1/4 cup cashews, chopped
1 tablespoon hoisin sauce
2 garlic cloves, minced
2 green onions, chopped
1/2 teaspoon ground black pepper
1/4 teaspoon cayenne pepper
1/4 cup canola oil
3 teaspoons honey
6 tablespoons rice wine vinegar
1/2 teaspoon tamarind pulp or 1/2 teaspoon tamarind juice
1/2 teaspoon sesame seeds, toasted

Steps:

  • Combine cashews, hoisin sauce, garlic, green onion, cayenne pepper and black pepper in a blender or food processor and mix until smooth.
  • In a small sauce pan add oil, honey, rice wine vinegar and tamarind pulp.
  • Heat at medium for 1 minute.
  • Stir until the tamarind pulp is completely dissolved.
  • Add this to the cashew mixture and process until smooth.
  • Pour into a serving bowl and sprinkle with toasted sesame seeds.
  • Refrigerate for at least 30 minutes.

1 pound large shrimp (about 15), shelled and deveined
3/4 cup finely shredded carrot
1/4 cup finely chopped scallion greens
1 teaspoon rice vinegar, or to taste
twelve 6 1/2-inch rounds of rice paper*
3/4 cup fresh coriander leaves
3/4 cup finely shredded Bibb lettuce
3/4 cup alfalfa sprouts
Garnish: coriander sprigs
For cashew dipping sauce:
1 cup unsalted roasted cashews (about 1/4 pound)
1 tablespoon vegetable oil
3/4 cup plain yogurt
2 garlic cloves, minced
1 tablespoon fresh lemon juice, or to taste
1 tablespoon soy sauce, or to taste
cayenne to taste
*available at Asian markets

Steps:

  • In a saucepan of boiling salted water cook shrimp until just cooked through, 1 to 2 minutes, and drain. Let shrimp cool and cut into 1/4-inch pieces.
  • In a small bowl toss carrot with scallion greens, vinegar, and salt and pepper to taste.
  • Fill a small shallow baking pan or cake pan with warm water. Working with 4 sheets rice paper at a time, immerse them in water and let stand until very pliable, about 45 seconds. Carefully arrange soaked sheets in a single layer on paper towels to drain. Working with 1 soaked sheet at a time and keeping remaining sheets covered with dampened paper towels, put sheet on a clean dry work surface and arrange about 1 tablespoon coriander leaves in a horizontal line across bottom, leaving a 1-inch border on bottom edge and on each side. Top coriander with about 2 tablespoons shrimp pieces and top shrimp with about 1 tablespoon carrot mixture. Sprinkle about 1 tablespoon lettuce, about 1 tablespoon sprouts, and salt and pepper to taste over carrot mixture. Roll up filling tightly in sheet, folding in 2 sides of sheet to completely enclose filling, and continue rolling.
  • Make more spring rolls in same manner with remaining 3 soaked sheets. Transfer assembled rolls to a tray and cover with dampened paper towels. Repeat procedure with remaining 8 rice paper sheets and filling ingredients. Tightly cover tray with plastic wrap (keeping dampened paper towels directly on spring rolls). Spring rolls may be made 6 hours ahead and chilled.
  • Just before serving, with a serrated knife cut spring rolls in half diagonally. Arrange spring rolls on a platter and garnish with coriander sprigs. Serve spring rolls with cashew dipping sauce.
  • To make cashew dipping sauce:
  • In a food processor blend cashews with oil, scraping down sides, until mixture forms a paste. Add remaining ingredients and salt and pepper to taste and blend until smooth. Dipping sauce may be made 4 days ahead and kept chilled, covered. Return dipping sauce to room temperature before serving. Makes about 1 1/2 cups.

Lime Marmalade Dipping Sauce:
¼ cup dry sherry
¼ cup soy sauce
1 Tbs. oriental sesame oil
2 Tbs. fresh lime juice
finely grated zest of 1 lime
2 cloves garlic, minced
2 lbs. boneless, skinless chicken breasts, cut into 1-in. cubes
1 ½ cups cashews, lightly toasted
½ cup sesame seeds
½ cup cornstarch
1 ½ Tbs. minced fresh ginger
1 16 oz. jar lime marmalade
1 5 oz. Jar prepared white horseradish
3 Tbs. Chopped fresh cilantro

Steps:

  • In a small bowl whisk together the sherry, soy sauce, sesame oil, and the lime juice. Stir in the lime zest, garlic and ginger. Place the chicken cubes in a large bowl and toss with the marinade. Refrigerate for at least 2 hours. Place the cashews, sesame seeds and cornstarch in a food processor and process until the mixture looks like small, powdery pebbles. Transfer to a shallow dish. Remove the chicken from the marinade, reserving any left over. Dredge each chicken cube with the cashew mixture to coat. Place the cubes slightly apart on a lightly oiled baking sheet. Bake at 375, drizzling wit the reserved marinade, until the chicken is just cooked through, about 10 minutes. For dipping sauce, heat marmalade in a saucepan over medium-low heat until just melted. Remove from heat and stir in horseradish and cilantro.

6 dried shiitake mushrooms
1 1/2 teaspoons soy sauce
1/2 teaspoon sugar
1 cup rice vermicelli
1/4 cup finely sliced green onion
1 teaspoon rice wine vinegar
salt
pepper
8 ounces baby shrimp, cooked and diced
1/2 cup shredded carrot
1/4 cup fresh cilantro leaves, chopped
1/4 cup fresh mint leaves, chopped
1/2 cup alfalfa sprout
1/2 cup finely shredded lettuce
12 round rice paper sheets
1/2 cup mayonnaise (optional)
2 teaspoons Thai red curry paste (optional)
1 teaspoon lime juice (optional)
1/2 teaspoon water (optional)
2 tablespoons sugar
3/4 cup water
1 cup cashews, unsalted
1 tablespoon creamy peanut butter
1 tablespoon rice wine vinegar
1 tablespoon fresh lime juice
2 tablespoons ginger, fresh,minced
3 tablespoons soy sauce
1 -3 teaspoon red pepper flakes, according to taste
salt and pepper

Steps:

  • Prepare all ingredients before assembling rolls.
  • If using, combine the mayonnaise, Thai red curry paste, lime juice and water, mix well until thoroughly blended and refrigerate until needed.
  • Cook the rice vermicelli according to the packet directions until al dente, rinse in cold water, drain well, and chop into 2” to 3” lengths.
  • Soak the dried shiitake mushrooms in warm water for 30 minutes until reconstituted, then drain, reserving ¾ cup soaking liquid.
  • Remove and dispense of stalks, and thinly slice caps.
  • Cook shiitake in reserved liquid until mushrooms are tender and liquid evaporates.
  • Season mushrooms with soy sauce and sugar, set aside and let cool.
  • Add the rice wine vinegar, and salt and pepper to taste, to the green onions, mix well and set aside.
  • Place all ingredients, including the shrimp, shredded carrot, cilantro, mint, alfalfa sprouts and lettuce in separate piles on your work surface.
  • Fill a shallow casserole dish with warm water.
  • Immerse rice wrappers, four at a time, into the water until pliable (about 45 seconds).
  • Arrange wrappers on paper towelling to drain, but keep moist by placing a damp paper towel over each wrapper.
  • Working one wrapper at a time, thinly spread some of the mayonnaise/red curry mixture (if using) with a knife over the lower 1/3rd of the rice wrapper.
  • Top with thin layers of noodles, shrimp, mushrooms, green onions, carrot, cilantro, mint, alfalfa and lettuce.
  • Roll the rice wrapper over once, tightly, from bottom, then fold in the two sides to completely enclose the filling.
  • Continue folding the wrapper over until completely rolled.
  • Place finished roll seam-side down on a serving plate, and cover with a damp paper towel to prevent spring rolls from becoming dry before serving.
  • Slice each roll diagonally in half, to serve.
  • Serve with a cashew dipping sauce or a diluted mixture of hoisin sauce and water.
  • Cashew Dipping Sauce: Toast the cashew nuts on a cookie sheet in a 400-degree F oven until golden, then chop finely.
  • Combine the sugar and water in a small saucepan, and bring to a boil over high heat, stirring.
  • Remove from heat, add remaining ingredients and mix well.
  • Add as much or as little dried red pepper flakes, according to your preference.
  • Correct consistency with a little extra water if necessary.

4 cloves garlic, minced
4 tablespoons brown sugar
2 tablespoons fish sauce
4 teaspoons soy sauce
2 teaspoons toasted sesame oil
1 medium lime, juiced
1 tablespoon chili-garlic sauce
1 (14 ounce) can coconut milk

Steps:

  • Put cashew butter in a bowl. Whisk garlic, brown sugar, fish sauce, soy sauce, and sesame oil together. Add lime juice and chili-garlic sauce.

2/3 cup chopped fresh cilantro
2 cloves garlic, quartered
2 green onions, chopped
1 T. sugar
1 tsp. black pepper
1 tsp. cumin
4 tsp. white vinegar
1 tsp. balsamic vinegar
1/2 tsp. tamarind pulp
1/2 cup honey
Pinch ground saffron
1/4 cup olive oil

Steps:

  • Combine first 7 ingredients in a food processor. Blend well. Combine the vinegars, honey, tamarind, and saffron in a small bowl. Heat the mixture for about 1 minute in microwave then stir until tamarind pulp dissolves completely. Pour mixture into blender or food processor and mix with cashew mixture (about 20 seconds). Pour sauce and the oil into a bowl and stir by hand. Cover and refrigerate at least 30 minutes.

Cooked lobster meat
Basil leaves
Granny Smith apples, julienned
Enoki Mushrooms
Baby cucumbers with flowers (if available)
Yuzu Cashew Dipping Sauce, recipe follows
1/4 cup sweet soy sauce
1/4 cup teriyaki sauce (recommended: Kikkoman)
2 tablespoons yuzu
2 tablespoons fish sauce
2 tablespoons sesame seed oil
2 tablespoons salad oil
2 tablespoons rice wine vinegar
1 teaspoon finely minced kaffir lime leaf
2 teaspoons finely chopped cilantro leaves
1 cup unsalted cashews, lightly toasted and chopped

Steps:

  • Soak each rice paper in warm water before rolling. Cut each sheet into 4 pieces by first cutting across and then diagonal. Place a few basil leaves and some lobster meat down on 1/4 of the soaked wrapper. Next place some apple, mushrooms, and baby cucumber on top.
  • Roll in a cone shape and store under a damp paper towel before serving with the dipping sauce.
  • Combine all ingredients except the cilantro and cashews. Pulse with hand blender or blender. Fold in chopped cilantro and cashews.
