Number Of Ingredients 12

2 teaspoons dried oregano
2 teaspoons ground cumin
2 teaspoons paprika
2-1/4 teaspoons pepper, divided
3/4 teaspoon salt, divided
4 catfish fillets (6 ounces each)
1 medium mango, peeled and cubed
1 medium ripe avocado, peeled and cubed
1/3 cup finely chopped red onion
2 tablespoons minced fresh cilantro
2 tablespoons lime juice
2 teaspoons olive oil

Steps:

  • Combine the oregano, cumin, paprika, 2 teaspoons pepper and 1/2 teaspoon salt; rub over fillets. Refrigerate for at least 30 minutes., Meanwhile, in a small bowl, combine the mango, avocado, red onion, cilantro, lime juice and remaining salt and pepper. Chill until serving., In a large cast-iron skillet, cook fillets in oil over medium heat until fish flakes easily with a fork, 5-7 minutes on each side. Serve with salsa.

2 tablespoons paprika
2 teaspoons cayenne pepper
2 teaspoons dried oregano
1 teaspoon kosher salt
1 teaspoon fresh ground black pepper
4 (6 ounce) catfish fillets
3 tablespoons olive oil
2 (8 ounce) packages cherry tomatoes, cut in half
1/2 small red onion, finely chopped
1 chopped small green bell pepper
1 minced serrano chili
3 tablespoons chopped fresh cilantro
1/4 teaspoon kosher salt
1 tablespoon fresh lime juice
2 tablespoons olive oil

Steps:

  • Preheat broiler.
  • On a small bowl, combine the paprika, cayenne, oregano, salt and pepper.
  • Place the catfish fillets on a large baking sheet in a single layer.
  • Lightly coat both sides of each fillet with the oil, then liberally rub the spice mixture evenly onto both sides (reserve any remaining spice that hasn't touched the fish in an airtight conatiner for future use).
  • Place the fish under the broiler and cook, watching closely, until slightly charred, about 5 minutes.
  • Turn and broil until cooked through, about 5 minutes more.

3 tablespoons vegetable oil
1/2 teaspoon grated lime rind
1 tablespoon lime juice
1 garlic clove, minced
2 teaspoons chili powder
1/2 teaspoon cumin
1 pinch pepper
4 catfish fillets or 4 tilapia fillets
3/4 cup pineapple salsa
1/3 cup pineapple tidbits
2 tablespoons coriander or 2 tablespoons parsley
1 pinch dried chili

Steps:

  • In shallow dish, whisk together oil, lime rind and lime juice, garlic, chili powder, cumin and pepper.
  • Add fish and turn to coat evenly.
  • Let stand for 15 minutes.
  • Meanwhile, in bowl combine salsa, pineapple, coriander and chilies.

4 catfish fillets
1/2 teaspoon garlic salt
1/2 teaspoon pepper
3 medium tomatoes, chopped
1/4 cup chopped onion
2 medium jalapeno peppers, chopped
2 tablespoons white wine vinegar
1 teaspoon salt

Steps:

  • Sprinkle catfish with garlic salt and pepper.
  • Place catfish in a well-oiled grill basket, or on a well-oiled grill rack.
  • Grill on an uncovered grill directly over medium-hot coals for about 5 minutes per side, or until fish flakes easily.
