CARIBBEAN BEEF BURGERS WITH MANGO SALSA
Steps:
- 1)Combine Ground Beef and jerk seasoning in large bowl, mixing lightly but thoroughly. Shape into four 3/4-inch thick patties. 2)Place patties on grid over medium, ash-covered coals. Grill, covered, 11 to 15 minutes (over medium heat on preheated gas grill, covered, 13 to 14 minutes), until instant-read thermometer inserted horizontally into center registers 160degreesF, turning occasionally. Season with salt, as desired. 3)Meanwhile, combine salsa ingredients in medium bowl, mixing lightly. Serve burgers with salsa. Cooking times are for fresh or thoroughly thawed Ground Beef. Color is not a reliable indicator of Ground Beef doneness.
JAMAICAN CURRY BEEF RIBS WITH PAPAYA & MANGO
In most tropical countries fruit is served at room temperature for this recipe it has to be well chilled before serving it over the hot spicy curried beef. The ribs that you choose must be very lean, well marbled. If they are large I recommend simmering them in water (bone in) for aprx 45 minutes to tenderize them, then remove the bones and continue with the recipe.. Save broth for another recipe. I have used small lean short ribs and removed the bone without simmering. They were very tender.

Steps:
- Rub the lime juice into the beef cubes.
- Place the limed beef and curry paste in a large bowl or zip lock bag, mix well to coat the beef with the curry and let it rest 1 hour or longer.
- Mix the mango & Papaya together, cover and refrigerate for at least 1 hour.
- Heat oil in a large skillet medium heat, brown the curried beef . stir as you are browning the beef, Be careful not to burn.
- Add onions, cook until the onions are translucent and starting to brown, add garlic and Jalapenos.
- Continue to cook 5 minutes, stir at least once.
- Pour in the tomatoes, cover with a lid and simmer 45 minutes.
- Just a few minutes before serving add the cooked sweet potatoes, mix well, heat through.
- Meanwhile cook your rice using your favorite method stir in the sugar or sugar substitute while cooking, mix well ( If you are boiling the rice in water add sugar to the water while cooking).
- Serve the curried beef over the rice topped with the Papaya/Mango mixture.
- Sprinkle Coconut on top if you wish
- Enjoy!

BBQ CARIBBEAN BEEF KABOBS
Now this is tasty! You can use the same marinade for chicken but make more marinade and reserve before you put the chicken in it, discard the marinade that you used on the chicken and use only the reserved marinade for basting, I like to serve these kabobs with BBQ'd veggie kabobs and potatoes done on the grill too (there will be other recipes for the veggies and BBQ Potatoes on Zaar)

Steps:
- Whisk the marinade ingredients to gether.
- Pour into a zip lock bag and add the meat.
- Marinade in the fridge from 8 to 24 hours, turning the bag every so often.
- Reserve the marinade.
- Thread the cubes on skewers.
- Grease your grill.
- Medium-High heat,baste occasionally.
- Cook for 7-10 minutes.
- The meat should be browned outside and still pink inside.
DEVILISHLY DIVINE TROPICAL KABOBS WITH A DEVIOUS TWIST
This recipe is a result of the Zaar World Tour 2007 for the Caribbean Grilling/Jerk Challenge. Our team - The Devilishly Devious Diners - created this recipe with help and ingredients from all the members. We've included beef, chicken and shrimp but feel free to add or delete any of the different meats. We used our very own ellie_'s Recipe #108351 for the jerk seasoning. It was very good accompanied by a long grain and wild rice mixture as well as mama's kitchen Recipe #139883 The rum soaked fruit is our devious contribution to this great recipe!

Steps:
- Mix together olive oil, apple cider vinegar, honey, Jamaican seasoning, and lime juice in a large glass bowl. Add meat and stir to coat. Let marinate for an hour or two.
- In another bowl, mix pineapple and mango with the rum. Let sit for an hour or two, stirring occasionally.
- Heat grill to medium low.
- Thread meats onto skewers, alternating with fruit and vegetables.
- Grill on medium low for about 20 minutes or until meats are cooked through.
- Serve with long grain/wild rice mixture and wedges of lime to squeeze over kabobs.
