KATIE'S KAHLUA DIP

My friend Katie makes the most amazingly addictive Kahlua dip. It is a great party dip and can be easily doubled.

1 (12 ounce) bag miniature chocolate chips
1 (8 ounce) container Cool Whip
8 ounces cream cheese, softened (use ONLY regular cream cheese, light or fat-free won't work)
1/3 cup Kahlua (more or less depending on your taste)
chocolate graham crackers or chocolate graham cracker sticks

Steps:

  • Be sure that the Cool Whip is completely thawed and the cream cheese is softened at room temperature.
  • Combine Cool Whip, cream cheese, mini chocolate chips and kahlua in a bowl.
  • Store in refrigerator overnight or for at least 3 hours (it tastes better the longer it sits).
  • Serve with chocolate graham crackers (broken up) or chocolate graham cracker sticks.

This is an extremely easy and yummy Holiday goodie. Put it on your gift trays and hear your friends rave. Can also be made non-alcoholic, if preferred.

17 Oreo cookies (do not use double-stuffed)
3/4 cup finely chopped pecans
2 tablespoons light corn syrup
3 tablespoons Kahlua
1/2 cup powdered sugar
1 1/2 teaspoons vanilla
chocolate, for dipping (optional)

Steps:

  • Chop or crush cookies quite fine.
  • Measure out 1 1/2 cups of crushed cookies and mix with remaining ingredients except dipping chocolate.
  • Form into small balls, about one inch in diameter.
  • Roll balls in remaining cookie crumbs (for best results, have the crumbs crushed very fine).
  • OR, refrigerate balls for 1 hour and then dip in melted chocolate; return to refrigerator to set chocolate.
  • Store in airtight container in refrigerator.
  • NOTE: If you want to make a non-alcoholic version, just substitute Kahlua flavored syrup, which can be found in the coffee section of most supermarkets.
  • Change the liqueur/syrup flavor to make Amaretto Balls, Irish Cream Balls, or whatever suits you.

I came up with this delicious dip out of ingredients I had on hand. This would be great in a trifle with chocolate cake, as a dip for cookies or fruit. It turned out better than I thought it would. I hope you try it sometime. It only took 5 minutes to make. Yum! This recipe could easily be halved, if just want enough for a snack. Enjoy!

2 - 3.58 ounce(s) instant, white chocolate pudding
1 - 8 ounce(s) cool whip, thawed
1/2 cup(s) kahlua - or to taste
1 cup(s) cold milk
assorted - fruit or cookies to dip

Steps:

  • In a medium bowl, pour the pudding mixes, milk and Kahlua. Whisk until thick.
  • Fold in the cool whip, serve immediately or refrigerate, covered until ready to serve. Serve with fruit or assorted cookies. Chocolate would be wonderful.
