Yield Serves 4

Number Of Ingredients 16

3 tablespoons virgin coconut oil, room temperature, divided
1 large head cauliflower (about 2 pounds), coarsely chopped
1 medium red onion, thinly sliced
3 large garlic cloves, coarsely chopped
2 teaspoons curry powder
2 teaspoons kosher salt
1 1/4 teaspoons ground cumin
3 cups homemade or store-bought low-sodium vegetable broth
1 (15.5-ounce) can chickpeas, drained, rinsed
1 cup pearled couscous
1/2 cup split red lentils
2 limes, divided
1/2 cup Greek-style plain full or low-fat yogurt
3 tablespoons coarsely chopped cilantro leaves, plus whole leaves for serving
5 ounces baby spinach
1/4 cup sliced almonds (for serving; optional)

Steps:

  • Heat 2 Tbsp. oil in a large Dutch oven or pot over medium. Add cauliflower and cook, stirring occasionally, until just beginning to brown and soften, 5-8 minutes. Add onion, garlic, and remaining 1 Tbsp. oil and cook, stirring, until onion and cauliflower are cooked through, 5-7 minutes more. Add curry powder, salt, and cumin. Cook, stirring, until spices are toasted, about 30 seconds.
  • Add broth and bring to a boil. Add chickpeas, couscous, and lentils, reduce heat, and simmer, stirring occasionally to avoid couscous from sticking, until couscous and lentils are cooked through and liquid is almost completely reduced to a thick sauce, about 10 minutes.
  • Meanwhile, juice 1 lime to yield 3 Tbsp. juice. Whisk lime juice, yogurt, and 3 Tbsp. chopped cilantro in a medium bowl until smooth. Add water by the tablespoonful until sauce is thin enough to drizzle. Cut remaining lime into wedges.
  • Fold spinach into chickpea mixture. Top with cilantro leaves and almonds, if using, and serve yogurt sauce and lime wedges alongside.
  • Do Ahead
  • Stew (without spinach) can be made 3 days ahead; cover and chill. Reheat and fold in spinach before serving.

1/2 cup low-sodium vegetable or chicken broth
2 tablespoons honey
2 tablespoons olive oil

COUSCOUS WITH TOMATOES, CAULIFLOWER, RED PEPPERS AND OLIVES

Couscous With Tomatoes, Cauliflower, Red Peppers and Olives image

Cauliflower is one of the few cruciferous vegetables you find in North African tagines. The spicy tagines make a good vehicle for this nutrient-rich food and are one of the few types of dishes in which cauliflower can be cooked until quite soft and not lose its appeal.

Time 30m

Yield 6 to 8 servings

Number Of Ingredients 16

1 large onion, chopped
2 to 4 large garlic cloves (to taste), minced
Salt to taste
1 1/2 teaspoons paprika
1/2 teaspoon cayenne (more to taste)
1 pound ripe tomatoes, peeled, seeded and chopped, or 1 14-ounce can with juice
2 cups pinto beans, Christmas limas or white beans, soaked in 2 quarts water for 6 hours or overnight and drained
A bouquet garni consisting of 3 sprigs each parsley and mint
1 tablespoon tomato paste
2 to 3 teaspoons harissa (more to taste), plus additional for serving
1/2 pound (1 large) red bell peppers, seeded and cut in large dice
1 small cauliflower, cut into florets, then sliced about 1/2 inch thick
16 imported black olives, pitted and cut in half
2 to 4 tablespoons chopped parsley or mint, or a combination
2 to 2 2/3 cups couscous (1/3 cup per serving)

Steps:

  • Heat 1 tablespoon of the olive oil in a large, heavy soup pot or Dutch oven over medium heat and add the onion. Cook, stirring, until it is tender, about 5 minutes, and stir in the garlic, 1/2 teaspoon salt and the spices. Stir together for about 30 seconds, until the mixture is fragrant, and add the tomatoes. Cook, stirring often, until the tomatoes have cooked down slightly, 5 to 10 minutes. Stir in the beans, 2 quarts water and the bouquet garni. Bring to a gentle boil, reduce the heat, cover and simmer 1 1/2 hours.
  • Add the tomato paste, harissa, red bell pepper, cauliflower, olives and salt to taste. Bring back to a simmer and simmer 30 minutes, or until the beans are tender. Stir in the chopped fresh herbs and simmer another 5 minutes. Taste and adjust salt. Remove a cup of the broth for seasoning the couscous. The stew should be spicy and flavorful.
  • Reconstitute and steam the couscous [ed: please link]. Serve the couscous in wide bowls or mound onto plates and top with the stew. Pass more harissa at the table.

Categories     Chinese

Time 35m

Yield 4 serving(s)

Number Of Ingredients 17

8 ounces ground chicken breast
6 tablespoons minced fresh sweet basil (to taste) or 3 tablespoons minced fresh holy basil (to taste)
1 tablespoon black pepper sauce (Lee Kum Kee brand)
6 ounces chopped leeks, white and light green portions
4 ounces chopped yellow onions
12 ounces chopped cabbage
2 ounces sliced red radishes
1 ounce chopped scallion (green onions)
1 teaspoon minced fresh garlic
1 cup hot water
1 teaspoon chicken bouillon powder (I use granulated)
1 teaspoon Braggs liquid aminos (to taste, tamari or soy sauce can be substituted)
2 tablespoons coconut oil, divided, for sauteing
1 teaspoon black pepper sauce (Lee Kum Kee brand, additional, to taste)
1 1/2 teaspoons arrowroot, powdered
2 tablespoons cold water
16 ounces fresh cauliflower florets, thick stem parts removed, for serving

Steps:

  • Place ground chicken in a container that can be closed with a lid, add the 1 Tbsp of Black Pepper Sauce and the minced basil, and mix well. Set aside. (I like to let this sit for at least 30 minutes before cooking.).
  • Chop the leek, yellow onion, and cabbage into 1/2-inch pieces. Slice the red radish fairly thinly, but it doesn't have to be paper thin. Chop and mince the scallions (green onions) and garlic.
  • Make the cauliflower "couscous": put the cauliflower florets into a food processor and whir until they're all broken up and look like couscous! It won't take long, perhaps a minute. Set aside.
  • Add 1 Tbsp of the coconut oil to a large, hot, heavy pan on the stove (I use a large Le Creuset). As soon as it has melted, add in the vegetables (except for the cauliflower!) and combine well. Saute the vegetables, stirring *occasionally* (you want them to brown a bit and not simply steam in their juices), until they've softened some and most of them have a bit of browning on them, about 7-8 minutes.
  • Combine the hot water and granulated (or powder) chicken bouillon and stir to dissolve. Pour into the vegetable mixture, add the Bragg's aminos (or tamari/soy), lower temperature to low, cover, and allow to simmer until softish or your desired texture. I prefer my veggies fully cooked, and simmering them together with the bouillon adds a lot of flavor.
  • Meanwhile, in a separate hot, heavy pan (again, I use a Le Creuset), add the remaining 1 Tbsp coconut oil. When it is melted and hot - it won't take long - add the chicken mixture to flatten and spread it along the bottom to brown. When it has browned on one side, use a flat spatula to flip it over and brown on the other side. Don't stir it too much at first, as you want it to brown.
  • Meanwhile, uncover the other pan containing vegetables. In a small dish, mix together the arrowroot powder with the cold water and stir together until well combined. Pour the arrowroot mixture into the vegetables and stir well - the vegetable liquid will begin to thicken. Continue stirring until everything is well-combined.
  • When the chicken has fully browned, begin breaking up the meat into a "gravel" of the size you prefer.
  • Add the browned chicken mixture to the vegetables, and stir to combine. Taste, and add an additional teaspoon of Black Pepper Sauce (or more, to taste) and/or Braggs/tamari/soy sauce to taste.
  • Serve the Black Pepper Basil Chicken and veggies over 4 ounces of cauliflower "couscous" per serving, and enjoy!
  • Note: I like the couscous just as they are, raw, but if you like you can microwave them briefly to soften them up. But raw they have almost the exact texture of cooked pasta-couscous, and they're delicious just as they are. Experiment, and decide for yourself.

CAULIFLOWER COUSCOUS

Cauliflower Couscous image

Delicious, quick weeknight meal. "Tiny balls of Israeli couscous are the culinary pearls of the pasta world". The combination of sweet, savory and piquant flavors in this dish make a nice match. Adapted from a recipe I saw in the Food Network Cooking Magazine. The original recipe called for chopped dates. I substitued dried cranberries instead, since that is what I had on hand. I also added some dried corriander along with the cinnamon, just to give a hint more flavor. I also like to soak the dried cranberries in a bit of hot water to plump them up before cooking. Splash of wine vinegar at the end gives a nice touch!

OLIVE OIL-POACHED COD WITH CAULIFLOWER COUSCOUS RECIPE - (4/5)

Olive Oil-Poached Cod with Cauliflower Couscous Recipe - (4/5) image

Provided by ltrodrigu

Number Of Ingredients 10

Kosher salt to taste
1/2 large head cauliflower, separated into florets
1 1/4 tablespoon sesame seeds, toasted
1 teaspoon smoked paprika
1 lemon, zested and juiced, divided
1 large garlic clove, minced
4 1/4 cups olive oil
4 (4-ounce) cod fillets
leaves from 7 sprigs mint, roughly torn
10 chives, minced

Steps:

  • Bring a medium pot of salted water to a boil over high heat. Add cauliflower and boil until beginning to soften but still resistant when pierced, about 3 minutes. Strain cauliflower and toss dry. In a food processor, pulse cauliflower until it resembles fluffy couscous. In a large bowl, whisk together sesame seeds, paprika, lemon zest, half the juice or the lemon, garlic, and 1/4 cup olive oil. Season with salt to taste and adjust other seasonings as needed. Fold in cauliflower couscous until evenly dressed. Add more salt, oil, or lemon to taste. Season cod liberally on both sides with salt. Pour remaining olive oil into a medium heavy pot over low heat. Once hot but not bubbling or once it has reached 135°F, slide in cod fillets and make sure they are just covered in oil, working in batches if necessary to avoid overcrowding. Gently poach cod, keeping the temperature steady, until it offers no resistance when pierced, about 6 minutes. If white albumin leeches out, immediately and gently lift fish out with a fish spatula. Blot cod dry on paper towels. Toss chives and mint into couscous. To serve, distribute couscous among 4 plates and place one cod fillet over each helping.

CAULIFLOWER COUSCOUS

Cauliflower Couscous image

Number Of Ingredients 10

1 head Large cauliflower
5 ounces Raw cashews
3 ounces Gold raisins
5 tablespoons Olive oil
4 tablespoons Lemon juice
2 tablespoons Minced parsley
1/2 teaspoon Za'atar
1/2 teaspoon Cumin
1 clove Garlic, crushed
1/4 teaspoon Finely shredded lemon zest

Steps:

  • 1. Place raisins in a bowl and pour warm water over them. Leave the raisins for about 15 minutes, until plump. Drain and discard the water.
  • 2. Heat a cast iron skillet over medium heat. Reduce the heat to medium low, adde the cashews and toast them for about 8 minutes, until lightly golden and gently charred. Stir frequently to make sure that cashews do not burn. Let the cashews cool. Cut the cashews into smaller pieces (or simply crush them with your hands).
  • 3. Break the cauliflower into florets, making sure to leave behind as much of the stem as possible. Chop the florets into smaller pieces. Transfer the cauliflower into food processor (or blender) in batches, and pulse until the pieces are finely chopped and resemble couscous. Be careful not to over-process.
  • 4. In a large saute pan, heat three tablespoons of the olive oil over medium heat. Add the cauliflower couscous to the pan and cook for about 7 minutes, stirring frequently.
  • 5. Remove the couscous from heat and let it cool. Add the raisins, cashews, za'atar, cumin, parsley, garlic, lemon zest, lemon juice, and the remaining two tablespoons of olive oil. Season with salt and pepper to taste.
  • 6. Leave the couscous for about 15 minutes for the flavors to combine. Serve at room temperature.
