This recipe is my grandmothers.I don't know where she aquired it but I have always had it at her house. A tried and true favorite in our family. This one doesn't stay around long! Great for gift giving too! This recipe I have found works better if you split the batter into 2 loaf pans. It makes lots of batter so making 2 instead of one seems to be the consensus here.

1 box butter pecan cake mix
1 box toasted coconut pudding mix
4 eggs
3/4 cup vegetable oil
1 cup hot water
1/4 cup poppy seed

Steps:

  • Preheat oven to 325.
  • In a large bowl mix all ingredients together.
  • Put in a buttered 2 9"loaf pans and bake for@ 45 minutes, testing with a toothpick for doneness.
  • Let cool and slice.
  • ENJOY.

3 cups all-purpose flour
2-1/4 cups sugar
3 teaspoons baking powder
1-1/2 teaspoons salt
3 large eggs, room temperature
1-1/2 cups whole milk
1 cup canola oil
1 tablespoon plus 1-1/2 teaspoons poppy seeds
1-1/2 teaspoons each butter flavoring, almond extract and vanilla extract
GLAZE:
3/4 cup confectioners' sugar
1/4 cup orange juice
1/2 teaspoon each butter flavoring, almond extract and vanilla extract

Steps:

  • In a large bowl, combine the flour, sugar, baking powder and salt. In a small bowl, whisk the eggs, milk, oil, poppy seeds, butter flavoring and extracts. Stir into dry ingredients just until moistened., Transfer to 2 greased and floured 9x5-in. loaf pans. Bake at 350° until a toothpick inserted in the center comes out clean, 55-60 minutes. Cool for 10 minutes before removing from pans to wire racks. Combine glaze ingredients; drizzle over warm loaves.

3/4 cup milk
1 cup finely shredded carrot
1 tablespoon butter or 1 tablespoon margarine
1 teaspoon salt
2 cups whole wheat flour
1 cup bread flour
1 tablespoon packed brown sugar
2 teaspoons bread machine yeast
1 1/2 teaspoons poppy seeds

Steps:

  • Measure carefully, placing all ingredients in bread machine pan in the order recommended by manufacturer, adding carrots with milk.
  • Select Basic/White cycle.
  • Use Medium crust color.
  • Adjust dough consistency, if needed.
  • Check dough after 5 minutes of mixing; it should form a soft, smooth ball around the blade.
  • If dough is too stiff or dry, add additional liquid, 1 teaspoon at a time, until dough is of the right consistency.
  • If dough is too soft or sticky, add additional bread flour, 1 teaspoon at a time.

This is a heart healthy fat burning bread that is relatively low in calories. Bonus: It tastes really good.

PLACE IN BREAD MACHINE IN THIS EXACT ORDER
1 c warm water (105º f)
1/8 c molasses or honey
1/8 c oil
1 c pureed carrot (baby food works great)
2 tsp poppy seeds
3 c whole wheat flour
1 pinch salt
1 pkg active dry yeast (2.5 teaspoons

Steps:

  • 1. Measure all ingredients and set on counter within easy reach. IMPORTANT: If you don't have a theremometer to check the water temperature, sprinkle a few drops on the inside of your wrist.(Think baby formula) It should just be barely lukewarm. If water is too hot, it will kill the yeast action. Pour water into bread machine pan
  • 2. Whisk the molasses and oil together until well blended. Pour into bread machine on top of water Add carrots and poppy seeds Carefully add flour, making certain that liquid is completely covered by flour Make a small well in the top of flour and pour the yeast into the depression
  • 3. Start bread machine for cooking This bread can be cooked on either regular or rapid cycle.
