CARIBBEAN FUDGE PIE
I got this recipe out of a church cookbook.

Steps:
- 1. Cream butter with sugar; beat in eggs one at a time.
- 2. Add melted chocolate chips, instant coffee, brown sugar and rum extract.
- 3. Stir in flour and walnuts; turn into pie shell. Top with the remaining 1/2 cup walnuts and bake at 375 degrees for 25 minutes.

Steps:
- 1. Preheat oven to 375. In a microwave-safe bowl, microwave chocolate until melted. Stir occasionally until chocolate is smooth. Cream butter or margarine and sugar till fluffy. Beat in eggs, one at a time. Add melted chocolate, coffee, and rum; mix well. Stir in flour and chopped nuts.
- 2. Pour filling into pie shell, and decorate with walnut halves. Bake for 25 minutes.
- 3. Remove pie from oven, and cool completely. Refrigerate 1 hour before serving.
