Lucky for you, not only is this version loaded with veggies instead of pasta, it also makes the most of your pantry staples. Grab the cooking spray, panko, and can of cream of chicken soup, and you're practically halfway there. Don't have cream of chicken? Any "cream of" soup will do the trick. Try cream of celery to mix things up. Ready in just 45 minutes, this is the ultimate weeknight casserole, though it makes a statement at any potluck supper too. For a party-ready touch, add a dash of parsley to your casserole as soon as you pull it out of the oven. It's the ultimate way to dress up the golden panko topping if you're making and taking for a special occasion.

1 medium (1 lb.) head cauliflower
1 (10.5-oz.) can cream of chicken soup
1/2 cup sour cream
Cooking spray
2 ounces sharp Cheddar cheese, grated (about 1/2 cup)
1/4 cup panko (Japanese-style breadcrumbs)
1/4 cup salted butter, thinly sliced
Chopped fresh flat-leaf parsley (optional)

Steps:

  • Preheat oven to 350˚F. Trim cauliflower into florets. Bring a large saucepan of salted water to a boil over high; add cauliflower, and boil until just tender, 4 to 5 minutes. Drain cauliflower, and return to saucepan.
  • Stir together cream of chicken soup and sour cream in a small bowl; add to cauliflower, and toss to combine. Transfer mixture to a greased (with cooking spray) 8-inch square baking dish. Sprinkle casserole with cheese and panko; dot with butter slices.
  • Bake in preheated oven until casserole is bubbly and panko is golden, about 30 minutes. If desired, top with parsley.

1 large head cauliflower, chopped (about 6 cups)
1/2 cup chicken broth
2 garlic cloves, crushed
1 teaspoon whole peppercorns
1 bay leaf
1/2 teaspoon salt

Steps:

  • Place cauliflower in a large saucepan; add water to cover. Bring to a boil. Reduce heat. Simmer, covered, until tender, 10-12 minutes. Drain; return to pan. , Meanwhile, combine remaining ingredients in a small saucepan. Bring to a boil. Immediately remove from heat and strain; discard garlic, peppercorns and bay leaf. Add broth to cauliflower. Mash to reach desired consistency.

It might be tough to imagine that anything could taste better than mashed potatoes. But cauliflower mash captures all the flavors of beloved potatoes, and you won't be able to taste the difference. Not only is this mash cheesy, buttery and silky smooth, it also brings along a stellar lineup of vitamins and nutrients. Plus it's lower in carbohydrates and calories than its potato counterpart.

Number Of Ingredients 8

6 cups (810 grams) cauliflower florets
8 garlic cloves
1 cup (120 grams) shredded Cheddar
1/4 cup (60 milliliters) heavy cream
2 tablespoons salted butter, plus more for serving
1/4 teaspoon sea salt, plus more to taste
1/8 teaspoon freshly ground black pepper, plus more to taste
1 tablespoon chopped fresh chives, for garnish

Steps:

  • Bring an inch of water to a boil in a large saucepan. Place the cauliflower in a steamer basket set over the boiling water. Cover and steam for about 5 minutes, until the florets are fork tender. Transfer the florets to a high-powered blender or food processor.
  • Add the garlic, cheese, heavy cream, butter, salt and pepper to the cauliflower. Blend until smooth and creamy, 1 to 2 minutes. After 1 minute, if there are still chunks, use a rubber spatula to scrape down the sides, then process again until light, fluffy and completely smooth. Taste and adjust the seasoning if needed.
  • Let the mash sit for 2 minutes to settle. Top with chives and serve with extra butter.

1/2 cup sour cream
3/4 tsp salt
1/2 tsp pepper
1/4 cup grated Parmesan cheese
1 tbsp chopped fresh chives
2 tbsp butter

Steps:

  • Fill Dutch oven with 1/4" water. Arrange cauliflower in Dutch oven, cover, and cook on MedHi 7-10 minutes. Meanwhile, cook butter in small heavy saucepan over Medium, stirring constantly, just until it turns golden brown, remove from heat, and set aside. Drain cauliflower. Process cauliflower, sour cream, salt, pepper until smooth. Add Parm and chives and butter.

1 tablespoon olive oil
1 clove garlic, smashed
¼ cup grated Parmesan cheese
1 tablespoon reduced-fat cream cheese
½ teaspoon kosher salt
⅛ teaspoon freshly ground black pepper

Steps:

  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cauliflower, cover, and steam until tender, about 10 minutes.
  • Meanwhile, heat olive oil in a small skillet over medium heat; cook and stir garlic until softened, about 2 minutes. Remove from heat.

2 tablespoons butter
½ cup milk
½ cup sour cream
1 cup Italian-seasoned bread crumbs
salt and ground black pepper to taste

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Bring a large pot of water to a boil. Cook cauliflower in the boiling water until tender, about 10 minutes; drain and set aside.
  • Melt butter in the same pot over medium heat. Stir cauliflower, milk, and sour cream into melted butter.
  • Mash cauliflower in the pot using a hand blender until creamy.
  • Transfer cauliflower mixture to a baking dish; evenly cover with bread crumbs and season with salt and black pepper.
  • Baking in the preheated oven until bread crumbs are lightly browned, about 30 minutes.
