QUICK PICKLED SLAW RECIPE

This light, healthy slaw recipe is mildly acidic and full of flavor.

Number Of Ingredients 8

½ cup unseasoned rice vinegar
½ cup water
1 tablespoon granulated sugar
1 tablespoon mustard seeds
1 ½ teaspoons salt
3 cups (about 4 oz.) angel hair cabbage
1 cup matchstick carrots
3 radishes, cut into matchsticks (about ½ cup)

Steps:

  • Combine vinegar, water, sugar, mustard seeds, and salt in a small saucepan. Bring to a boil over high, and boil, stirring constantly, until sugar dissolves, about 1 minute.
  • Place cabbage, carrots and radishes in a medium bowl. Pour vinegar mixture over slaw mixture, and stir to combine. Chill, uncovered, 12 minutes. Drain and serve.

French Grated Carrot Salad with Lemon Dijon Vinaigrette image

This grated carrot salad with lemon dijon vinaigrette is standard fare in French bistros and markets.

1 pound carrots, peeled
2 teaspoons Dijon mustard
1 tablespoon freshly squeezed lemon juice, from one lemon
1½ tablespoons vegetable oil
1½ tablespoons extra virgin olive oil
1-2 teaspoons honey, to taste
Heaping ¼ teaspoon salt
¼ teaspoon freshly ground black pepper, to taste
2 tablespoons chopped fresh parsley
2 finely sliced scallions (or 1tablespoon finely chopped shallots)

Steps:

  • Shred the carrots in a food processor. Set aside.
  • In a salad bowl, combine the dijon mustard, lemon juice, honey, vegetable oil, olive oil, salt and pepper. Add the carrots, fresh parsley and scallions (or shallots) and toss well. Taste and adjust seasoning if necessary. Cover and refrigerate until ready to serve.
  • Notes: Depending on the sweetness of the carrots, you may want to add more or less honey. Also, if you make this salad ahead of time, be sure to check the seasoning again before serving as the flavors tend to mellow.

1 tablespoon honey
1 tablespoon rice vinegar
1 tablespoon lemon juice

4 cups shredded carrots
1 tablespoon celery seeds
1/4 cup chopped fennel fronds
1/4 cup currants
1/4 cup slivered almonds

Steps:

  • Add all ingredients to a small bowl and combine well.
  • In a medium bowl, mix together all the slaw ingredients. Add the vinaigrette and toss until well combined. Cover and refrigerate until ready to serve.

2 pounds carrots, approximately 12 to 15 medium
1/2 cup mayonnaise
Pinch kosher salt
1/3 cup sugar
1/2 cup canned, crushed pineapple, drained thoroughly of all liquid
1/2 cup raisins
2 teaspoons curry powder
1 teaspoon minced garlic
Pinch celery seed and/or caraway seed, optional

Steps:

  • Wash the carrots and peel, if necessary. Using a vegetable peeler, cut the carrots into wide noodle-shaped strips.
  • In a large mixing bowl whisk together the mayonnaise, salt, sugar, pineapple, raisins, curry powder, garlic, and celery seed and/or caraway seed, if using. Add the carrots and toss to combine. Serve immediately or refrigerate for 1 hour to serve cold.

1/4 cup sugar
1 1/2 pounds carrots, shredded
1 cup raisins
1/4 cup canned pineapple chunks, drained
1 teaspoon crushed red pepper, optional
2 tablespoons chopped chives

Steps:

  • In a medium bowl, mix together the mayonnaise, pepper, salt and sugar. Stir in the carrots, raisins and pineapple chunks. Add the crushed red pepper, if desired. Top with the chives.
  • Cover the slaw with plastic wrap and refrigerate for at least 30 minutes before serving, allowing flavors to meld.

Steps:

Toss the shredded carrots with the dressing in a large bowl. Taste and season with more salt or pepper as needed. Add the parsley and toss. Chill 30 minutes before serving.

My carrot slaw is very different from any other summer slaw and is so pretty too! Very simple to make and this is sure to be a hit at picnics as well as a side for steak! It is fine to make this a day ahead to give all the flavors time to blend well.

1 (10 ounce) bag shredded carrots
¾ cup dried cranberries
½ medium onion, thinly sliced

1 teaspoon lemon juice, or to taste
¼ cup salted sunflower seeds
½ cup crumbled blue cheese, or to taste

Steps:

  • Mix cabbage, carrots, cranberries, onion, and parsley in a medium bowl. Toss lightly. Add dressing and lemon juice. Toss, coating well. Cover and refrigerate until flavors blend, 3 hours to overnight. Sprinkle with sunflower seeds and blue cheese right before serving.
