1 teaspoon white wine vinegar
½ teaspoon dried parsley
½ teaspoon dried basil

½ red onion, cut into wedges
4 cloves garlic, peeled and smashed

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a half sheet pan with parchment paper.
  • Whisk oil, vinegar, parsley, basil, oregano, salt, and pepper together in a bowl with a fork. Add carrots and turn to coat. Pour carrots onto the prepared sheet pan and nestle onions and garlic between them. Drizzle any remaining oil over the onions using a spatula.
  • Bake in the preheated oven until vegetables are soft and cooked through, turning after about 25 minutes, about 45 minutes total.

6 medium potatoes, chopped
6 medium carrots, peeled and chopped
3 medium onions, chopped
6 cloves garlic, crushed
¼ teaspoon dried sage
¼ teaspoon dried basil
¼ cup extra-virgin olive oil
2 tablespoons balsamic vinegar
2 tablespoons light brown sugar
sea salt and ground black pepper to taste

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Place potatoes, carrots, onions, garlic, sage, and basil in a large bowl; add oil and balsamic vinegar and toss to coat. Transfer to a rimmed baking sheet.
  • Roast in the preheated oven, tossing a couple of times for even cooking, until tender, about 30 minutes. Remove from the oven and sprinkle with brown sugar. Continue to roast for 10 minutes. Season with sea salt and pepper just prior to serving.

6 to 7 pounds beef brisket
2 tablespoons kosher salt
2 teaspoons freshly ground black pepper
1 tablespoon minced garlic (4 cloves)
2 teaspoons dried oregano leaves
1 pound carrots, peeled and cut into 2-inch chunks
8 stalks celery, cut into 2-inch chunks
6 yellow onions, peeled and sliced
6 fresh or dried bay leaves
1 (46-ounce) can tomato juice

Steps:

  • Preheat the oven to 350 degrees F.
  • Place the brisket in a heavy roasting pan. In a small bowl, combine the salt, pepper, garlic, and oregano. Rub the mixture on the brisket. Pile the carrots, celery, onions, and bay leaves on the brisket and pour in enough tomato juice to come about 3/4 of the way up the meat and vegetables. Cover the top of the pan with 2 sheets of parchment paper, then with aluminum foil. (The tomato juice will react unpleasantly with the aluminum foil if they touch.)
  • Bake for 3 1/2 hours, or until the meat is tender. Remove the meat from the pan and keep it warm. Place the pan on 2 burners and boil the vegetables and sauce over medium heat for another 30 minutes, or until the sauce is thickened.
  • To serve, slice the meat across the grain. Serve with the vegetables.

GLAZED CARROTS, PARSNIPS AND PEARL ONIONS

1 tablespoon minced garlic
1 tablespoon minced ginger
1 cup carrots, 1/4-inch dice
1 cup parsnips, 1/4-inch dice
1 cup red pearl onions, blanched and peeled
1 cup chicken stock
1 tablespoon dark soy sauce
Salt and black pepper, to taste

Steps:

  • In a medium hot skillet, add 1/2 tablespoon of butter and cook the garlic and ginger until soft, about 1 minute. Add the carrots, parsnips and onions and season. Cook 5 minutes to soften then add the stock, soy sauce and simmer. Reduce by 50 percent, about 12 to 15 minutes and check for seasoning. Lift with the butter and reserve hot.

2 medium onions, sliced
1 cup shredded Cheddar cheese
3 tablespoons butter
3 tablespoons all-purpose flour
1 ½ cups milk
½ teaspoon salt
⅛ teaspoon ground black pepper
1 tablespoon butter
1 cup fine dry bread crumbs

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place carrots and onions in a pot with enough lightly salted water to cover, and bring to a boil. Cook 5 minutes, or until tender but firm. Drain, and spread 1/2 the carrots and onions in a baking dish. Cover with 3/4 cup cheese, layer with remaining carrots and onions, and top with remaining cheese.
  • In a saucepan, melt 3 tablespoons butter and mix in flour until smooth. Gradually stir in milk until thickened, and season with salt and pepper. Pour over the carrots, onions, and cheese in the baking dish.
  • Melt 1 tablespoon butter in a small pot, and mix in bread crumbs. Sprinkle evenly in the baking dish.
  • Bake 20 minutes in the preheated oven, or until bubbly and lightly browned.

Steps:

  • Preheat oven to 350°F.
  • In a large roasting pan combine carrots and onions and sprinkle with bacon.
  • Trim fat on pork roast to 1/4 inch thick. With a paring knife make shallow slits in fat about 1 inch apart and in each insert a garlic slice and a rosemary leaf cluster. Season roast with salt and freshly ground black pepper and arrange, fat side up, on vegetables. Roast pork and vegetables 1 hour and 20 minutes, or until pork registers 160°F. on a meat thermometer. Transfer pork to a platter and let stand 15 minutes.
  • Pour off fat from pan. To pan with vegetables add water and cook over high heat, stirring to loosen brown bits, until most liquid is evaporated. Toss vegetables with parsley.
  • Arrange vegetables on platter with pork and garnish with rosemary and parsley sprigs.

4 to 6 medium potatoes
4 large carrots
2 medium onions
1/4 c butter
1 c water
to taste salt

Steps:

  • 1. Melt butter over medium to high heat
  • 2. Salt and pepper port chops and sear on each side just enough to take the pick away
  • 3. Peel and cut up potatoes, carrots and onions while pork is searing.
  • 4. Add the cup of water and layer all of the veggies over top of the pork. Turn heat down to low to medium and cover with a tight lid. Simmer for an hour and half depending on the thickness of your chops. If they are thin, may take less time. It is done when potatoes and carrots and pork is tender and falling apart.
  • 5. When serving, mash the potatoes with your fork and cover with the juice from the pot. Delish!!!!!!!

  • Cook carrots, 2 Tbsp. oil, 1 Tbsp. thyme, 1 tsp. salt, 1/4 tsp. red pepper, and 1 cup water in a large skillet over medium-high heat, stirring occasionally, until water is evaporated, about 15 minutes. Continue to cook, stirring occasionally, until carrots are lightly browned and tender, about 5 minutes more.

For pot roast
1/2 cup canola oil
Kosher salt and freshly ground black pepper
5 pounds boneless short ribs, denuded (all surface fat removed; have your butcher do this)
1 cup dry sherry
4 carrots, peeled and roughly chopped
2 large onions, peeled and roughly chopped
8 stalks celery, peeled and roughly chopped
8 cloves garlic, unpeeled
1 bay leaf
About 8 cups (2 quarts) chicken stock or low-sodium chicken broth
For roasted carrots and caramelized onions
6 medium carrots (about 2 pounds) peeled, halved lengthwise, then halved horizontally
1/4 cup extra-virgin olive oil
Kosher salt and freshly ground black pepper
2 tablespoons canola oil
3 medium Spanish onions, sliced crosswise into 1/4-inch-thick slices (about 6 to 7 cups)

Steps:

  • Prepare pot roast
  • Position racks in upper and lower thirds of oven and preheat to 350°F. Season beef liberally with salt and pepper. In large Dutch oven or heavy ovenproof pot over moderately high heat, heat oil until hot but not smoking. Add beef and sear until dark brown and crisp on both sides, about 10 minutes total. Transfer beef to large plate. Pour off oil in pan and discard. Add sherry and simmer uncovered, scraping up browned bits on bottom of pan, until reduced by half, about 5 minutes. Pour reduced sherry into heatproof liquid measuring cup.
  • In same pan, combine carrots, onions, celery, garlic, and bay leaf. Lay beef on top of vegetable mixture and pour reduced sherry over. Add enough chicken stock to cover 3/4 of meat. Cover and transfer to lower rack in oven. Roast until fork-tender, about 3 hours.
  • While beef is roasting, prepare roasted carrots and caramelized onions
  • During final hour of roasting, in large bowl, toss carrots with olive oil until well coated. Season generously with kosher salt and freshly ground black pepper. Spread on baking sheet and transfer to upper rack in oven. Roast until slightly tender and browned, about 45 minutes. Transfer to large bowl and keep warm.
  • During final 30 minutes of roasting, in heavy 12-inch skillet over moderately high heat, heat canola oil until hot but not smoking. Add onions and sauté, stirring constantly, until caramelized, about 20 to 25 minutes. Season to taste with kosher salt, add to roasted carrots in large bowl, and keep warm.
  • Finish dish
  • When beef is tender, transfer to serving platter; tent with foil. Skim fat from liquid in pot. Strain liquid through fine-mesh sieve, pressing on solids with back of spoon to extract all juices, then discarding solids. Return liquid to pot, set over high heat, and bring to boil. Reduce heat to moderate and simmer, uncovered, until reduced slightly, about 5 minutes. Season juices to taste with salt and freshly ground black pepper.
  • Pour half of juices into bowl with carrots and onions; toss to combine. Pour other half of juices into gravy dish. Arrange carrots and onions around beef on serving platter and serve immediately, with extra juices on side.

BERBERE-SPICED ROASTED CARROTS, CHICKPEAS AND ONIONS



Berbere-Spiced Roasted Carrots, Chickpeas and Onions image

This is one of my favorite sheet pan meals. The protein from the chickpeas makes it a complete meal, especially with a cooling dollop of Greek yogurt on the side. You could also use this as a side to roasted chicken or fish fillets or toss with hearty, leafy greens for a substantial fall or winter salad. Feel free to substitute other canned beans or vary the root vegetables (a few parsnips are really nice!) to suit your taste.

1 large red onion, trimmed and cut into 1-inch dice
One 15.5-ounce can chickpeas, drained and rinsed

1/4 cup red wine
2 tablespoons honey

1/4 cup New Mexico chile powder
2 tablespoons sweet paprika

1/2 teaspoon ground cardamom

1/2 teaspoon granulated onion

Steps:

  • For the carrots and onions: Preheat the oven to 400 degrees F with a rimmed baking sheet on the bottom rack. To cut the carrots, hold a carrot at a 45-degree angle on your cutting board and slice a 1-inch chunk off, rotate the carrot a quarter turn and slice off another chunk. Continue to the end of the carrot and cut all of the carrots this way. (This is a "roll" or "oblique cut," a good technique for cutting long vegetables to give lots of surface area for browning.) Toss the carrots in a large bowl with the onion, chickpeas, olive oil, berbere and 1/2 teaspoon salt. Spread on the preheated baking sheet and roast until the vegetables are tender and nicely caramelized, about 25 minutes.
  • For the awaze sauce: While the carrots and onions roast, place the berbere in a small bowl. Stir in the red wine, honey and 1 teaspoon salt. The sauce should be thick but still able to drizzle. (This makes more awaze than you'll need for the recipe, but it keeps for up to a week in the fridge in an airtight container).
  • Mound the carrots and onions on a serving platter and drizzle with a few tablespoons of awaze sauce. Serve warm.
  • Combine all the spices in a small skillet. Toast over medium-low heat, stirring constantly, until fragrant, about 2 minutes. Let cool completely. This spice blend will keep, tightly sealed, in your pantry for several months. For longer storage, keep in the freezer. Makes about 1/2 cup.

This is a very easy way to make the most delicious, tender veggies! The baby carrots, onions and butter make everything taste almost sweet! Very good!

2 cups chicken bouillon, more if needed
4 tablespoons butter
1 teaspoon thyme
1/2 teaspoon italian seasoning
1/4 teaspoon pepper
1/2 teaspoon garlic powder, more if desired
4 -6 red potatoes, unpeeled (quartered or cut into small chunks)
1 sweet onion, chopped
1 1/2-2 cups baby carrots (or 1/2 small bag)

Steps:

  • In large baking dish with lid, place all ingredients.*There should be enough liquid to just cover.
  • Cover and bake in 350ºF oven for about 2 hours or til very tender.
  • Stir occasionally.
  • This goes nicely, (and easily), with roasted chicken which bakes for the same amount of time at the same temperature. A no-fuss meal!
  • *If you substitute chicken broth for the bouillon, you will need to add salt.
  • **You can remove veggies from broth and thicken to a gravy if desired. To make it into gravy, bring the broth to a low boil in a small frying pan or saucepan.
  • Add 1 tbsp cornstarch mixed with 1 tbsp cold water. Pour in and stir for 1-2 minutes. It will thicken immediately.
  • Add slowly to get the desired thickness of gravy. You may not need it all, or may want to add even more. (Thicken it to your own liking).
  • ***You can also make this on the stove quickly if desired. Bring to a boil, then simmer til veggies are tender. About 20-30 minutes.

3 cups water
1/2 pound fresh pearl onions, peeled
1 tablespoon butter
1-1/2 teaspoons sugar, divided
1 pound carrots, cut into 1/4-inch slices
6 bacon strips, cooked and crumbled
1/2 cup chicken broth
1 bay leaf
3 teaspoons minced fresh thyme or 1 teaspoon dried thyme
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a large saucepan, bring water to a boil. Add pearl onions; boil for 3 minutes. Drain and rinse in cold water; peel. , In the same pan, cook onions in butter and 3/4 teaspoon sugar over medium heat until golden brown, stirring frequently. , Add the carrots, bacon, broth, bay leaf, thyme, salt, pepper and remaining sugar. Bring to a boil. Reduce heat; cover and simmer for 8-10 minutes or until carrots are tender. , Uncover; return to a boil. Cook until liquid is reduced by half. Discard bay leaf. Easy Chicken Breast Stew With Onions and Carrots image

This is our weekly/by weekly recipe and it's so simple and delicious. I never even thought of posting it, but my son insisted on doing so. This recipe is very old. My granmother, my mother made it the same way for years. You can easily make this with cut up chicken, beef or pork, I did that many times before, just cook it longer and add potatoes 0.5 hour before the end, or until done.

1 -2 lb chicken breast, cut up in bite size pieces
2 carrots, grated
5 potatoes, cut up in bite size pieces if you like ((or more)
3 -4 garlic cloves (I usually add more, we love garlic)
1/3 bunch fresh parsley, chopped
1 cup chicken stock or 1 cup water
1/4 cup ketchup
1/4 cup whipping cream or 1/2 cup half-and-half
salt
pepper
meat tenderizer (optional)
olive oil (to saute chicken and veggies) or butter (to saute chicken and veggies)

Steps:

  • Sprinkle chicken pieces with salt, pepper and meat tenderizer and sauté in olive oil for a couple of minutes, add to your cast iron pot, or any heavy pot.
  • Sauté onions until translucent, add carrots, garlic and half of parsley, sauté for 2-4 more minutes, until vegetables are tender, add a little more salt to taste. Add to the pot with chicken.
  • In the same skillet as you cooked chicken, veggies add your chicken stock or water and heat it till it boils, add into the pot. The liquid should cover about the half of the chicken with veggies.
  • To the same pot add ketchup and heavy cream , mix the whole thing well and bring in to the boil.
  • Lower the heat to medium and cook for 15-20 minutes, or until potatoes are tender.
  • Enjoy!
