3 tablespoons olive oil
1 tablespoon yellow curry powder
1 tablespoon lemon juice
1 teaspoon salt
½ teaspoon ground black pepper
1 pound cauliflower florets, cut into 1/2-inch slices

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil.
  • Combine olive oil, curry powder, lemon juice, salt, and ground black pepper in a bowl. Add cauliflower and toss until well coated. Place in a single layer in the prepared baking sheet.
  • Bake in the preheated oven until golden and crispy, about 25 minutes.

Cauliflower in a curry-cheese sauce that is a holiday favorite for our family.

1 head cauliflower, cut into florets
1 (10.5 ounce) can condensed cream of mushroom soup
1 (8 ounce) package processed cheese (such as Velveeta®), cubed
1 cup shredded Cheddar cheese
2 teaspoons curry powder, or to taste

Steps:

  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cauliflower, cover, and steam until tender, 2 to 6 minutes.
  • Meanwhile, combine soup, processed cheese, and Cheddar cheese in a small saucepan over medium-low heat. Cook and stir until melted and creamy, 3 to 5 minutes. Add curry powder and cook for 3 to 4 more minutes.
  • Mix steamed cauliflower into the cheese sauce and toss until coated.
