fresh strawberries, washed and stemmed
kiwi fruit, peeled and sliced
1/2 cup sour cream
3 tablespoons sweetened flaked coconut

Steps:

  • Arrange fruit attractively on individual salad plates.
  • Mix together the sour cream, coconut and lime juice.
  • Spoon into the center of the fruit and serve immediately.

1 (6 ounce) container fat free pina colada yogurt
1 1/2 tablespoons lime juice
1 teaspoon caribbean jerk seasoning
4 cups romaine lettuce
6 ounces cooked chicken, chopped
1 (15 ounce) can black beans, rinsed and drained
1 1/2 cups mangoes, fresh chopped
1 cup fat-free cheddar cheese (4 ounces)
3 roma tomatoes, chopped and seeded
4 green onions, sliced
1/4 cup cashews (optional)

Steps:

  • Whisk together dressing ingredients, set aside.
  • Toss salad ingredients together OR layer in order listed into clear serving bowl.
  • Pour dressing over salad and serve.

1 cup mayonnaise
1 tablespoon Dijon mustard
1 tablespoon garlic granules
1 tablespoon dry white wine
1 teaspoon ground ginger
1/4 teaspoon salt
1 pinch sugar
1 lb fresh lump crabmeat
4 plum tomatoes, diced
1 cup seedless cucumber, diced
1/2 teaspoon Old Bay Seasoning
1/4 teaspoon white pepper
gourmet mixed greens
avocado, thinly sliced
purple onion rings, thinly sliced
mangoes or kiwi, sliced

Steps:

  • Whisk together all dressing ingredients, and chill.
  • Combine crabmeat and next 4 ingredients in a large bowl.
  • Toss with mayonnaise dressing mixture.
  • Serve with greens on serving platter.
  • Garnish, if desired.

A zesty garlic-white wine dressing brings out the best in this Caribbean-style vegetable salad made with eggplant, papayas and pumpkin.

1 large chunk fresh pumpkin (1 lb.), seeds removed
1 green papaya, quartered, seeds removed
1-1/2 cups KRAFT Zesty Italian Dressing
1/2 cup dry white wine
3 cloves garlic, minced
2 tsp. chicken bouillon
1 tsp. ground black pepper
2 Tbsp. oil, divided
1 eggplant (1 lb.), cut into 1-inch chunks
1-1/2 tsp. chopped fresh oregano leaves
2 tsp. lemon juice
1 each red, yellow and green pepper, chopped
1 head iceberg lettuce (1-1/4 lb.), torn
1 red onion, thinly sliced
2 avocados, coarsely chopped
1/4 cup crumbled goat cheese
2 Tbsp. chopped fresh thyme

Steps:

  • Cook pumpkin and papaya in boiling water in large saucepan 20 to 30 min. or until tender; drain. Cool slightly. Peel pumpkin and papaya; cut pulp into 1-inch chunks.
  • Whisk next 5 ingredients until bouillon is dissolved.
  • Heat 1 Tbsp. oil in large nonstick skillet on medium-high heat. Add eggplant; cook and stir 4 to 5 min. or until tender. Stir in oregano and lemon juice; transfer to large bowl.
  • Add remaining oil to same skillet; heat. Add peppers; cook and stir 4 min. or until crisp-tender. Add to eggplant mixture along with the pumpkin, papaya, dressing mixture and remaining ingredients; toss lightly. Refrigerate 1 hour.

1 12 oz can pineapple juice
4 tablespoons sesame seed oil
2 tablespoons apple cider vinegar
2 tablespoons fresh parsley (or 1 tablespoon dried)
1/2 teaspoon rosemary
1/2 teaspoon lemon pepper
1/8 teaspoon salt

Steps:

  • Mix all ingredients in an airtight container with lid. Shake vigorously for 30 seconds. No refrigeration necessary. Must be mixed well each time served, as the ingredients separate with the oils. Yields 1 1/2 cups. Note: I am a chef at Cafe Mariposa on Utila, The Bay Islands of Honduras deep in the Caribbean.
