Pan-roasting broccoli results in a carmelized flavor, a completely different taste using broccoli, salt, and pepper. Adapted from Cook's Illustrated.

3 tablespoons water
1/4 teaspoon salt
1/8 teaspoon pepper (I used garlic pepper blend)
2 tablespoons vegetable oil
1 1/4 lbs broccoli, separated into small florets, and stems, sliced (about 5 cups florets and 3/4 cup stems in total)

Steps:

  • Stir water, salt, and pepper together in small bowl, til salt dissolves.
  • In a large skillet, heat oil over medium high then add the broccoli stems in an even layer.
  • Don't stir for about two minutes until they get light browned.
  • Add the florets and toss to combine and don't stir for another two minutes, until they just begin to brown.
  • Add water spice mixture and cover pan with lid, cooking for two minutes.
  • Uncover and cook until desired doneness.
  • Note: I eyeballed my broccoli measurements and it worked fine. I did add a little water to mine.

1 pkg 12oz broccoli slaw
1 Tbsp butter
olive oil
1 c sliced mushrooms
2 chopped green onion
3 garlic cloves
1 tsp grated ginger
3 Tbsp lite soy sauce
1 tsp sesame oil
1 Tbsp szechuan sauce (optional)
1 dash(es) hot sauce of choice
1/4 c vegetable or chicken stock
1 can(s) bean sprouts
dash(es) pepper
2 c cooked jasmine rice
1 egg whipped and fried
toasted pine nuts or sesame seeds

Steps:

  • 1. Butter & oil bottom wok or skillet, saute onions and mushrooms. Grate ginger and garlic and cook few minutes.
  • 2. Stir in rest of sauce ingredients and continue to cook on med-high for five minutes. Meantime prepare rice.
  • 3. When sauce cook down add slaw and beansprouts turn to low to keep warm. Another pan add more butter and fry egg, set aside. Toast cooked rice in egg pan for few minutes. Combine and mix rice with slaw mix, add and mix in fried egg. Serve with more chopped onion and toasted pine nuts or sunflower seeds.

Get this; my kids won't eat regular coleslaw, but when I make it with broccoli they will! This is more similar to regular coleslaw than what is standardly prepared with packaged broccoli slaw. I make mine without onion, and usually without peanuts. (The ingredients will not allow me to enter just broccoli slaw; it appears as broccoli coleslaw mix, but in the produce section it will just say broccoli slaw)

12 ounces broccoli coleslaw mix
2 tablespoons onions, finely chopped (optional)
1/4 cup sugar (Splenda)
1/4 teaspoon salt
1/16 teaspoon pepper
1/8 cup milk
1/4 cup mayonnaise
1/8 cup buttermilk
3/4 tablespoon cider vinegar
1 1/4 tablespoons lemon juice
1/4 cup chopped peanuts (optional)

Steps:

  • Mix all ingredients thoroughly.
  • Cover bowl and refrigerate several hours or overnight before serving.
