CORN AND BLACK BEAN SALSA AKA COWBOY SALSA
This is a refreshing salsa that can be served as an appetizer with tortilla chips (lime flavored are really good), as a salad or over rice. Quick and easy, amounts are approximate. I have used canned diced tomatoes when fresh tomatoes are not as tasty.

Steps:
- In a large bowl, mix vinegar, hot sauce, oil, garlic, cumin and pepper.
- Peel, pit and cut avocado into 1/2-inch cubes. Add to vinegar mixture and mix gently to coat.
- Drain and rinse peas, beans, and corn. Add peas, beans, corn, cilantro, and tomatoes to avocado; mix gently to coat. Add salt to taste.
- Serve with tortilla chips and enjoy.

- Combine the black beans, black-eyed peas, pinto beans, shoepeg corn, celery, cilantro, red and yellow bell peppers, green onion, pimento peppers, jalapeno pepper, and garlic in a large bowl. Set aside.
- Bring the rice vinegar, olive oil, sugar, salt, and black pepper to a boil in a saucepan over medium-high heat until sugar is dissolved, about 5 minutes. All to cool to room temperature, then pour over the bean mixture. Cover and refrigerate for 2 hours or overnight. Drain before serving.
