I have a potato soup recipe I love, but I wanted it to be a little less heavy on the carbs (not carb free, but just less). I decided to add cauliflower to replace some of the potatoes, and we couldn't really tell- plus it tasted great. I don't really measure my spices, so do it to your taste.

4 cups chopped cauliflower
3 cups diced potatoes
6 cups water
2 chicken bouillon cubes
1 (8 ounce) package reduced-fat cream cheese, cubed
2 cups carrots, chopped and steamed
2 cups diced cooked turkey ham
2 garlic cloves, chopped fine
Lawry's Seasoned Salt
white pepper
1 dash cayenne pepper

Steps:

  • 1. Bring water to a boil and add potatoes, cauliflower, and chicken bullion. Reduce heat to medium high and cook until very tender, at least 20 minutes.
  • 2. Carefully transfer to a blender or food process, or use an immersion blender. Blend in batches, and return soup to the pot.
  • 3. Reduce heat to medium. Melt in cream cheese. Season and add garlic.
  • 4. Add carrots and ham. Cook till ham and carrots are warmed through.

1 tablespoon olive oil
1 medium onion (diced (about 2 cups))
1 stalk celery (diced (about 1/2 cup))
2 cloves garlic (minced)
3 cups cauliflower florets (chopped into 1/2-inch pieces)
2 cups dried split peas
6 cups vegetable broth
1 teaspoon cumin
1/2 teaspoon sage
1/2 teaspoon thyme
1/2 teaspoon salt
1 bay leaf
Additional salt and freshly-ground black pepper to taste
Olive oil and smoked paprika for garnish
Ham add-in
1/4 cup diced ham per serving

Steps:

  • In a saute pan over medium heat, add 1 tablespoon olive oil, onion, and celery. Cook, stirring, until soft, about 5 minutes. Add the garlic and cook one more minute. Add to 4.5-quart or larger Crock Pot along with cauliflower, split peas, vegetable broth, cumin, sage, thyme, 1/2 teaspoon salt, and bay leaf.
  • Cook on low for 8 hours, or until split peas are completely soft.
  • Taste and add additional salt and pepper if needed.
  • If adding ham, remove about 1 1/2 cups per serving to a saucepan and stir in 1/4 cup diced ham. Heat together for about 10 minutes.
  • Serve with a drizzle of olive oil and a sprinkle of smoked paprika. Top carnivorous servings with additional chopped ham if desired.

2 1/2 cups hot water
1 cup chopped cauliflower
1/8 teaspoon ground mustard
1/8 teaspoon pepper
1 can (10 1/2 ounces) condensed chicken broth
1 cup cubed fully cooked ham
1 cup half-and-half
Chopped fresh parsley, if desired

Steps:

  • Stir Sauce Mix, hot water, cauliflower, mustard, pepper, broth and Potatoes in 3-quart saucepan. Heat just to boiling, stirring occasionally.
  • Reduce heat; cover and simmer about 25 minutes, stirring frequently, until potatoes are tender.
  • Stir in ham and half-and-half. Cook uncovered about 5 minutes or just until hot (do not boil). Garnish with parsley.

1 c celery (diced)
1 small onion (diced)
6 c chicken stock
6 clove garlic (roasted)
1 c ham (diced)
2 c shedded cheddar cheese

  • 1. Put all except cheese in crockpot let cook for 6 hours on high.
  • 2. Add cheese let melt serve.

1 stick unsalted butter
4 c minced cooked caulflower (fresh or frozen)
2 c chopped onions
1-2 Tbsp dried vegetable flakes (optional)
1/2 c carrots, canned (chopped) (optional)
2 Tbsp mrs. dash
1/2 tsp garlic powder
1/4 tsp nutmeg
1/8 tsp cinnamon
2 bay leaves
5 c chicken broth
6 oz ham steak, cut into small cubes
5 c heavy cream or half & half
4 c cauliflower florets (chopped 1/2 inch)
1 c frozen cooked corn (optional)
1 1/4 tsp salt and pepper

Steps:

  • 1. In a 5 quart saucepan, melt butter over medium high heat. When butter comes to a hard sizzle, stir in 4 cups of minced, cooked cauliflower and the onions. Reduce heat to medium and cook about 14 minutes, stirring occasionally. Let mixture stick slightly but do not brown. Stir in dehydrated seasoning and carrots.
  • 2. Stir in 5 cups of chicken broth. bring to a boil, reduce to simmer, and cook about 15 minutes. Add remaining cooked cauliflower florets, 5 cups of cream, ham, Mrs. Dash, salt and pepper, bay leaves, nutmeg, and cinnamon. Heat slowly over medium heat until almost boiling but don't boil. Reduce heat to simmer and cook for 20 minutes on low heat. If mixture starts to boil, reduce heat more.
  • 3. Remove bay leaves. Serve in your favorite soup bowl topped with shredded parmesan cheese and Durkee french friend onions. If mixture seems too thick, add more cream to thin, along with a little salt, and heat well. Serve with toasted English muffins or breadsticks to dip in the soup.

"Waste not, want not", my Grandma's favorite expression. I know that she would approve of this delicious Clean-Out-The-Fridge soup. For herbs, use your favorites. (a little dill is tasty.) Make it your own, by adding whatever veggies you need to use, green beans, peas, carrots, potatoes, even chopped spinach.

0.667 (14 1/2 ounce) jar classico creamy alfredo sauce or 7 1/2 ounces alfredo sauce, homemade
1/4 cup celery, chopped
1/4 cup onion, chopped
1 tablespoon butter
1 -2 cup milk, depending on thickness desired
cooked cauliflower, chopped bite-sized (or can use cooked potatoes)
cooked ham, chopped bite-sized
1 teaspoon italian seasoning or 1 teaspoon herbs, of your choices
white pepper

Steps:

  • In large sauce pan, melt butter over MED-Hi heat and saute celery and onions to soften.
  • Lower heat to MED-LOW.
  • Add milk and Alfredo sauce; whisking to blend.
  • Add seasonings.
  • When smooth, add ham and cauliflower.
  • Let come to simmer; cook about 20-25 minutes, or until desired thickness is reached.
  • Remove to bowls and enjoy!

This is a great base for the soup. I have added other ingredients, such as bacon, potatoes, parsley, and onions, and it always tastes great. I especially love it, with both bacon and ham. My entire family loves this recipe. Including the kids.
