CARROT MARMALADE

Carrot Marmalade image

This is an amazingly good marmalade. I got the recipe from the Canadian Farm Cookbook of 1911. I used to make plain Seville orange marmalade but I like this better. It only makes three jars, but unlike most recipes for preserves, it does very well when doubled. If you love marmalade, you will want to!

Time 1h45m

Yield 3 250ml jars, 48 serving(s)

Number Of Ingredients 5

1 lemon
1 seville oranges
2 cups water
2 cups grated carrots
2 1/2 cups sugar

Steps:

  • Wash the lemon and orange and shred them finely.
  • Keep all the seeds from both, and put them in a clean new tea ball, or sew them into a scrap of cheesecloth.
  • Put the canning jars in a large kettle with enough water to come to an inch above the rims.
  • Turn the heat on just after you add the sugar and carrots to the marmalade- jars must be boiled 10 minutes to be sterilized.
  • Put the lemon and orange shreds and juice in a large, broad pot with the water and the seeds, and boil for ten minutes.
  • Wash, peel and grate the carrots.
  • Add the carrots and sugar to the peels.
  • Continue boiling until the marmalade is thick and forms a sheet when poured from the spoon, about 30 minutes longer.
  • Fish out the seeds, draining them well.
  • Seal the marmalade in sterilized jars and process in boiling water for 5 minutes.

CARROT MARMALADE LAYER CAKE

Carrot Marmalade Layer Cake image

This cake is even better if baked a day ahead, wrapped and refrigerated, then frosted the following day. This is an amazing carrot cake! Although I have only baked this in two cake pans, I'm sure it would be just as good baked in a 13 x 9-inch baking pan.

CARROT-PINEAPPLE-ORANGE MARMALADE

Carrot-Pineapple-Orange Marmalade image

This is a wonderful marmalade recipe from Ball's 2010 Blue Book Guide to Preserving. which was their 100th anniversary edition. It adds a new twist to regular orange marmalade. The marmalade is an essential ingredient in a muffin recipe that I wanted to make, so I decided to make a batch for that purpose, and in the end I discovered the marmalade is so good with other things, too. (NOTE: The weight of the pectin might not be exact. The site would not let me list the pectin as just 1 pouch as was listed in the book. It wanted a specific weight, but my pectin pouches were not labeled for size. So I took the pectin weight from the box (that contained 2 pouces) and listed the box weight as 6 ounces.)

It is refreshing and can be served on toast, over cream cheese with crackers or with ice cream. I think you will find it just as wonderful as I do. It is simple to make.If...

APRICOT, CARROT AND GOJI BERRY MARMALADE

Apricot, Carrot and Goji Berry Marmalade image

A lovely preserve which would be totally healthy if it weren't for the sugar! A great gift when canned correctly in nice kilmner jars

Provided by robd16

Categories     Fruit

Time 40m

Yield 3 jars

Number Of Ingredients 9

250 g ready to eat dried apricots
200 g carrots (about 4 medium or small)
1/4 pint water
100 g goji berries
500 g sugar
1 orange, juice of
1/2 lemon, juice of
3/4 pint water
knob butter

Steps:

  • Put the apricots into a pan of boiling water and boil for 5 minutes.
  • Drain and rinse in cold water then put in the blender with the water. This boiling and draining process not only softens the apricots but removes some of the sulphur in which they have been preserved.
  • Blend until smooth and add the blended apricots to a pan with the sugar and carrots.
  • Bring to the boil and simmer for 20minutes or until setting point is almost reached. (you can test this by putting a spoonful onto an ice cube or cold saucer, if it jellifies, it is done)
  • Meanwhile, soak goji berries in the orange and lemon juice. Towards the end of cooking time add the goji berries and the juice.
  • Bring back to the boil and skim off any scum that forms on the surface. Add the butter and boil for just a few more minutes.
  • Do not pot the jam until it is almost cool to allow for even distribution of the carrot and berries (see canning notes, follow the link on the home page of this site) or store in the fridge for upto 1 month.
