1 cup almond flour
2 eggs
½ teaspoon cayenne pepper
salt and ground black pepper to taste
2 tablespoons extra-virgin olive oil, or as needed

Steps:

  • Bring water to boil in a saucepan. Add cauliflower; boil until tender, about 15 minutes. Strain cauliflower, transfer to a bowl, and mash with a fork.
  • Stir almond flour, eggs, cayenne pepper, salt, and black pepper into cauliflower until well-combined; form into 1/4-cup sized patties.
  • Heat 1 teaspoon olive oil in a skillet over medium heat. Fry patties in a single layer until golden brown, about 5 minutes per side. Repeat with remaining patties and olive oil.

1 head cauliflower
6 eggs
1/4 cup Bisquick baking mix
1/4 cup grated parmesan cheese
1/4 teaspoon garlic powder
oil (for frying, I use half vegetable half olive oil)

Steps:

  • Cook cauliflower till very tender and separate and chop into tiny pieces.
  • Beat the eggs. Add bisquick, cheese, garlic powder and cauliflower until blended.
  • Heat oil to coat and large frying pan.
  • Drop spoonfuls of cauliflower mixture into the pan allowing room for patties to spread.
  • Cook till brown on both sides and drain on plate covered with paper towels.
  • Sprinkle with additional parmesan cheese if desired.
  • Serve these as an appetizer or a side dish with Zucchini sticks, stuffed mushrooms, etc.

Use the spices normally found in merguez lamb sausage to make these paleo-friendly ground lamb patties. Harissa, a spicy tomato-pepper paste, adds both heat and flavor to the lamb. Finely chopped cauliflower "rice" is livened up with lemon juice, plumped golden raisins, parsley and blanched almonds.

1 pound ground lamb
2 teaspoons harissa paste
1 tablespoon lemon juice
1 tablespoon olive oil
Sea salt and freshly ground black pepper
1/4 teaspoon ground cumin
1/4 teaspoon hot paprika
1/4 teaspoon sea salt
Pinch ground black pepper
4 cloves garlic, minced
1/3 cup golden raisins
1 large head cauliflower, cut in 2-inch florets (about 2 1/2 pounds)
1/3 cup sliced toasted almonds
2 tablespoons chopped fresh parsley

Steps:

  • For the patties: Combine the lamb, harissa, cumin, paprika, salt, pepper and garlic in a bowl and mix well by hand. Form into eight 1/2-inch-thick patties (3 to 4 inches across).
  • Heat a grill pan over high heat. Grill the patties, working in batches if necessary, until the internal temperature reaches 160 degrees F, 1 to 2 minutes per side.
  • For the rice: Combine the raisins and 1 cup of water in a microwave-safe bowl; microwave for 1 minute, then drain and set aside.
  • Place the cauliflower florets in a food processor and pulse until the cauliflower resembles small pebbles, 3 or 4 pulses.
  • Bring 1 1/2 cups water to a boil in a medium saucepan set over high heat. Add the cauliflower and cook, stirring, until tender, about 2 minutes. The water should be fully evaporated at this point, if not, drain the cauliflower using a fine mesh sieve.
  • Remove the pan from the heat and stir in the raisins, almonds, parsley, lemon juice and olive oil. Season with salt and pepper.
  • Serve the lamb patties over the cauliflower rice.

1 (15 ounce) can pumpkin puree
3 cloves garlic, minced
8 sprigs fresh parsley, chopped
8 leaves fresh basil, chopped
1 tablespoon pumpkin pie spice
1 teaspoon ground black pepper
½ teaspoon pink salt
water to cover
2 tablespoons rice flour, or more as needed
2 tablespoons avocado oil, or more as needed
2 beets, sliced

Steps:

  • Combine cauliflower, pumpkin puree, garlic, parsley, basil, pumpkin pie spice, black pepper, and pink salt in a large pot; add enough water to almost cover cauliflower. Cover pot and bring liquid to a boil; reduce heat to medium and cook, stirring occasionally, until cauliflower is tender, 20 to 30 minutes. Mash mixture with a potato masher and continue heating until most of liquid is evaporated, about 5 minutes more.
  • Stir rice flour into mixture, adding more if needed to thicken mixture.

  • 1. Boil head of cauliflower til fork tender. Sautéed onion and pepper along with garlic in butter till tender.

Cauliflower is a great vegetable to use in a burger, because it breaks down nicely so that it can be mashed along with potatoes to form a burger that stays together. I have always loved seasoning this vegetable with Indian spices, which is what I do here, with Aleppo pepper thrown into the mix. Black quinoa contributes texture, color and protein. Sriracha sauce is the perfect "ketchup" for this burger.

3 cups finely minced cauliflower (about 12 ounces, or 1/2 medium cauliflower)
salt to taste
1 1/2 pounds potatoes, scrubbed, peeled if desired and quartered
1/2 cup chopped cilantro
2 teaspoons toasted cumin seeds, lightly crushed in a mortar and pestle
2 teaspoons nigella seeds
1 teaspoon garam masala
1/2 teaspoon Aleppo pepper or mild chili powder
Freshly ground black pepper to taste
1/2 cup cooked black quinoa
1 cup mixed black and white sesame seeds
1/4 cup grapeseed oil
Sriracha sauce for serving

Steps:

  • Steam potatoes over 1 inch of boiling water until tender, 15 to 20 minutes. Transfer to a bowl and mash with a fork. The skins will break up in the mash.
  • Line steamer with cheesecloth and place cauliflower on cheesecloth so the small pieces don't fall through. Steam 5 to 6 minutes, until very tender. Remove from heat and stir into potatoes. Add remaining ingredients except sesame seeds and oil. Season generously with salt, combine well, taste and adjust seasonings.
  • Place sesame seeds in a wide bowl. Scoop out about 1/3 cup of cauliflower-potato mixture and roll into a ball (moisten your hands to prevent sticking). Roll in the seeds, then gently flatten into a patty shape. Place on a plate or sheet pan and continue to shape all of the patties. If you have time, refrigerate for 1 hour or longer (I have made these with no problem without refrigerating first).
  • When you are ready to cook, place a rack over a sheet pan and cover the rack with paper towels. Heat 2 tablespoons oil in a large, heavy nonstick frying pan over high heat. When pan is hot, swirl to coat with oil. Turn heat down to medium. Place 3 to 5 patties in the pan (do not crowd), and cook until well browned on one side, 3 to 4 minutes. Turn and brown for 3 to 4 more minutes. Remove to rack. Heat remaining oil in the pan and cook remaining patties. Remove paper towels from underneath patties and keep them warm in a low oven until ready to serve. Serve topped with Sriracha, with a salad on the side.

Steps:

  • 1. Steam cauliflower in microwave, allow to cool, finely chop. Chop zucchini in food processor, steam in microwave, allow to cool, using tea towel squeeze water out of zucchini. Mix all ingredients together, add small amounts of water until mixture is easy to form into patties. Make 8 Patties. Place on cookie sheet sprayed with non-stick cooking spray. 1 head Cauliflower, Cut into Florets
1 can Chickpeas
1 piece Bell Pepper, Diced
1 piece Onion, Diced
2 clove Garlic, Minced
1 cup Panko
1 teaspoon Turmeric
1 teaspoon Cumin
1 dash Salt and Pepper

Steps:

  • Preheat oven to 375.
  • Boil or steam cauliflower until soft.
  • Saute onion and bell pepper over low heat until soft.
  • Add garlic and saute for another minute or so.
  • In a large bowl, smash chick peas up well with a fork or the bottom of a cup.
  • Add cauliflower and smash up as well.
  • Add all other ingredients and stir until combined.
  • Mix should be wet but come together in a ball without falling apart.
  • Carefully make a ball in your hands with the mix. I did mine a little bigger than a golf ball.
  • Press ball between hands to make a patty.
  • Place patty on oiled pan or baking dish.
  • Continue with the rest of the mix.
  • Bake for 25 Minutes, flip the patties. and bake for another 20 minutes or until browned.

1 medium size cauliflower head
3 eggs
1 teaspoon salt
1/2 teaspoon fresh ground black pepper
1 dash nutmeg
1/3 cup breadcrumbs
3 tablespoons flour
1/3 cup polenta
oil (for frying)
2 cups Ragú® Pasta Sauce, old world style marinara sauce

Steps:

  • With a sharp knife, remove the cauliflower core and separate into florets. Wash and place in a large pot, in one layer. Add 1/2 cup water, cover the pot and cook/steam over medium-high heat for about 5-7 minutes, until the water evaporates and the is cauliflower is cooked. Cool to room temperature and mash roughly with a potato masher.
  • Add the eggs, salt, pepper and nutmeg and mix well, trying not to mash the cauliflower too much. Add the flour and breadcrumbs and mix briefly. Let the mixture sit for 10 minutes.
  • In a large frying pan, heat the oil on medium-high heat. Lower the heat to medium. Spoon heaped tablespoons of the mixture into the oil, in one layer and a bit apart. Flatten the mixture with the back of a spoon. Fry until golden on both sides. Transfer to a workspace layered with paper towels.
  • Serve at room temperature, with a slice of lemon, or cook in tomato sauce, as follows.
  • To cook in tomato sauce: make sure the patties are cold, so they will not break apart upon cooking. Bring the sauce to a boil. Reduce the heat to medium-low and add as many patties as you're about to serve. Cook for 1-2 minutes on both sides, or until heated through, and serve immediately.

  • Meanwhile, make the turkey patties: Combine the turkey, rosemary, poultry seasoning, salt, ground mustard, black pepper and crushed red pepper in a medium bowl. Mix together then form into 4 patties.
  • Heat a large cast-iron skillet over medium heat until hot. Add the oil and swirl to coat the bottom of the skillet. Add the patties and cook until golden brown and cooked through, 5 to 6 minutes per side. Place on a rimmed baking sheet and keep warm in the oven until ready to serve. Set the skillet aside.
  • By this time the cauliflower should be cooked through and tender. Using a mesh spider or slotted spoon, scoop the florets and garlic cloves into a food processor, shaking off as much liquid as possible. Process until smooth and creamy. Taste for seasoning and add salt and black pepper as needed.
  • For the kale: Melt the ghee in the same cast-iron skillet over medium heat. Add the kale, salt, black pepper and crushed red pepper. Cook, tossing occasionally, until the kale is softened but not mushy, 5 to 6 minutes.
  • For each serving, place a large spoonful of cauliflower mash on a plate or in a shallow bowl and sprinkle with chives. Add a turkey patty and 1/4 of the kale and serve with a lemon wedge.

1 head cauliflower
2 large eggs
1/2 c cheddar cheese, grated
1/2 c panko (found in the bread crumb aisle, healthier option)
1/2 t cayenne pepper (more of less to taste)
salt
olive oil

Steps:

  • Cut cauliflower into florets & cook in boiling water until tender about 10 minutes. Drain. Mash the cauliflower while still warm. Stir cheese, eggs, panko, cayenne & salt to taste.
