SWISS ALMOND CARROT CAKE (AARGAUER RUEBLITORTE)

This dairy-free carrot cake is a classic Swiss cake that is traditionally decorated with marzipan carrots, but you can of course omit them.

1 teaspoon butter
4 eggs, separated
1 cup white sugar
2 ¼ cups peeled and grated carrots
2 ¼ cups ground almonds
1 lemon, zested and juiced
½ cup all-purpose flour
1 teaspoon baking powder
1 pinch salt
5 ounces marzipan
1 drop green gel food coloring, or as needed
1 drop orange gel food coloring, or as needed
1 cup confectioners' sugar
1 tablespoon fresh lemon juice, or more to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9-inch springform pan.
  • Beat egg yolks and sugar together in a large bowl with an electric mixer until fluffy. Beat in carrots, almonds, lemon juice, and lemon zest.
  • Mix flour, baking powder, and salt together in a bowl and add to the batter. Stir well to combine.
  • Beat egg whites in a glass, metal, or ceramic bowl until stiff peaks form. Fold into the cake batter with a spatula. Pour batter into the prepared springform pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 40 to 50 minutes. Cool on a wire rack for 5 minutes. Run a table knife around the edges to loosen. Remove carefully and place on a serving plate or cooling rack. Let cool, about 30 minutes.
  • Knead marzipan until soft and pliable. Pinch off 1/5 and add a little green food coloring using a toothpick. Knead until marzipan is uniformly green. Color the remaining marzipan orange using the same method. Shape orange marzipan into 12 little carrots and make tiny indentations on top with a paring knife. Shape the green marzipan into little leaves. Stick 2 leaves to the top of each carrot with a little water.
  • Combine confectioners' sugar and enough lemon juice to make a thick icing. Coat cake with the icing. Place marzipan carrots on top around the edges in such a way that each piece of cake has a marzipan carrot. Let icing dry before slicing and serving.

1/2 cup light brown sugar, firmly packed
9 ounces carrots, finely grated (1 1/2 cups)
1 teaspoon vanilla (optional)
1/4 teaspoon salt
1/2 cup sugar
1 cup toasted almond, finely ground
3 tablespoons matzo cake meal
1/2 teaspoon cinnamon

Steps:

  • Preheat oven to 350°F Grease bottom of 8" springform pan; dust with cake meal, shaking off excess.
  • Using electric mixer, beat yolks and brown sugar in large bowl until slowly dissolving ribbon forms when beaters are lifted, about 5 minutes.
  • Stir in carrots and vanilla.
  • Using clean, dry beaters, beat whites with salt until soft peaks form.
  • Gradually add sugar and beat until whites are stiff but not dry. Gently fold in yolk mixture.
  • Combine almonds, 3 tablespoons cake meal and cinnamon.
  • Fold gently into egg mixture.
  • Turn into prepared pan, smoothing top.
  • Bake until tester inserted in center comes out clean, about 1 hour. Immediately run knife around edge.
  • Cool completely in pan onrack.
  • Remove springform before serving.

2 tablespoons matzoh meal
6 eggs, separated
2/3 cup plus 1 tablespoon sugar
1/3 cup honey
1 tablespoon lemon juice
2 cups finely grated carrots
1 1/2 cups finely ground almonds
1/2 cup Passover cake meal
Pinch of salt
1 teaspoon cinnamon

Steps:

  • Preheat oven to 350. Heavily oil an eight-cup tube pan or bundt pan. Dust with matzoh meal.
  • Beat egg yolks until thick. Add two-thirds cup sugar and continue beating until pale yellow and very creamy. Beat in the honey. Stir in the lemon juice.
  • Fold in the carrots and almonds.
  • Mix cake meal with salt and cinnamon and mix into batter until just combined.
  • Beat egg whites until they hold peaks but are not dry. Gently fold beaten egg whites into the batter. Transfer batter to the baking pan and bake 1 hour and 15 minutes, until nicely browned and springy to the touch.
  • Place on a rack and allow to cool completely in the pan. Run a knife or a thin spatula around the edges to loosen the cake, then invert onto a serving plate. Dust with a tablespoon of granulated sugar before serving.

2 teaspoons baking soda
2 teaspoons ground cinnamon
1 teaspoon baking powder

4 large eggs
1 cup vegetable oil
1 cup sugar
1 cup (packed) golden brown sugar
2 1/2 cups finely grated peeled carrots (about 1 pound)
1 8-ounce can crushed pineapple in syrup, drained
2 tablespoons brandy
2 teaspoons vanilla extract
2 teaspoons grated orange peel

Steps:

  • Preheat oven to 350°F. Butter and flour 12-cup Bundt pan. Whisk flour, baking soda, cinnamon, baking powder and salt in medium bowl to blend. Whisk eggs, oil and both sugars in large bowl to blend. Mix carrots, pineapple, brandy, vanilla and orange peel into egg mixture, then mix in almonds and currants. Add dry ingredients and stir just to blend. Transfer batter to prepared pan.
  • Bake cake until tester inserted near center comes out clean, about 1 hour. Cool in pan on rack 15 minutes. Turn cake out onto rack; cool completely.
  • Stir marmalade in heavy small saucepan over low heat until melted. Brush warm marmalade over cake. (Can be made 1 day ahead. Cover with cake dome and store at room temperature.) Serve cake with Brandied Whipped Cream.

½ tsp salt
1 tsp cinnamon
1 c sugar
1 c oil or 1 c (2 sticks) butter
2 eggs
1 c finely grated carrots
½ c chopped almonds
½ c raisins
2 ⅔ c coconut flakes
Cream cheese frosting

Steps:

  • Preheat oven to 350F. Mix flour, baking powder, salt and cinnamon. Cream sugar and oil. Stir in flour mixture. Add eggs one at a time. Stir in carrots, nuts, raisins, and ⅔ cup of the coconut. Pour into prepared cake pans. Bake 35 minutes. Cool in pans 15 minutes. Remove from pans and cool on rack. Frost with cream cheese frosting and cover with remaining coconut.

200g (7 oz) ground almonds
100g (3 1/2 oz) desiccated coconut (dried, unsweetened)
2 teaspoons ground cinnamon
150g (5 1/2 oz)unsalted butter, melted
2 large carrots, coarsely grated
100g (3 1/2 oz) shelled pistachio nuts, roughly chopped
confectioner’s sugar for dusting

Steps:

  • Preheat the oven to 160C/fan 140C/gas mark 3 (320° F). Line a 23cm (9-inch) springform cake pan with enough parchment paper to cover the base and sides. The oils from the nuts and butter in the batter prevent the cake from sticking, so no need to butter or oil paper or pan. Beat the eggs, sugar and vanilla extract in a mixing bowl. Add the ground almonds, coconut and cinnamon and stir, then add the butter and mix the ingredients thoroughly. Add the grated carrots and pistachios and mix again until the ingredients are evenly blended, then gently pour or spoon the batter into your prepared cake pan and bake for 1 hour, or until it feels firm to touch and a crust forms on top. Check at 40 minutes to ensure it is cooking evenly. Once cooked, allow to cool in the pan before serving. The cake keeps well for a few days. Serves 10ish. (Because this cake is mostly nuts and coconut, it is a bit heavy—you’ll want to serve small slices.)

I took a cooking class recently from Marcella Hazan's son, Giuliano Hazan. This was the dessert we made in class. It's the best carrot cake I've ever had and contains no flour. It keeps well in the refrigerator for a week!

9 ounces shelled unblanched almonds
1 cup granulated sugar
2 tablespoons granulated sugar
9 ounces carrots, peeled
4 ounces dry ladyfingers
2 1/2 teaspoons baking powder
1 tablespoon amaretto liqueur
1 pinch salt
4 large eggs, separated
2 teaspoons butter, for greasing the pan
1 tablespoon flour, for dusting the pan
1 cup heavy cream, whipped with 1 teaspoon of sugar

Steps:

  • Preheat oven to 350 degrees.
  • Put the almonds and sugar in a food processor and chop as finely as possible. Transfer to a large mixing bowl. Break up the ladyfingers into pieces, about an inch long, place them in the food processor and grind to a powder. Add to the almonds and sugar in the mixing bowl. Cut the carrots into pieces about an inch long, and chop in the food processor as finely as possible. Add to the bowl, mixing them well with the other ingredients.
  • Add the baking powder, salt, and the Amaretto liqueur and mix well. Add the egg yolks, mixing them in until they are well distributed with the other ingredients.
  • Whip the egg whites with an electric mixer or by hand until they form stiff peaks. Take a couple of tablespoons of the beaten egg whites and mix them with the ingredients in the bowl to soften the mixture a bit. Pour the rest of the egg whites onto the mixture and carefully fold them in with a rubber spatula.
  • Grease the bottom and sides of a 10 inch springform pan with the butter and dust it with flour. Pour the batter into the pan, then shake the pan a bit until the batter is evenly distributed.
  • Place the pan in the upper level of the preheated oven and bake for 50-60 minutes, or until a toothpick comes out dry when inserted into the cake.
  • When the cake is cool, cut it into 8 to 12 pieces and serve with a dollop of whipped cream.

1/2 cup spelt flour
1 1/2 teaspoons Atlantic sea salt
1 teaspoon baking soda
1 big heap of a tablespoon of freshly grounded cinnamon
5-8 drops of stevia
250 g unsalted butter, softened butter / or ¼ cup coconut oil
3 1/2 cups carrots, grated
1 cup golden raisins
1 cup walnuts
2 tablespoons of brown sugar with molasses
5 large free-range eggs
zest and juice of 1 orange
1 pinch of freshly ground cloves
1 freshly ground nutmeg
½ teaspoon of freshly grated ginger

Steps:

  • Preheat the oven to 180ºC/350ºF. Grease and line a 22cm-square cake tin, or a round equivalent with greaseproof paper, or put paper cups into muffin tray, or grease the muffin tray Beat the butter and sugar together by hand or in a food processor until pale and fluffy. Beat in the egg yolks one by one, and add the orange zest and juice. Stir in the flour and baking powder, and add the walnuts, spices and grated carrot and mix together well. Spoon it into the cupcake tray or pour into cake tray. Put into oven and let it bake slowly so that it has time to cook on the inside before it browns on the outside too soon. In my lame oven, it took about an hour to bake, so check on occasion with a toothpick to see how well done the center is. If it's not ready, the toothpick will come out with cake bits on it. As soon as the cake baked and golden on the outside, take it out and cover it. I put the the cupcakes into a box so they stay moist. If they get a little dry, you can always spoil yourself and reheat them in the micro or toaster and add real Grade A or B maple syrup. Yummmm!

Unsalted butter and flour for pan
2 cups whole unpeeled almonds
1/2 cup crushed amaretti cookies
2 teaspoons baking powder
4 eggs, separated
1/4 cup sugar
Grated zest of 1 lemon
Few drops almond extract
1/2 cups carrots (about 5 medium), peeled and coarsely grated
Confectioners' sugar for dusting

Steps:

  • Preheat oven to 350 degrees. Butter and flour a 9-inch springform pan. Finely grind the almonds in a nut grinder, coffee grinder or blender.
  • In a large mixing bowl, stir together the ground almonds, amaretti and baking powder. In another bowl, beat the egg yolks with the sugar until pale yellow and creamy, and then stir in the lemon zest and almond extract. Add yolk mixture to the almond mixture, along with the grated carrots, and stir just until combined.
  • In a large, clean mixing bowl, beat the egg whites until stiff and gently fold them into the egg mixture. Pour into the prepared pan, and bake on the middle level of the oven for 50 to 60 minutes, or until a skewer inserted into the center comes out clean. Remove from oven and let cool on a rack.
  • Run a knife around the sides of the pan, release and transfer cake to a dish. Dust with confectioners' sugar, and serve at room temperature. (It keeps well at room temperature, wrapped in aluminum foil.)
