Number Of Ingredients 8

3 cups small cauliflower florets
2 cups frozen peas
3 -5 green onions, chopped
3 celery ribs, diced
2 tablespoons snipped fresh dill or 2 teaspoons dried dill
1 1/2 teaspoons garlic salt (optional)
1/2 cup plain yogurt, see note
1/2 cup mayonnaise, see note

Steps:

  • Note: You can use fat free, low fat or full fat for both the mayo and the yogurt. Your choice.
  • In large bowl that can be covered, combine all ingredients and toss well.
  • Refrigerate for several hours or overnight before serving.
  • When peas have thawed the salad is ready to eat. Chilling overnight allows the flavor to develop.
  • Based on 1 cup servings. If using with lots of other food [think picnic] and half cup servings it can serve up to 12.

4 cups broccoli florets
4 cups cauliflower florets
1/2 cup sour cream
1/2 cup mayonnaise
1/4 cup chopped dill weed
1/4 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • bring a large pot of water to a boil.
  • cook the broccoli & cauliflower florets for about 1 minutes in the boiling water.
  • draing the florets & run cold water over the cooked vegetables to stop the cooking process.
  • shake of the excess water from the florets.
  • in a large bowl stir together the remaining indgredients until combined.
  • add the florets & toss gently to coat with the dressing.
  • cover & refrigerate until ready to serve.
  • the flavors will meld together in allowed to stand for 1 hour.
  • taste & adjust the seasonings before serving.

1 can sliced water chestnuts, drained
3/4 cup light mayonnaise
1 package ranch dressing mix
1 cup sliced radish
1/2 cup chopped onion
3/4 cup sour cream
dill weed, to taste (optional)

Steps:

  • Mix all except dill weed together.
  • Add dill and taste.
  • Better if left overnight.

1 cauliflower, cooked till tender
2 stalk(s) celery
1 small onion, chopped
1 small red bell pepper
2 Tbsp fresh dill
2 Tbsp chopped dill pickle
2 Tbsp chopped cherry peppers
1 c low fat or fat free ranch dressing
1 carrot, sliced
1/2 cucumber, peeled and chopped
2 Tbsp green olives, chopped
salt and pepper to taste

Steps:

  • 1. Boil your cauliflower till tender. Don't cook to mush, it is replacing potato salad, so give it a bite. Cool and set aside.
  • 2. Prepare vegetables as in ingredients, chop, slice and place in large bowl
  • 3. Add rest of ingredients, mix, salt and pepper to taste
