CLASSIC MOJITO

4 tablespoons cane sugar, plus more to rim glass
4 cups ice
6 ounces light rum
10 to 12 mint sprigs
6 tablespoons fresh lime juice
Club soda
4 slices lime

Steps:

  • Moisten the rims of 4 glasses with lime and dip into cane sugar. Set aside.
  • Place ice in beverage shaker then add in the rum. Break up half of the mint leaves and add to the shaker with the lime juice and sugar. Shake well and serve over ice in a funky glass. Top off each glass with a splash of club soda. Garnish each glass with a slice of lime and a sprig of mint.

4 ounces olive oil
4 ounces finely ground semolina
4 ounces coarsely ground semolina
2 ounces blanched and finely chopped almonds
Ground cinnamon
12 ounces water
10 ounces sugar
1/2 lemon
1 teaspoon whole cloves
1 cinnamon stick

Steps:

  • Heat oil in a medium pot on medium-high heat. Add the semolinas and almonds and stir constantly until the semolina is cooked and golden brown, about 20 minutes. Remove from heat.
  • In a small pot, mix the water, sugar, lemon half, cloves, and cinnamon. Place on high heat and bring to a boil. Turn heat to medium-high heat and simmer until sugar has dissolved, about 6 minutes. Pass through a sieve and discard lemon and spices.
  • Carefully, pour the syrup over the semolina and stir until well blended. Cover the pot and let sit to absorb, about 10 minutes.
  • Spoon the mixture into 3 1/2 to 4-ounce ramekins and let cool. Unmold onto a plate and sprinkle with cinnamon.

2 tablespoons olive oil
1 medium onion, chopped fine
4 cups flour, sifted
1 tablespoon baking powder
1 teaspoon salt
3/4 cups warm water
1/4 cup extra-virgin olive oil
1 tablespoon thyme, chopped fine
1 cup Kalamata olives, pitted and chopped
Milk, for a glaze

Steps:

  • In a saute pan, heat a 2 tablespoons of olive oil and add the onions. Cook until lightly browned but not fully caramelized. Set aside to cool.
  • In a bowl, mix the dry ingredients: flour, baking powder, and salt. Add the Sauteed onions to the dry ingredients. Then add the water, olive oil, thyme, and olives. Mix until well blended and a dough has formed. Turn out on a floured board and knead the dough until soft and smooth, about 5 to 8 minutes. Cover with a towel and let sit for about 20 minutes.
  • Preheat oven to 400 degrees F.
  • Shape the dough into a large ball and place in a greased loaf pan. Bake for 1 hour and until the bread is golden brown. When the bread is 10 minutes out from being done, brush the surface lightly with milk to give it a gloss. Remove the bread from the oven and place on a rack to cool.

10 mint sprigs
1 1/2 ounces metaxa brandy
club soda

Steps:

  • Muddle (or mush) the sugar, some soda water, lemon juice, lime wedge and Mint in a low or highball glass. Fill with crushed Ice and Metaxa and fill with soda water - stir it up and tip'er back!
