Gussy up your yellow cake with this ricotta variation.

1 (18.25 ounce) package yellow cake mix
2 pounds ricotta cheese
¾ cup white sugar
4 eggs
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan. Prepare the cake according to the directions on the package.
  • In a medium bowl, combine ricotta, sugar, eggs and vanilla. Mix until smooth. Drop by spoonfuls on top of uncooked cake.
  • Bake at 350 degrees F (175 degrees C) for 1 1/2 hours, or until a toothpick inserted into the cake comes out clean. Sprinkle cooled cake with confectioners sugar. Keep refrigerated.

Got this delish recipe from my sister along time ago. I had it at her cook-out and had to have the recipe. Is easy to make and very good. Something different to make.

1 pkg duncan hines yellow pudding cake mix, make per pkg. directions
1 large container of ricotta
add to ricotta
4 eggs
1 1/2 tsp lemon (either fresh or juice)
1 tsp vanilla
1 c sugar

Steps:

  • 1. Heat oven to 350 degrees. Make cake mix according to directions. Pour into a greased 13 x 9" pan. Then mix ricotta with the eggs, lemon, vanilla and sugar and pour mixture over the cake.
  • 2. Bake for 1 hour at 350 degrees.
