This is an old recipe handed down from my mother.

Number Of Ingredients 7

2 eggs
½ cup white sugar
1 cup chopped dates
1 cup flaked coconut
1 cup chopped walnuts
1 teaspoon vanilla extract
¼ teaspoon almond extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl beat eggs with an electric mixer. Beat in sugar. Stir in dates, coconut, walnuts, vanilla and almond extract. Spoon mixture into a 2-quart casserole dish.
  • Bake in preheated oven for 30 minutes.
  • Remove from oven, and while mixture is still hot, beat well with a wooden spoon.
  • When mixture is cool enough to handle, form into small balls and roll in granulated sugar.

This is a good way to use up leftover ingredients from Christmas baking. The amounts of dates, nuts and coconut can be varied - just use a total of 3 cups.

2 eggs
1 ¼ cups white sugar
1 cup coarsely chopped walnuts
1 cup chopped dates
1 teaspoon vanilla extract
1 cup flaked coconut
¼ teaspoon almond extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a mixing bowl, beat eggs with an electric mixer. Add 1 cup sugar and beat well. Blend in nuts, dates, vanilla, coconut and almond extract. Transfer mixture to an ungreased 2 quart casserole.
  • Bake in a preheated 350 degrees F (175 degrees C) oven for 30 minutes. Remove the mixture from the oven while still hot and beat well with a wooden spoon. Cool until the mixture can be handled then form into small balls and roll in the 1/4 cup remaining sugar.

The batter for these specialty cookies is baked and then formed into balls. When my son-in-law and grandson are coming for a visit, I'm always sure to have these cookies on hand.

3 large eggs, room temperature
1 cup sugar
1 teaspoon vanilla extract
1/4 teaspoon almond extract
1 cup chopped dates
1 cup sweetened shredded coconut
1 cup chopped walnuts
Additional sugar

Steps:

  • In a bowl, beat eggs until lemon-colored. Gradually beat in sugar. Beat in extracts. Stir in the dates, coconut and walnuts. Pour into an ungreased deep 2-qt. baking dish. , Bake at 350° for 30-35 minutes. Remove from oven; stir with a wooden spoon (batter will appear moist and sticky). Place baking dish on a wire rack. When cool enough to handle, roll batter into 1-in. balls. Roll in sugar; place on waxed paper-lined baking sheets.

1 cup snipped dates
1 cup flaked coconut
1 cup walnuts, chopped
1 teaspoon vanilla
1/2 teaspoon almond extract

Steps:

  • Beat eggs.
  • Add sugar gradually beating until fluffy. Stir in remaninig ingredients.
  • Place into an ungreased 2 qt casserole. I use a 9 x 9 pyrex pan.
  • Bake in oven at 350 for 30 minutes.
  • Remove from oven and stir well.
  • Cool.
  • Form into balls and roll in granulated sugar.

1 c granulated sugar
1 tsp vanilla extract
1/4 tsp almond extract
1 c chopped dates
1 c flaked coconut
1 c toasted walnuts, chopped fine
1/2 c additional granulated sugar

  • 1. Preheat oven to 350 degrees. Spray a 2-quart deep baking dish with non-stick spray and set aside. In a large bowl beat eggs until lemon-colored. Gradually beat in sugar and extracts. Stir in date, coconut and chopped nuts. Pour into greased casserole dish and bake 30-35 minutes. Remove from oven and stir with wooden spoon (mixture will be moist and sticky). Cool dish on wire rack until cool enough to handle. Roll into 1" balls and roll in additional granulated sugar. Yield: 4 dozen

Tater Tot Casserole is an easy dinner recipe that you can put together in an hour. Kids, and adults, will love this cheesy potato casserole!

1 tablespoon olive oil
1 small yellow onion, diced
2 pounds lean ground beef
1 tablespoon steak seasoning (I use Montreal's)
1 1/2 cups frozen mixed vegetables
3 tablespoons flour
1 1/2 cups beef broth
1/2 cup milk
1 1/2 tablespoons Worcestershire sauce
3 cups grated cheddar cheese
32 ounces frozen tater tots

Steps:

  • Preheat oven to 350°F.
  • In a large skillet over medium-high heat olive oil. Add the onions and cook until softened, 4-5 minutes. Add in the ground beef and steak seasoning and cook until browned, 5-7 minutes. Stir in the vegetables and cook until warmed. Drain excess liquid from the pan and return back to the heat.
  • Sprinkle in the flour and stir to combine, cooking for 30 seconds. Stream in the broth, milk, and Worcestershire sauce. Cook for 3-4 minutes until thickened.
  • Pour beef mixture into a 9×13 baking dish. Sprinkle the grated cheese evenly on the meat mixture and then top evenly with the frozen tater tots.
  • Bake for 45-50 minutes until the mixture is bubbly and the tater tots are lightly browned.
  • Serve warm.
