CURRIED CARROT AND COCONUT SOUP

There's a nice challenge in staring into a less than sufficiently stocked refrigerator. Last night we were down to not much more than carrots. Thus: them, an onion, grated ginger, a sort of curry mix. There was stock in the freezer, a can of coconut milk. A lime. Wish I'd had cilantro, but hey, it worked.

3 tablespoons butter
1/2 medium onion, roughly chopped
3/4 pound carrots, peeled and cut into 1/2-inch coins
1 teaspoon peeled, grated fresh ginger
1/2 teaspoon ground cumin, to taste
1/2 teaspoon ground tumeric, to taste
1/2 teaspoon ground coriander, to taste
Pinch of cayenne pepper
2 cups chicken or vegetable stock
1 cup unsweetened coconut milk
Juice from ½ lime
Salt and freshly ground pepper
Cilantro, if you have it

Steps:

  • Heat the butter until the foam subsides. Add the diced chopped onions, sprinkle with salt, stir to coat with butter. Add the chopped carrots along with the spices. Stir and cook until softened, about 10 minutes.
  • Add the stock; there should be enough to cover the vegetables. Bring the pot to a boil over high heat. Reduce the heat to medium and continue cooking until the carrots are cooked through, about 10 to 15 minutes.
  • If you have an immersion blender, purée the soup in the pot. If not, wait until the soup cools slightly, and purée in a food processor. Add enough coconut milk (and a little more stock or water if necessary) to bring the soup to the consistency you want. Adjust the seasoning (depending on the stock you use, you may need more or less salt), and lime juice to taste. Garnish and serve.

1 pound carrots, peeled, chopped

Ingredient info: Thai-style chili sauce is available at Asian markets and in the Asian foods section of some supermarkets.

Steps:

  • Melt butter in a large saucepan over medium-high heat. Add carrots and onion, season with salt and pepper, and cook, stirring often, until carrots are softened, 15-20 minutes. Stir in broth, coconut milk, and 2 tablespoons chili sauce. Bring to a boil, reduce heat, and simmer, stirring occasionally, until vegetables are very soft and liquid is slightly reduced, 40-45 minutes.
  • Let soup cool slightly, then purée in a blender until smooth. Reheat in a clean saucepan, thinning with water to desired consistency; season with salt and pepper.
  • Divide soup among bowls, drizzle with chili sauce, and top with cilantro.
  • DO AHEAD: Soup can be made 3 days ahead. Let cool; cover and chill.

2 1/2 cups low-salt chicken broth

Steps:

  • In a large heavy saucepan cook chopped scallion, onion, and gingerroot in butter with curry powder and salt and pepper to taste over moderately low heat until softened and add carrots and broth. Simmer mixture, covered, 20 minutes, or until carrots are very soft.
  • In a blender purée mixture in batches with coconut milk until very smooth, transferring as puréed to a bowl. Stir in 1 tablespoon lime juice and chill soup at least 6 hour or overnight.
  • Thin soup with ice water and season with additional lime juice and salt and pepper.
  • Garnish soup with trimmed scallions.

Creamy and rich, this soup can be made vegan with vegetable stock/water or with chicken broth. Perfect for entertaining or a casual family gathering, both versions are quite delicious and great to serve if you have different types of eaters in your family. This soup was inspired by a soup I had in Yosemite at Tenaya Lodge on Mother's Day, and it was so tasty that I came home and immediately designed a recipe that captured the creamy rich and light soup I had at that wonderful restaurant. Using baby carrots helps tp keep the soup sweet and avoid any bitter undertones.

2 (16 ounce) bags baby carrots
2 inches fresh grated ginger (~2 T) or 1 tablespoon store bought pureed ginger paste
2 tablespoons butter or 2 tablespoons olive oil
1/2 large onion, finely chopped
2 shallots, finely chopped
1 -2 cloves smashed and chopped garlic
2 teaspoons tomato paste
1 1/2 quarts chicken stock or 1 1/2 quarts vegetable stock
3 (12 ounce) cans thai style coconut cream (the top solidified part of the coconut milk that forms when the can is undisturbed)
1 teaspoon lemon juice
1 teaspoon salt
1 teaspoon pepper

Steps:

  • Saute Onions and shallots for 2 minutes in butter or olive oil on medium heat. Add grated ginger and finely chopped garlic and saute on low for an additional 2 minutes or until translucent. Do not brown garlic. Chop baby carrots into thirds and add to the onion mixture along with the tomato paste, mix well. Saute 1 - 2 minute on low, and then degalze pan with chicken or vegetable stock. Bring to a simmer and cook on Medium high to reduce liquids by about a third by cooking for 25 minutes. Do not overcook, or soup will not have a bright orange color. Carrots should be fork tender. Transfer to a bowl and use an immersion blender or a regular stand blender and blend thoroughly. Soup should be thick. Add 3 cans of coconut cream (the top part of the cocnut milk can that is solified).
  • Conitinue to reduce to desired thickness. Adjust salt and pepper to taste. Add 1 t lemon juice.
  • Serve hot with sprinkled parsley on top.

1 onion, roughly chopped
2 celery sticks, roughly chopped
1 large garlic clove, crushed

1 tsp cumin seeds
1 tsp garam masala
1 tsp chilli flakes, plus extra to serve
500g carrots, thinly sliced
150g red lentils
200g coconut milk
950ml low-salt vegetable stock
10 curry leaves
bunch of coriander, leaves picked
fat-free natural yogurt, to serve

Steps:

  • Heat the rapeseed oil in a large saucepan or flameproof casserole over a medium heat. Cook the onion and celery with a pinch of salt for 8-10 mins until softened. Add the garlic, ginger and all the spices and cook for 1 min more. Stir in the carrots, lentils, coconut milk, stock and curry leaves. Bring to a simmer, then cover with a lid and cook gently for 30 mins.
  • Taste the soup for seasoning, then add most of the fresh coriander and blitz until smooth using a hand blender. Ladle the soup into bowls, then top with swirls of yogurt, the remaining coriander, some extra chilli flakes and a drizzle of oil to serve.

1 onion, chopped
1 pinch salt
10 carrots, peeled, chopped
2 potatoes, peeled, chopped

4 cups vegetable stock (even 3 cups water plus one cup chicken stock) or 4 cups use water (even 3 cups water plus one cup chicken stock)
1/2 cup coconut milk
1 orange, juice of
2 limes, cut into wedges

Steps:

  • Melt butter in heavy bottomed saucepan. Tip in the onion with a pinch of salt. Cook gently on low heat for about 5 minutes to soften without browning.

Steps:

  • 1.Preheat oven to 400 degrees F. Cut squash in half lengthwise; remove seeds. Arrange squash halves, cut sides down, in a foil-lined shallow baking pan. Bake, uncovered, 40 minutes or until tender. Scoop flesh from squash; discard skin. 2.In a large saucepan melt butter over medium heat. Add carrot, onion, and ginger. Cook and stir for 3 to 4 minutes or until tender. Add squash flesh, coconut milk, water, and salt. Bring to boiling; reduce heat. 1 medium yellow onion, chopped
2 cloves garlic, minced
1/2 teaspoon curry powder
1/2 teaspoon ground cumin
1/4 teaspoon ground ginger
1 1/2 pounds carrots, coarsely chopped
1 (15-ounce) can no-salt-added garbanzo beans, rinsed and drained
4 cups low-sodium vegetable broth
1/2 cup canned light coconut milk
3/4 teaspoon fine sea salt

Steps:

  • In a large saucepot, heat coconut oil over medium heat until melted. Add onion and garlic and cook about 5 minutes or until tender, stirring occasionally. Stir in curry powder, cumin and ginger and cook 1 minute. Stir in carrots, beans, broth and 1 cup water and bring to a boil over medium-high heat. 1 tablespoon olive oil
2 onions, finely chopped
4 garlic cloves, minced
2 teaspoons turmeric
2 teaspoons cumin seeds
1 teaspoon salt
1/2 teaspoon cracked black peppercorns
1 (28 ounce) can tomatoes, including juice
2 large carrots, peeled
1 tablespoon fresh lemon juice
6 cups vegetable broth or 6 cups chicken broth
1 (14 ounce) can light coconut milk
1 -4 teaspoon of your favorite hot sauce
1/2 cup finely chopped cilantro (to garnish)

Steps:

  • 1In a large skillet cook onions in the olive oil until soft. 2Add garlic, turmeric, cumin seeds, salt and pepper; cook, stirring for 1 minute. 3Add tomatoes and bring to a boil, breaking them up as you stir. 4Add carrots, lentils, lemon juice and broth. 5Spoon mixture into slow cooker; cover and cook on high for 4-5 hours, or low for 8-10 hours. 6Stir in coconut milk and continue cooking on high for 20 minutes, until heated through. 7Serve topped with fresh cilantro and several dashes of your favorite hot sauce.

4 large carrots, peeled and chopped
1/2 onion, chopped
2 jalepeno peppers, seeded and chopped
1 1" cube gingeroot, chopped
1 15 oz can pumpkin puree
1 15 oz can lite unsweetened coconut milk
4 cups chicken broth
4 tbsp Thai chili or red curry paste
4 tbsp chopped fresh ciliantro
juice of 1 lime

Steps:

  • In a 4 quart saucepan, bring chicken broth, carrot, onion, gingeroot, jalepeno and pumpkin to a boil. Cover and simmer for 40 - 50 minutes until carrots are very tender. Remove from heat and stir in coconut milk and chili paste. With an hand held or regular blender, blend soup to a smooth velvety texture and return to pan. Add cilantro and lime juice, bring back to a simmer, check for salt and serve.

6 carrots
4 parsnips
2 sticks of celery
3 cups of boiling water
3 tablespoons of coconut milk
1 knob of ginger, about an inch long
1 tablespoon of apple cider vinegar
a sprinkling of chilli flakes
1 teaspoon of paprika
salt & pepper to taste
Optional:
4 portobello mushrooms
a large handful of pumpkin seeds

Steps:

  • Start by peeling the carrots and parsnips, then chop them and the celery into small-ish slices. Place the veggies into a sauce pan with the peeled ginger, paprika, chilli flakes, salt & pepper. Add the boiling water to the pan and then allow it to simmer for about 20 minutes. Once the veggies are cooked transfer them and their water into a blender with the coconut milk and apple cider vinegar. Blend until creamy - you may want to add more water at this point depending on how you like your soup. While it blends chop the mushrooms in half, then thinly slice them. Sauté them in a frying pan with olive oil, dried mixed herbs, chilli flakes and salt, adding in the pumpkin seeds as they begin to brown. The pour your soup into bowls and place the mushroom seed mix on top - you can add a swirl of coconut milk too if you're feeling fancy! Enjoy!
