1 tablespoon butter
6 cups cooked cauliflower florets, drained
salt and ground black pepper to taste
1 clove garlic, minced
1 (4 ounce) package garlic and herb cheese spread (such as Boursin®)
1 cup half-and-half
⅓ cup grated Parmesan cheese
1 cup French fried onions
⅓ cup sliced almonds
2 strips cooked bacon, crumbled

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Butter an 11x7-inch oven-proof casserole dish.
  • Place cooked, drained cauliflower florets into the prepared casserole dish and season with salt and pepper.
  • Melt butter in a small skillet over medium heat. Add garlic and cook and stir until fragrant, 1 to 2 minutes. Cut cheese into 1/2-inch cubes and add to skillet. Gently move cheese around the skillet until it starts to melt, 2 to 3 minutes. Add half-and-half and whisk until well blended, 1 to 2 minutes.
  • Stir in Parmesan cheese and remove from heat. Pour cheese mixture over cauliflower florets. Top with French fried onions, almonds, and crumbled bacon.
  • Bake in the pre-heated oven until bubbly, about 20 minutes.

850 g of Cauliflower Florets
500 g of Potatoes
250 mL of Oat Milk
1 tbsp of Bouillon Powder
80 g of Wholemeal Flour
50 mL of Extra Virgin Olive Oil
25 g of Porridge Oats
2 tbsp of Nutritional Yeast
40 g of Cashew Nuts

Steps:

  • On a baking tray, season cauliflower florets with salt, pepper, and oil. Then, roast them at 180°C (355°F) for 20 minutes.
  • Peel and dice the potatoes and boil them for 15 minutes until soft. Then, blitz them with oat milk and bouillon powder into a smooth sauce.
  • Using your fingertips, rub together the flour, salt and oil. Then, add oats, nutritional yeast, chopped nuts, and work into a crumbly mix.
  • To assemble, add the cauliflowers to a baking dish and cover them with the sauce. Then, sprinkle over the crumble mix.
  • Bake the cauliflower crumble at 190°C (375°F) for 30 minutes until golden and crusty.

3 tablespoons olive oil
1 raw cauliflower, broken into florets
1 large onion (Vidalia ideally)
3 minced garlic cloves
1 (28 ounce) can diced tomatoes with juice
1 (16 ounce) can black beans
12 ounces red wine (hearty)
1 (12 ounce) package veggie crumbles (TJ or Yves or similar)
basil
oregano
salt
pepper

Steps:

  • In a large pot that can be covered:.
  • Saute in 3 TBL of good olive oil 1 large chopped onion and several chopped cloves of garlic.
  • Add and sauté a cauliflower that has been broken up into florets.
  • Cover lightly with dried chopped basil and oregano.
  • Add salt and pepper to taste.
  • Saute until cauliflower changes color from white to yellow.
  • Stir periodically.
  • Add one large can of diced tomatoes and their juice.
  • Add one can of black beans (suitably rinsed).
  • Add 12 ounces or so of good red wine.
  • Add one package of soy veggie crumbles.
  • Stir up well.
  • Cover and simmer for about 20 minutes until most of the liquid has been absorbed and the cauliflower is very tender to the fork.
  • Serve alone, or on a baked potato or on rice.

I got this recipe and it wasn't low carb and included breadcrumbs instead of Parmesan cheese so you could form patties (like a latke). Since I'm living a low-carb lifestyle, I decided to adapt it, but the patties were less-than-desirable visually the taste wasn't that impressive. I had one completely fall apart on me in the pan so I just scrambled it up and viola; we had a new fave! You can add bacon and garlic as a yummy addition, if desired.

1 head cauliflower, cut into florets
½ cup shredded Cheddar cheese
½ cup grated Parmesan cheese

Cauliflower Gratin With Leeks and White Cheddar image

A sort of cheater's gratin, this cauliflower cooked with leeks and cream doesn't require blanching or a béchamel, making it a low maintenance, deeply comforting side dish. To skirt the blanching, the cauliflower and cream is covered in foil to give the vegetables a chance to get tender without drying out. The foil then comes off so the top can brown and the cream can reduce, creating a thick, velvety sauce. If your heart desires a crunchier texture, add a scattering of bread crumbs tossed in olive oil and seasoned with salt and pepper when the aluminum foil comes off.

1 small-ish head cauliflower (about 2 pounds), green leaves removed
Olive oil, for drizzling
1 small leek, white and light green part only, very thinly sliced
Kosher salt and black pepper
¾ cup heavy cream
6 ounces sharp white Cheddar, grated (about 1 1/2 cups)

Steps:

  • Heat oven to 425 degrees. Slice cauliflower head lengthwise into 1/2-inch thick slices, including the core and leaves. (Some smaller bits will fall away: That's fine. You'll use them as well.)
  • Drizzle some olive oil onto the bottom of a 2-quart baking dish. (An oval, square or rectangular dish will all work.) Layer about a third of the cauliflower along the bottom, and about a third of the leeks. Season with salt and pepper, and repeat until all of the cauliflower and leeks are used. (Don't worry about perfectly layering them.) Season with salt and pepper and drizzle cream over. Scatter cheese on top, and season again with salt and pepper. Lightly cover with foil and place in the oven.
  • Bake until cauliflower is nearly tender, 10 to 15 minutes. Remove foil and continue to bake until cream has thickened and reduced nearly completely and the top is golden brown and crisp, 35 to 40 minutes. Remove from oven and let cool slightly before eating.
