almonds.

Roasted Cauliflower Potato Leek and Garlic Soup image

This soup is made from roasted vegetables that are easily found in Winter, just the time you're craving something creamy and comforting. I love creamy soups so I used cream, but this would be great with low fat milk or extra stock and no dairy.

3 cups cauliflower, cut in small florets
2 cups potatoes, peeled and cut in 1-inch dice
2 cups leeks, white and light green parts only, sliced
1 head garlic
2 tablespoons olive oil, divided
1/4 lb bacon, diced
4 cups chicken stock
3/4 cup heavy cream
1/2 teaspoon dried rosemary
1/2 teaspoon dried thyme
salt & pepper
1/2 cup white cheddar cheese, coarsely grated for garnish

Steps:

  • Preheat oven to 375 degrees.
  • Toss cauliflower, leeks and potatoes with 1-1/2 tablespoons olive oil and salt and pepper to taste.
  • Spread mixture on 2 large foil lined rimmed baking sheets that have been lightly coated with non-stick spray. Roast 20 - 25 minutes until tender and lightly browned.
  • Cut the top off the head of garlic place on a square of foil and drizzle with the remaining olive oil. Roast 25 - 30 minutes,until the bundle feels soft.
  • While the vegetables are roasting. cook the bacon in a large soup pot until it is crisp. remove from pan and drain on paper towels. Discard all but a scant tablespoon of the bacon drippings.
  • Squeeze the roasted garlic out of the skins and mash them with in a small bowl with 1/2 cup chicken stock until well incorporated. Set aside.
  • Add the cauliflower, potatoes and leeks to the pot along with any browned bits. Toss the vegetables to coat with the drippings in the pot. Add 1/2 cup chicken stock and stir to loosen the brown bits in the pot.
  • Add the remaining stock to the pan. Cover and bring to a boil. Reduce the heat and cook covered for 25 minutes.
  • Add the garlic/stock mixture and cook another 10 minutes. the vegetables should be very soft at this point.
  • remove the pot from the heat and blend until smooth using an immersion blender. Return the mixture to the stove.
  • Over low heat, add the cream and herbs. Cook until heated through.
  • Serve garnished with the reserved bacon and the grated cheese.

1 tablespoon olive oil
1 tablespoon butter
1 tablespoon minced garlic (6 cloves)
2 1/2 lbs potatoes, peeled and quartered
2 carrots, peeled and coarsely chopped
5 cups chicken stock or 5 cups chicken broth
8 ounces broccoli
8 ounces cauliflower
3/4 cup milk
3/4 cup whipping cream
1 cup shredded cheddar cheese (4 oz.)

Steps:

  • In a Dutch oven cook onions in hot oil and butter until soft and golden brown.
  • Add garlic and continue cooking.
  • Add potatoes, carrots, and chicken stock.
  • Bring to boiling; reduce heat.
  • Cover and simmer for 1 hour.
  • Meanwhile, separate broccoli into small flowerets (reserve) and tender stems, discarding tough stems.
  • Coarsely chop tender stems.
  • Core and separate cauliflower into small flowerets.

  • Cover; simmer 45 minutes.
  • Add broccoli flowerets and cook, covered, for 15 minutes more.

1 head cauliflower (cut up)
4 medium sized potatoes
1 leek, chopped
1 onion, chopped
4 garlic cloves, crushed
1 tablespoon thyme
1 tablespoon basil
3 bay leaves
5 1/2 cups vegetable stock (or chicken stock)
2 cups of grated cheddar cheese
1 cup cream
oil
butter
baguette, slices
gruyere cheese

Steps:

  • In a large pot add oil and butter and melt.
  • Saute onion, leek, garlic, thyme and basil until softened.
  • Add potato and cauliflower and toss through.
  • Add vegetable stock and bay leaves and cook for around 40 minutes.
  • Remove bay leaves.
  • Blend half the soup in a blender or with a hand held blitzer.
  • Mash with a potato masher the other half of the soup.
  • Add the blended half of the soup back with the mashed soup.
  • Return to heat and add the cheese. Stir till dissolved (this wont take long so dont leave it too long).
  • Add the cream and stir through.
  • To top with toast:.
  • Slice a baguette into thin slices.
  • Cover the slices with slices of gruyere cheese (if you dont have gruyere, then use cheddar or whatever cheese suits you).
  • Bake the slices in the oven for about 5 minutes at 180 until the cheese has melted.
  • If the slices are too big for the soup, quarter them or half them.
  • Serve on top of the soup.

3 cups diced potatoes
6 cups water
2 chicken bouillon cubes
1 (8 ounce) package reduced-fat cream cheese, cubed

Lawry's Seasoned Salt

Steps:

  • 1. Bring water to a boil and add potatoes, cauliflower, and chicken bullion. Reduce heat to medium high and cook until very tender, at least 20 minutes.

3 1/2 cups vegetable stock
3 tablespoons unsalted butter
2 tablespoons dry white wine
1 sprig fresh thyme or 1/2 teaspoon dried thyme
1/2 teaspoon garlic powder
Coarse kosher salt and black pepper
1 teaspoon lemon juice (about 1/4 lemon)
8 ounces sour cream (1 cup), at room temperature
1/2 cup chopped chives (about 1 small bunch)
Potato chips, preferably sour cream and onion, for topping

Steps:

  • In a 6- to 8-quart slow cooker, combine the potatoes, cauliflower, beans, onion, garlic, vegetable stock, butter, wine, thyme, garlic powder and 1½ teaspoons kosher salt. Cover and cook until the vegetables are very tender, about 8 hours on low.
  • Remove and discard the thyme sprig, and turn off the slow cooker. Add the lemon juice. To make a completely smooth and creamy soup, purée the ingredients using an immersion blender. (Or, purée the soup in a blender in two batches, transferring the puréed soup to a different pot.) To make a textured, chunky soup, smash the ingredients using a potato masher in the slow cooker. Stir in the sour cream and chives. Taste and add additional salt if necessary. Serve in bowls topped with black pepper, crushed potato chips and shredded Cheddar. For leftovers, gently reheat the soup on the stovetop or in the microwave until it just barely bubbles around the edges; don't let it boil or the sour cream will break.

CAULIFLOWER, FENNEL AND POTATO SOUP



Cauliflower, Fennel and Potato Soup image

Puree this soup for a bowl of creamy goodness.

4 tablespoons olive oil
1 cup chopped sweet onion
3 to 4 sprigs fresh thyme
1 bay leaf
Pinch of cayenne
1 1/4 cups diced peeled potato
Kosher salt and freshly ground black pepper
2 cups chicken broth
1 1/2 cups cauliflower florets
1 1/2 cups chopped fennel
1/2 to 1 cup firmly packed fresh parsley, plus more leaves, for serving

Steps:

  • Heat 2 tablespoons of the oil in a medium saucepan over medium heat. Add the onion and cook, stirring, until tender, 3 to 5 minutes. Add the thyme sprigs, bay leaf, cayenne, 1 cup of the potato, 1/2 teaspoon salt and a few grinds of black pepper and cook, stirring, until the potatoes are well coated, 2 to 3 minutes more. Pour in the broth and 1 1/2 cups water and bring to a simmer.
  • Reserve two florets (about 2 inches in diameter) of the cauliflower. Add the fennel and the remaining cauliflower and simmer until the vegetables are tender, about 20 minutes, adjusting the heat as needed to maintain a simmer. Remove from the heat and let cool at least 5 minutes. Remove and discard the thyme and bay leaf and stir in the parsley. Carefully puree until smooth with a handheld immersion blender or in 2 to 3 batches in a blender (do not fill the blender more than halfway full per batch).
  • Meanwhile, place the remaining 1/4 cup potatoes in a microwave-safe bowl. Cover with plastic wrap and heat in the microwave for 4 minutes. Carefully unwrap and set aside to cool.
  • Slice the reserved cauliflower florets thinly, about 1/8 inch thick. (You need about 12 pieces.) Heat 1 tablespoon of the remaining oil in a small skillet over medium-high heat. Add the cauliflower pieces in a single layer and cook until golden brown on the bottom, about 2 minutes. Flip the pieces over and cook until tender and golden brown on the second side, 1 to 2 minutes more. Transfer to a paper-towel-lined plate to drain.
  • Add the remaining 1 tablespoon oil to the same skillet. Add the microwaved potato and season with salt. Cook, stirring, until golden brown all over, 8 to 10 minutes.
  • Reheat the soup if necessary. Adjust the consistency and seasoning with water, salt and pepper.
  • Serve hot sprinkled with some pan-fried cauliflower and potato and fresh parsley leaves.
  • Note: When blending hot liquid, first let it cool for 5 minutes or so, then transfer it to a blender, filling only halfway. Put the lid on, leaving one corner open. Cover the lid with a kitchen towel to catch splatters and pulse until smooth.

I found this recipe before I decided to follow a lower fat diet, so I often reduce the cheese amount and it works just as well. I've also combined it with the Weight Watchers Baked Potato Soup #261058 for a nice lower fat recipe. I use broth when doing the baked potato version. Also adding roasted garlic is quite tasty. 1 tablespoon butter or 1 tablespoon olive oil
1 cup onion, chopped
5 garlic cloves, chopped
5 cups milk
1 lb yukon gold potato, peeled
1 lb cauliflower, frozen
1 teaspoon salt
1/4 teaspoon red pepper, crushed
1 1/2 cups shredded sharp cheddar cheese
1/2 cup blue cheese, crumbled

Steps:

  • Melt butter or olive oil in saucepan over medium heat.
  • Add onions, cook and stir 4 minutes or until onions are transparent.
  • Add garlic, cook and stir for 15 seconds.
  • Add milk (or broth), potatoes, cauliflower, salt and red pepper. Bring to a boil, reduce heat, cover tightly and simmer for 15 minutes or until potatoes are tender.
  • Use a hand held blender or transfer to a regular blender in batches and process til smooth. Reduce to medium heat, heat until thoroughly heated. Remove from heat.
  • Add cheeses into soup and stir until melted.

This is adapted from the Horn of the Moon cookbook. It is very yummy and easy to make. Filling, but low-fat. Serve with a crispy spinach salad. You can puree it with a hand blender, but leave a few chunks for texture. It is important that you use a good stock. It will affect the taste of the dish! Garnish with fresh chopped parsley.

1 1/2 tablespoons olive oil
1 cup diced onion
1 teaspoon dried dill
1/2 teaspoon thyme
1/2 head cauliflower, chopped (2 cups)
4 cups vegetable stock
2 cups diced potatoes (no need to peel)
1 bay leaf
1/8 teaspoon black pepper
1/2 teaspoon soy sauce

Steps:

  • In a soup pot, heat the oil and sauté the onions, dill and thyme until tender. Add the cauliflower and cook a few minutes. Add the stock and potatoes.
  • Cover and cook until tender, about 30 minutes. Remove from heat.
  • With a hand blender, puree the soup to your desired consistency. It is nice if you leave a few small chunks. (This step can also be done in batches in the blender if you don't have a hand-held blender.).
  • Return the pot to the heat. Simmer on low and add bay leaves, salt, pepper and soy sauce. Adjust to taste. Cook 10 more minutes. Remove bay leaf before serving.

2 cups chopped cauliflower
2 cups cubed red potatoes
1 ½ cups vegetable broth
1 cup sliced celery
1 cup diced carrots
½ cup diced onions
½ cup salted butter
½ cup all-purpose flour
3 cups whole milk
3 tablespoons white vinegar
1 ½ teaspoons garlic powder
1 teaspoon lemon juice
¼ teaspoon cayenne pepper
salt and ground black pepper to taste
2 cups shredded sharp Cheddar cheese
½ cup shredded Swiss cheese
½ cup shredded American cheese
4 stalks scallions, chopped

Steps:

  • Combine cauliflower, potatoes, broth, celery, carrots, and onions in a large saucepan; bring to a boil. Cover and cook until vegetables have softened, about 10 minutes. Remove from the heat but keep the lid on.
  • Melt butter in another large saucepan over medium heat. Whisk in flour; cook and whisk until bubbly and brown, about 3 minutes. Remove from heat and gradually whisk in milk. Return to medium heat and cook until thickened, 5 to 10 minutes.
  • Add veggies and broth to the milk mixture. Continue stirring. Add vinegar, garlic powder, lemon juice, cayenne, salt, and pepper. Remove from the heat and slowly add Cheddar, Swiss, and American cheeses, stirring well until melted.

1 large sweet potato, chopped into large pieces
1 large head cauliflower, cut into large chunks
1 stalk celery, halved, or more to taste

Steps:

  • Bring a large pot of water to a boil and add carrots and sweet potato. Reduce heat to low and let simmer until semi-tender, about 5 minutes. It is very filling and healthy as well. My 9month old loved it blended and my two-year old liked it too.

2 medium potatoes, peeled and cut into small cubes
1 green onion, diced
3 garlic cloves
258 g cauliflower (3 servings)
1/2 cup skim milk
1/2 cup fat-free cheddar cheese (grated)
1 bay leaf
1/2 teaspoon thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon I Can't Believe It's Not Butter Fat Free (optional)

Steps:

  • Place potatoes, onion, and garlic in pot with just enough water to cover them.
  • Cook until water is mostly gone and potatoes are tender (may need to add water).
  • Blend remaining ingredients in a food processor until cauliflower is pureed.
  • Combine all ingredients and cook until desired consistency is reached.
  • For young children, you can blend this soup with oatmeal to thicken it and still have a great-tasting dish.

Another delicious recipe from Donna Hay magazine. We had oregano paste, rather than fresh, so we just added some paste to the soup rather than cooking the sprigs.

2 tablespoons olive oil
4 sprigs oregano
1 brown onion, chopped
3 garlic cloves, crushed
900 g cauliflower, trimmed and roughly chopped
250 g potatoes, peeled and chopped
1 1/2 liters chicken stock
160 g blue cheese
sea salt and black pepper
1 cup single cream (pouring)

Steps:

  • Heat the oil in a medium suacepan over medium heat. Add the oregano sprigs and cook for 1-2 mins or until crisp. Set aside.
  • Add the onion and garlic and cook for 3-4 mins, or until golden.
  • Add the cauliflower and potato and cook, stirring, for a further 2 minutes.
  • Add the stock, increase heat to high and bring to the boil. Cook for 18-20 mins or until potato and califlower are tender.
  • Add half the cheese, salt and pepper and, using a hand blender, process until smooth.
  • Stir through the cream. Top with the oregano and remaining cheese to serve.

Steps:

  • Chop the cauliflower, onion and potatoes into dice.
  • Cover with the vegetable stock and cook until soft.
  • Cool briefly; pour into a blender; blend to preferred consistency.
  • Return the mixture to the saucepan and reheat gently.
