Steps:
- Place potatoes and carrots in a small stockpot with enough cold water to cover; bring to a boil over high heat. Reduce heat; simmer until tender, about 10 minutes. Drain, and return to pot; place over low heat to dry out, 1 to 2 minutes.
- Remove pot from heat. Pour half-and-half over vegetables, and add butter; roughly mash with a wooden spoon or potato masher. Season with salt and pepper, and serve immediately.

This is a popular side dish in Belgium. It usually goes with blood sausage (boudin) or strips of bacon, but I often serve it with sautéed chicken. Go easy on the cream, you want it to have more substance than smooth mashed potatoes.

Steps:
- Heat a small skillet over high heat.
- Add the bacon and sauté for 5 minutes until the bacon bits are well colored.
- Remove from heat and set aside.
- Bring a large pot of salted water to a boil.
- Add potatoes and carrots.
- Cook for 20 to 25 minutes until the potatoes and carrots are well done or even slightly overdone (they will be easier to mash).
- Drain the vegetables and place them in a salad bowl.
- Mash the vegetables with a fork, a potato masher or any other manual ustensil. It is important not to use an electric mixer so that the texture remains chunky enough.
- Add the bacon bits and let the diced pieces of butter melt on top of the mashed vegetables.
- Add cream and nutmeg.
- Season with salt and pepper.
- Toss well and serve.

CARROT & BACON MASHED POTATOES
One of my German husband's childhood favorites. He likes to turn it into a more savory dish by crumbling some fried bacon over it. Nice with fried meat like pork chops or sausages and green beans or broccoli.

Steps:
- Heat oil in a medium-sized pot with a tight fitting lid over medium high heat. Add onions and carrots and fry until onion is transparent, about 2 minutes.
- Add water, cover and bring to a boil. Reduce heat to low and simmer for about 5 minutes.
- In the meantime peel potatoes and cut into 1 inch dice. Add to carrots,cover, bring to a boil again and cook over low heat for 30 minutes until vegetables are completely soft and almost all liquid has evaporated.
- If there is some water, cook it off uncovered over high heat, shaking pot to avoid sticking.
- Mash vegetables with a masher.
- Add milk gradually, beating with a whisker until desired consistency. Depending on the starch in potatoes this might require about 1-1 1/4 cups milk.
- Add butter, salt, cayenne and nutmeg to taste.
- If using fried bacon bits, mix one half into vegetables and sprinkle other half on top.

GARLIC CARROT MASHED POTATOES

- Fill a pot with chicken stock or water with bouillon cubes. Add in the potatoes and carrots. Set the stove to medium high and boil until the potatoes are tender. You should be able to stick a knife into them and they should slide off with ease. Strain the potatoes and carrots then pour into your mixing bowl or mixer bowl. I personally use a kitchen, just easier. ass in your garlic, butter, and cheese. Mix/mash and pout in heavy cream in moderate portions until the potatoes are at the texture that you desire. salt and pepper to taste.
CARROT SOUP WITH MASHED POTATOES
With a beautiful mix of spices and fresh ingredients, not only is this soup absolutely fabulous but you can also use up your mashed potato leftovers... awesome isn't it!

- 1. In a large pot over medium-high heat, add butter. When it starts foaming, add onions and stir just enough to coat them with butter. Cover, reduce heat to medium-low and cook for 3 minutes
- 2. Add carrots, stir well, cover, increase the heat to medium and cook for 5 minutes. A couple minutes later, quickly stir well.
- 3. Add leftover mashed potatoes, combine them with the ingredients before pouring in the chicken broth. Add Herbes de Provence, rosemary, paprika, thyme and white pepper; stir well. Add bay leaf and bring the mixture to a boil, whisking often. Reduce heat to medium-low and simmer gently for 30 minutes, stirring occasionally.
- 4. When time is up, turn off the heat and let the mixture rest for 5 minutes. Remove the bay leaf and discard it. Using an immersion blender, process until the soup is smooth with no lumps in it; taste and adjust if necessary.
- 5. Portion soup in warm bowls and drizzle 1 tbsp. per bowl with heavy cream and garnish with a parsley
