CHILE CON CARNE ROJO, SONORAN STYLE

Chile Con Carne Rojo, Sonoran Style image

This recipe came to me in a cookbook published as a fund-raiser by the faculty of the school where I taught. I've used it for thirty years or so, making so many changes along the way that it is now truly "my" recipe. Enjoy!

Categories     Meat

Time 1h30m

Yield 24 serving(s)

Number Of Ingredients 10

6 lbs beef roast (I find it's usually cheaper to buy a roast and cut it up myself) or 6 lbs stewing beef (I find it's usually cheaper to buy a roast and cut it up myself)
16 ounces red chili paste (sold in Arizona by Santa Cruz Chile, or you can make your own like this one Hatch Red Chili Sauce)
4 -6 bay leaves
1 medium onion, chopped
ground pepper
1 cup flour
1 cup shortening
1/4 teaspoon garlic powder (or fresh minced garlic, to taste)
1 -2 teaspoon dried oregano (to taste)
1/4-1/2 teaspoon ground cumin

Steps:

  • Put the cut-up beef in a dutch oven or similar large kettle, cover with water and boil with salt, pepper, garlic, onion, and 3-4 bay leaves. Boil until meat is tender.
  • Remove bay leaves and throw them away. Remove the meat.
  • Pour the liquid into another container. (I use a good-sized plastic pitcher.).
  • Stir the chili paste into the liquid. ( Or use 8 ounces of the paste and 8 ounces of made-from-scratch chile sauce. Or if you have an asbestos tongue, skip the commercial stuff entirely!).
  • Melt shortening in the bottom of the kettle. Add flour and cook until brown, stirring almost constantly.
  • Add 10 cups or so of the beef stock/chile mixture gradually, while stirring. (It's like making gravy.).
  • Reduce heat and add oregano, cumin, more garlic, and salt to taste.
  • Stir in the meat.
  • DO NOT add tomatoes, tomato sauce, tomato paste, stewed tomatoes, or any other tomato product!
  • Serve with flour tortillas and refried beans. Or make your own burros and serve it that way. Left overs (if any) freeze well.

CARNE CON CHILE ROJO (CHUCK BRAISED IN CHILE)

Carne con Chile Rojo (Chuck Braised in Chile) image

Claudia Serrato's work studying the history of indigenous Mexican foodways informs her annual holiday tamaladas, where family and friends in her community gather to fill tamales with cacao, vegetables, flowers or bison braised in red chile. The meat is first braised until very tender, then dressed in a purée of smoky chiles and garlic, before it's stuffed into fresh masa. Ms. Serrato makes her own nixtamal with blue corn, soaking it with cal and grinding it in her outdoor kitchen, though you can buy fresh masa or hydrate freshly ground nixtamal if you prefer.

Provided by Tejal Rao

Time 4h30m

Yield Serves 4 to 6 (about 4 cups)

Number Of Ingredients 17

2 tablespoons maple or raw sugar
1 tablespoon coarse sea salt
2 pounds boneless bison or beef chuck roast
1/4 cup olive oil
4 cups vegetable broth
2 ripe tomatoes
1/2 medium white onion
10 dried California or New Mexico chiles (2 1/2 ounces)
2 fresh sage sprigs
2 fresh or dried bay leaves
1/2 cup pure maple syrup
10 dried guajillo chiles, stemmed
4 dried chiles de árbol, stemmed
2 garlic cloves, peeled
1/4 medium white onion
1 teaspoon coarse sea salt, plus more to taste
2 tablespoons olive oil

Steps:

  • To make the bison: Heat oven to 275 degrees.
  • Sprinkle the sugar and salt all over the roast. Heat the oil in a large Dutch oven over high heat. Add the roast and sear until dark brown on all sides, 7 to 10 minutes. Transfer to a plate and reduce the heat to medium. Carefully add 1 cup broth (the hot fat will spatter) and scrape up all the browned bits from the pan. Return the roast and any accumulated juices to the Dutch oven and add the tomatoes, onion, chiles, sage, bay leaves, syrup and remaining 3 cups broth. Bring to a boil, then cover and transfer to the center of the oven.
  • Braise until the meat is very tender, about 3 1/2 hours. A fork should slide through easily. Uncover and cool for 15 minutes, then transfer the roast to a large bowl. Finely shred the meat using your hands if cool enough to handle or with two forks. Strain the cooking liquid and reserve.
  • To make the chile rojo: Bring a medium saucepan of water to a boil. Add all of the dried chiles, reduce the heat to medium, and simmer steadily until softened and lighter in color, about 10 minutes. Transfer the chiles to a blender, along with the garlic, onion, salt and 2 cups of the braising liquid. Save any remaining braising liquid for another use (see Tip). Blend until very smooth.
  • Heat the oil in a large, deep skillet over high heat until shimmering. Carefully add the chile sauce (it will splatter) and immediately reduce the heat to medium. Simmer, stirring often, until thickened and brick red, 8 to 10 minutes. Add the shredded meat and any accumulated juices and stir to evenly coat. Reduce the heat to low and simmer for 10 minutes. Season to taste with salt. Serve immediately or cool to room temperature to use as a filling for tamales. The sauced braised meat can be refrigerated for up to 5 days or frozen for up to 3 months.

RED CHILE CON CARNE

Red Chile Con Carne image

This recipe produces the most FLAVORFUL red chile con carne that rivals any Mexican restaurant. Since it's made in the crockpot and uses prepared store-bought chili paste, it's super simple and foolproof! (Finding the chile paste is half the battle...I use a prepared chili paste that is found in the freezer section of most Arizona grocery stores, but it may not be available nationwide [I've had trouble finding it online]. If you can't find it at your grocery store, you're better off trying to make your own with dried New Mexico chile pods softened in hot water and processed till smooth [no salt or anything else should be added]...there are instructions everywhere online. Enchilada sauce is NOT a recommended substitution as it has flavorings and salt added. You just want pure chile paste.) Yield amount is approximate.

CHILE CON CARNE WITH RED BEANS

Chile Con Carne With Red Beans image

We LOVE this chili! Notice that the beans and beef are cooked together for an hour before the onions, scallions, garlic, jalapeño, and an assortment of herbs and spices are added; then the mixture is cooked for another hour. This gives the dish a fresher flavor than adding all the seasoning ingredients at the beginning. Spoon this soupy chili over boiled rice, with a salad of Romaine and a creamy yogurt dressing for a refreshing complimentary taste.

Categories     One Dish Meal

Time 2h40m

Yield 4-6 serving(s)

Number Of Ingredients 16

8 ounces dried red kidney beans
8 ounces extra lean ground beef (10-percent fat or less)
1 1/2 teaspoons salt
4 cups cold water
2 small onions, peeled and cut into 1-inch pieces (or 1 medium onion, 4 ounces)
6 scallions, trimmed, keeping most of the green, and cut into 1/2-inch pieces (1 cup)
5 -6 garlic cloves, peeled, crushed, and chopped (1 tablespoon)
1 jalapeno pepper, seeded and chopped (2 teaspoons)
1 (14 ounce) can tomatoes, in sauce
1/2 teaspoon dried thyme leaves
1 teaspoon ground cumin
1 1/2 tablespoons chili powder
2 bay leaves
1/3 cup finely chopped cilantro stems
boiled rice
1/3 cup loose coarsely chopped cilantro leaf

Steps:

  • Sort through the beans, removing and discarding any damaged ones, and rinse in a sieve under cold water. Place the beans, beef, salt, and water in a stockpot, and bring the mixture to a boil over high heat. (This will take about 10 minutes.) Reduce the heat to low, cover, and boil gently for 1 hour.
  • Add the onions, scallions, garlic, jalapeño, tomatoes (with sauce), thyme, cumin, chili powder, bay leaves, and cilantro stems. Bring the mixture to a boil over high heat, reduce the heat to low, cover, and boil gently for an hour. (The mixture will still be somewhat soupy).
  • To serve, spoon the chili over the rice, and sprinkle the cilantro leaves on top.

Chile Con Carne (Canning) image

I personally have not canned this one yet, but expect to soon. I'm posting by request, this recipe is from the USDA Complete Guide To Home Canning & Preserving. Be sure to measure ingredients exactly, but extra salt (or less salt), pepper or chili powder will not adversely affect canning results. Prep time does not include soaking time for beans, cooking time does not include time to get up to pressure.

CHILE CON CARNE (AKA CHILI COLORADO)

Chile con Carne (AKA Chili Colorado) image

My grandmother's grandmother taught her this wonderful recipe. It had been handed down from generations. My family had immigrated from Spain to Mexico then to America. Just a wonderful family recipe with rich historical value... (My great great grandfather was one of the 1st Silver Dons to settle in San Diego, Ca!) Cooking...

Provided by Melissa Baldan

Categories     Chili

Time 4h10m

Number Of Ingredients 16

2 Tbsp minced garlic
1 tsp mexican oregano
1/2 tsp ground cinnamon
1/2 tsp cayenne
1/2 tsp ground cumin
1/2 tsp ground coriander seeds
7 large chiles, washed - stems and seeds removed.
3 c water
1 lb stew beef
1/2 c all purpose flour
1/2 Tbsp koser salt
1/2 Tbsp black pepper
2 Tbsp olive oil
1 large onion
2 c broth or water
1 can(s) tomato paste

Steps:

  • 1. In a medium pot bring to boil the 3 cups water and chiles. Remove from heat and allow the chiles to sit in water for about 30-40 min. Strain the chiles over a bowl to reserve the liquid.
  • 2. In a food processor or blender put the chiles and a bit of the liquid and puree, adding more liquid if needed, until a sauce is formed. (better to start out with less and add it then to add too much in the beginning). Remove any tough skins left in sauce.
  • 3. In a small ramekin mix together garlic, oregano, cinnamon, cayenne, cumin and coriander. Stir into chile "sauce" and set the sauce aside.
  • 4. Combine flour, salt and pepper and sprinkle over the beef.
  • 5. In a large stockpot heat olive oil to medium and sautee onion until soft. Add beef chunks and cook until just browned. Stir in chile sauce mixture. Add beef broth/stock or water until beef is covered.
  • 6. Reduce heat to lowest setting and simmer for 3 hours.
  • 7. Serve with chopped green onion, shredded cheese and tortillas.

Place under the broiler or roast in oven until the vegetables start to get charred. Remove and set aside. On another baking sheet, place the dried chiles, and toast in a 500 degree oven for 1 min or until the chiles start to release some smoke. Remove and plunge into bowl with hot water and set aside. Puree the chiles and roasted vegetables in a blender with chicken stock until smooth. Season with salt and pepper and set aside. In a saute pan, toast the cumin, coriander, and mustard seed for 3 min. or until they start to smoke. Remove from pan and place in a small mixing bowl. Add the olive oil, salt, and pepper, to make a paste. Rub paste all over the flank steak and allow to marinate for 30 minutes. Preheat oven to 350. Preheat a grill or grill pan on high. Grill flank steak for 3 min on each side. Place steak in a roasting pan and pour the pureed chile sauce over it. Add 2 c of water, cover with foil and cook in the oven 1 hour until the meat becomes flakey. Remove meat from the pan ,shred the meat, and reserve the sauce. Place 6 of the tortillas onto a baking sheet. Put a small amount of the shredded meat on the tortilla and spoon over some of the sauce. Top with cheese. Repeat with the remaining ingredients. Bake for 5 min and serve.

CARNE CON CHILE VERDE

Carne con chile verde image

For the tortilla's I use Masa Trigo. It is available at most grocery stores in the baking section, near the flour, or in the mexican food section. Just follow the easy directions on the back of the bag.

MOM'S CHILE CON CARNE (KID FRIENDLY)

Mom's Chile Con Carne (Kid Friendly) image

I've since learned this is not a true Chile con Carne, but that's what my mom always called it. She made this recipe while I was growing up, and I still make it today for my hubby or family. The heat in this can be adjusted by using more or less Chile powder or adding some cayenne pepper for bigger kids with spicier taste buds.

Time 55m

Yield 6-8 serving(s)

Number Of Ingredients 11

1 1/2 lbs ground beef
1/2 onion (chopped)
2 (15 ounce) cans reduced-sodium diced tomatoes
2 (15 ounce) cans low-sodium kidney beans
1 -2 tablespoon chili powder
1/2 teaspoon salt
1/8 teaspoon pepper
1/2 teaspoon celery salt
1/4 teaspoon cumin
1 teaspoon garlic powder
1 teaspoon oregano

Steps:

  • Cook ground beef and onions over medium heat in a large sauce pan or dutch oven until beef is browned and onions are tender. Drain and return to pan.
  • Add tomatoes and kidney beans (do not drain off juce).
  • Add spices and stir until blended.
  • Bring to boil, then reduce to low heat, cover and simmer for 30-45 minutes.
  • You can taste and adjust spices after 20-30 minutes - add more chile powder or a bit of cayenne pepper if you like it spicier - let it simmer another 20 minutes to blend flavors.
  • Serve in bowls with shredded cheese, onions, sour cream or crackers if desired. I like it with saltines broken into the chile with a little cheese on it.
