CARROT FINGERS AND RANCH DRESSING

Steps:
- Place a bit of cream cheese on the end of a baby carrot and place an almond slice face down on top. The almond should look like a fingernail on the carrot "finger". Repeat until all carrots are finished.
- Pour dressing in a bowl and stand a few carrot fingers upright in the bowl. Place the bowl on a platter and lay the remaining carrot fingers around the bowl.

Steps:
- Place carrots in a saucepan; add 1 in. of water. Bring to a boil. Reduce heat; cover and cook for 8-10 minutes or until crisp-tender. Drain and set aside. , In the same pan, combine the butter, brown sugar and salad dressing mix until blended. Add carrots. Cook and stir over medium heat for 5 minutes or until glazed. Sprinkle with parsley, if desired.

- Toss carrots in a bag with olive oil.
- Next toss carrots in a bag with dressing mix.
- Pour onto a baking sheet and roast at 400 F for 10 minutes, stir, then roast for ten minutes more.
