This is a quick, healthy, fresh and easy recipe to prepare. Parsley is high in Vitamin A and Iron and aids in healthy digestion.

4 cups Chinese cabbage, shredded
1 cup chopped pineapple (drained, juice reserved)
2 cups fresh parsley, roughly chopped
1 cup shredded carrot
1/2 red onion, thinly sliced
1/4 cup mayonnaise
4 tablespoons reserved pineapple juice
1 tablespoon whole grain mustard
1 tablespoon ginger, grated
salt & freshly ground black pepper, to taste

Steps:

  • In a large zip-lock bag combine cabbage, parsley, pineapple, shredded carrot and thinly sliced red onion; seal and chill.
  • Combine mayonnaise, whole grain mustard, ginger, pineapple juice and salt and freshly ground black pepper to taste; cover and chill.
  • Just before serving, pour dressing in with the zip-lock bag mixture and fumble/toss to coat.
  • serve and enjoy!

Although I do NOT condone the consumption of ramen noodles, when I saw this recipe on Paula Deen's show, I simply had to try it!! I thought this dish was a lot of fun, and had great flavor. Best 8 cents I ever spent!! I use mushroom flavored ramen because there's no "meat" or meat products in the seasoning packets

1 head cabbage or 1 (16 ounce) bag coleslaw mix
3 green onions, sliced diagonally
1 (3 ounce) package ramen noodles, with seasoning packet
6 ounces slivered almonds
1 tablespoon sesame seeds
1/2 cup vegetable oil
1/4 cup sugar
3 tablespoons white vinegar
1/4 teaspoon salt
6 -8 fresh basil leaves, shredded (optional)

Steps:

  • Preheat broiler.
  • Shred cabbage if not using coleslaw mix, and place in salad bowl with green onions.
  • Crumble noodles onto broiler pan, add almonds and sesame seeds and broil for about 2 minutes.
  • Careful not to let sesame seeds burn.
  • In a glass jar with a lid, combine oil, sugar, vinegar, salt, and contents of seasoning packet.
  • Pour dressing over salad, and toss well.
  • Add toasted noodles, almonds, sesame seeds and fresh basil (if using) RIGHT before serving.

Unlike most Chinese Cabbage Salad recipes, this one doesn't call for Ramen Noodles. If you like them in your salad, though, they can certainly be included. Taste the dressing as it's being prepared. You may want to add a bit more of something, depending on your taste.

5 cups shredded Chinese cabbage (napa)
1 1/2 cups frozen sweet peas, cooked, cooled
2 green onions, diagonally sliced
1 medium carrot, shredded
1/4 cup mayonnaise or 1/4 cup salad dressing
2 tablespoons sesame seeds, toasted
2 tablespoons rice vinegar
1 tablespoon hoisin sauce
2 teaspoons sugar
1 teaspoon soy sauce
1/8 teaspoon ground ginger

Steps:

  • In large bowl, combine first four ingredients.
  • In small bowl, combine remaining ingredients and blend well.
  • Just before serving, add dressing to salad; toss to mix and coat.

5 cups coarsely chopped Chinese or napa cabbage
1 cup shredded carrots
1/2 cup sliced green onions (1-inch pieces)
1 can (8 ounces) sliced water chestnuts, drained
2 tablespoons sesame seeds, toasted
DRESSING:
1/4 cup vegetable oil
1 teaspoon sesame oil
2 tablespoons sugar
1 tablespoon minced fresh cilantro
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon ground ginger
2 tablespoons white wine vinegar
1 tablespoon soy sauce

Steps:

  • Toss all vegetables and sesame seeds to combine. In small bowl, whisk dressing ingredients. Pour dressing over cabbage mixture; toss to coat. Cover and refrigerate for 2 hours before serving; toss again before serving.

1 head cabbage (shredded)
1 cup carrot (shredded)
1 cup green onion (chopped)
1 lb chicken (canned or cooked)
1/2 cup canola oil
1 teaspoon sesame oil
1/2 cup rice wine vinegar
2 teaspoons sugar
3 ounces oriental-flavor instant ramen noodles (uncooked)
1 tablespoon sesame seeds or 1 tablespoon sunflower seeds
1 dash salt
1 dash pepper

Steps:

  • add cabbage, carrots, green onions to a large bowl or dish.
  • add chicken.
  • crunch ramen noodles over the salad. it is easiest to break them up in the bag first.
  • mix together sugar and vineger till sugar is dissolved. add oils and whisk well.
  • pour dressing over salad.
  • top with sesame and/or sunflower seeds.
  • salt and pepper to taste, you can also sprinkle a little of the oriental seasoning from the ramen noodle pack, but not too much.
  • let marinade in fridge for about 2 hours before eating.
  • enjoy!

1 head cabbage, chopped fine
6 ounces ramen noodles, crumbled (WITHOUT SEASONING, 2 packages)
1/2 cup almonds, slivered
1/4 cup sesame seeds
1/4 cup green onion, chopped
20 ounces crushed pineapple or 20 ounces chunk pineapple
1/4 cup salad oil
1/2 cup pineapple juice (from can of fruit)
1/4 cup water
1/3 cup rice vinegar (seasoned)
1/4 cup sugar

Steps:

  • Toast almonds and sesame seeds for 1 minute in oven or broil.
  • Mix cabbage, uncooked ramen noodles, almonds, sesame seeds, green onion, and pineapple.
  • In a separate container, mix salad oil, pineapple juice, water, rice vinegar, and sugar. Mix until sugar appears dissolved.
  • Pour salad dressing over top of salad.
  • Salt and pepper to taste.
  • You may add chunks of cooked chicken if you desire.

TABBOULI / TABOULI / TABBOULEH SALAD (PARSLEY SALAD)



Tabbouli / Tabouli / Tabbouleh Salad (Parsley Salad) image

A Lebanese friend showed me how to make this back in 1996. It's my mother-in-laws favourite salad and I normally make it on request specially for her. I prefer flat leaf fresh parsley (also known as Italian Parsley) as it's better texture but curly leaf is alright. I normally buy the parsley and spring onions from the supper market prepacked bunches so if your measurements are slightly more or less it's alright, it doesn't have to be exact. The bourghul also soaks a lot of the moisture and I like Tabbouli to be moist not dried that's why there is a lot of lemons and olive oil. Like everything we cook it's all about the palate and who we are cooking for so if you choose to put less oil and lemons then it's ok. Salt and black pepper to taste, so feel free to add less but not to much. The secret to good Tabbouli is that everything should be finely chopped. Enjoy

150 g flat leaf parsley (This is about 2 bunches) or 150 g fresh parsley, finely chopped. (This is about 2 bunches)
6 spring onions (About 1 bunch) or 6 green onions, finely chopped (About 1 bunch)
4 large tomatoes, finely chopped
3 lemons, juice of (Freshly Squeeze)
5 tablespoons olive oil
1 cup bulgur (Also know as bourghul in Australia which is cracked wheat) or 1 cup burghul (Also know as bourghul in Australia which is cracked wheat)
1 cup water, boiled
1/8 teaspoon ground black pepper
1/8 teaspoon salt

Steps:

  • Add one cup of boiled water and one cup of bourghul (bulgur) in a small bowl and mix. Place a tea towel over the bowl so the steam is unable to escape. Set aside until cool.
  • Finely chop the parsley, spring onions and tomatoes and place them into your separate large salad bowl.
  • Juice all the fresh lemons and pour it over the salad mixture. Add olive oil, black pepper and salt in the salad mixture. Mix well.
  • Place over the cool bourghul and mix well.
  • Serve.
  • Refrigerate any left overs for about 2-3 days.

"MILLION DOLLAR" CHINESE CABBAGE SALAD



This recipe is always a hit...with kids too! I used to call it my 'Million Dollar Salad' because buying the sesame seeds was so expensive. Now I buy the sesame seeds in bulk at a health food store and it's much more affordable.

½ cup white sugar
¼ cup wine vinegar
1 tablespoon soy sauce
2 (3 ounce) packages ramen noodles (without flavor packets), lightly crushed
½ cup slivered almonds
1 cup sesame seeds
1 head napa cabbage, chopped
1 bunch green onions, chopped

Steps:

  • In a bowl, whisk together vegetable oil, sugar, wine vinegar, and soy sauce until the sugar has dissolved. Refrigerate the dressing while preparing the salad.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Spread the broken ramen noodles, almonds, and sesame seeds onto a baking sheet.
  • Bake the ramen noodle mixture until lightly browned, about 15 minutes, stirring often. Watch carefully to prevent burning. Allow mixture to cool.
  • Just before serving, mix together the napa cabbage and green onions with toasted ramen mixture in a salad bowl until thoroughly combined; toss with the dressing.
