I love this soup!! Very different flavors that I think work well together. If you have a bent for the unusual, you may want to give it a try.

1 tablespoon canola oil
1 large onion, thinly sliced
6 cups thinly sliced carrots
1 stalk celery, thinly sliced
1 teaspoon salt
1 teaspoon chinese chili paste
6 cups water
2 tablespoons peanut butter
3 tablespoons soy sauce
2 tablespoons fresh lime juice

Steps:

  • In a large pot, heat the oil over medium heat.
  • Add the onions, carrots, celery, salt, and chili paste.
  • Stirring frequently, saute the vegetables over high heat for 5 minutes.
  • Add in the water, cover the pot, and bring to a boil.
  • Lower the heat and simmer for 25 minutes or until the carrots are soft.
  • Add in the peanut butter, soy sauce, and lime juice; stir to combine.
  • Puree the soup in batches using an electric blender.
  • Reheat soup if necessary and serve hot.

This is a recipe from the Simply Delicious column in Parade Magazine (2006). For optional garnishes, try a 1/4 cup of creme fraiche and/or snipped fresh chives.

1 1/2 lbs carrots, peeled & halved lengthwise
1 lb parsnip, peeled & quartered lengthwise
1 large onion, sliced
3 inches piece fresh ginger, peeled & chopped
6 tablespoons unsalted butter
3 tablespoons dark brown sugar (packed)
8 cups rich chicken broth (more, if necessary)
salt, to taste
1 pinch cayenne pepper

Steps:

  • Preheat oven to 350 degrees.
  • Combine carrots, parsnips, onion & ginger in a shallow roasting pan to fit. Dot with the butter and sprinkle with the brown sugar.
  • Pour 2 cups of chicken broth into the pan, cover well & bake until vegetables are very tender (approx. 2 hours).
  • Transfer the vegetables and broth to a large pot.
  • Add the remaining 6 cups of chicken broth, the salt & cayenne pepper.
  • Bring to a boil, reduce the heat and simmer, partially covered, for 10 minutes.
  • Puree the soup in batches in a blender or food processor, adding more broth if necessary. Return the soup to the pot.
  • Adjust the seasonings and heat through.
  • Serve each portion dolloped with a teaspoon of creme fraiche and/or chopped chives (OPTIONAL).

¾ stick unsalted butter
1 large yellow onion, chopped
½ cup chopped fresh ginger
5 cloves garlic, minced
7 cups low-sodium chicken broth
1 ½ pounds carrots, peeled and cut into 1/2-inch pieces
1 cup dry white wine
2 tablespoons fresh lemon juice
1 teaspoon salt
1 teaspoon freshly ground black pepper, or more to taste
⅛ teaspoon curry powder
1 tablespoon snipped fresh chives, or to taste

Steps:

  • Melt butter in a large pot over medium heat. Add onion, ginger, and garlic; saute until softened, 15 to 20 minutes. Add broth, carrots, and wine. Bring to a boil. Reduce heat to medium and simmer, uncovered, until carrots are tender, about 45 minutes.

Only 5 ingredients! Roasting the carrots brings out their magical nuances; ginger adds a nice little kick. A quick puree in the blender and a finish of cream or coconut milk seals the deal.

6 cups baby carrots or approx. 6 large or 12 small-medium carrots, peeled and cut into 2-inch pieces (about 1-1/2 pounds of carrots)
2 tablespoons olive oil (divided)
1 medium yellow onion (diced (about 2 cups)
1/2 teaspoon kosher salt + more to taste
1/4 teaspoon freshly ground black pepper + more to taste
1 thumb-sized piece of fresh ginger (peeled and minced (about 2 tablespoons)
4 cups low-sodium vegetable broth
1/2 cup heavy whipping cream (or, for a vegan version, use full-fat canned coconut milk)

Steps:

  • Preheat oven to 400 degrees Fahrenheit.
  • Place carrots in a large bowl and drizzle one tablespoon of the olive oil over the top. Toss to coat and add 1/2 teaspoon salt and 1/4 teaspoon pepper. Toss again. Spread in a single layer on a rimmed cookie sheet and bake, stirring/flipping every 15 minutes or so, until tender and browned in spots, about 40 minutes total. Remove from oven and let cool a bit.
  • While the carrots are cooking, heat the remaining tablespoon of olive oil in a large soup pot over medium-low heat. Add the onions and cook until just beginning to brown, about 8 - 10 minutes. Add the ginger and the vegetable broth and bring to a boil. Reduce heat, cover, and let simmer for five minutes until ginger is tender. Remove from heat.
  • When both the roasted carrots and the broth have cooled somewhat, add the carrots to the broth. Working with a blender in batches, puree the soup and return it to the pot; or use an immersion blender directly in the pot. Please make sure your soup has cooled enough to safely puree!
  • Place pureed soup over medium heat and return to a simmer. Reduce heat to low and stir in the heavy whipping cream or coconut milk. Taste and add additional salt and pepper if desired. Serve.

Chile butter:
1/4 cup (1/2 stick) unsalted butter, room temperature
2 tablespoons finely chopped green onions (white and green parts only)
1/4 teaspoon dried crushed red pepper
Soup:
2 tablespoons (1/4 stick) butter
1 1/2 pounds carrots, peeled, cut into 1/4-inch-thick rounds
1 1/4 cups chopped onion
1 5-ounce white-skinned potato, peeled, chopped
2 1/2 tablespoons minced peeled fresh ginger
5 cups (or more) vegetable broth or chicken broth
6 tablespoons unsalted roasted peanuts, finely chopped

Steps:

  • For chile butter:
  • Mix all ingredients in small bowl. Cover and chill. Bring to room temperature before using.
  • For soup:
  • Melt 2 tablespoons butter in large pot over medium-high heat. Add carrots, onion, potato, and ginger; sprinkle with salt and sauté until vegetables are slightly softened but not brown, stirring often, about 10 minutes. Add 5 cups broth; bring to boil. Reduce heat and simmer until vegetables are soft, about 20 minutes. Cool slightly, then puree in batches in blender until smooth. Return soup to same pot; if desired, add more broth by 1/4 cupfuls to thin soup. Bring to simmer. Season with salt and black pepper.
  • Ladle soup into bowls. Top with small spoonful of chile butter; sprinkle with nuts.
