BONIATO MASH WITH MOJO



Boniato Mash with Mojo image

4 boniatos, peeled and cut into medium dice
Milk, enough to cover boniato
1/4 cup olive oil
1/4 cup thinly sliced garlic cloves
Salt and freshly ground black pepper
2 limes, juiced

Steps:

  • Place boniatos in a medium saute pan and cover with milk. Cook boniato in milk until tender.
  • Meanwhile, heat oil in a small saucepan until almost smoking, add garlic, shaking pan constantly and season with salt and pepper. When the garlic turns golden brown, add the lime juice. Set the mojo aside until the boniato is done.
  • Drain boniato, and while still hot, puree the boniato through a food mill or mash with a potato masher; add the mojo and season with salt and pepper.

1 1/2 lbs boniato, peeled and cubed in 1/2-inch cubes (Caribbean sweet potato)
4 tablespoons butter
1/2 cup heavy cream
1/4 teaspoon nutmeg, freshly grated (or more to taste)
salt and pepper (to taste)

Steps:

  • Place the boniato in a large pot with cold salted water to cover and slowly bring t a boil over medium-high heat. Reduce the heat to medium and gently simmer the boniato until very tender, about 10 minutes.
  • Drain the boniato well and return to the pot. Mash with a potato masher or put through a ricer. Do not use a food processor to mash the boniato or it will taste gummy.
  • Add the butter and cream and continue mashing to form a creamy puree. Season with nutmeg, salt and pepper to taste.

MASHED WHITE SWEET POTATOES

In the Caribbean, white-fleshed sweet potatoes (boniato) are king. This recipe for mashed boniato is an excellent stand-in for regular potatoes.

2 pounds sweet potatoes (white-fleshed)
Salt (to taste)
3 tablespoons butter (salted or unsalted, melted)
Freshly ground black pepper (to taste)
1/4 cup whole milk (warm)
1 chili pepper (minced)
1/4 cup green onions (white and green parts, sliced)

Steps:

  • Gather the ingredients.
  • Peel the sweet potatoes and cut them into large pieces.
  • In a large pot, place the potatoes, cover with water, and bring the pot to a boil over high heat.
  • When the pot comes to a boil, salt the water, and let the sweet potatoes cook until a knife inserts easily into them, about 20 minutes.
  • Drain the sweet potatoes thoroughly.
  • Add the drained potatoes back into the still-hot pot along with the butter, pepper, and milk. Mash the potatoes until they are smooth. Season with the chile pepper and salt to taste. Mix well.
  • Fold in the green onions.
  • Serve immediately and enjoy.

CUBAN BONIATILLO (SWEET POTATO PASTE DESSERT)



Cuban Boniatillo (sweet Potato Paste Dessert) image

This very sweet little dessert is made from the Cuban sweet potato called a boniato. There really is no substitution, but if you are feeling brave a white sweet potato might be OK. You can find boniato in Latin grocery stores. This is really sweet, and is served in small doses. We like it after a garlicy meal, such as Cuban Roast Pork and Mojo Crillio, served with little cups of strong espresso. This is not a typical America dessert - it's not chocolate cake, not a hot fudge sundae - so be ready for something new - its an adventure!

1 1/2 lbs cuban white sweet potatoes
1 teaspoon salt
2 cups water
2 cups sugar
1 cinnamon stick (about 2 inches or longer)
1 lime peel, of no pith, just the green part, use a vegetable peeler
3 large egg yolks, lightly beaten
1/4 cup dry sherry (I donÂ't use this, instead, I use vanilla)
2 teaspoons vanilla (see above) (optional)
1 teaspoon cinnamon (optional)
ground cinnamon (to garnish)

Steps:

  • Place the cubed potatoes in a large saucepan, cover with water and add 1 teaspoon salt - boil until tender, about 20 minutes.
  • Drain potatoes and puree in a food processor or blender.
  • Combine the 2 cups water, 2 cups sugar, lime peel and cinnamon stick in a large heavy saucepan.
  • Cook until it reaches the soft-ball stage (250 degrees) on a candy thermometer - about 15 minutes - stir frequently.
  • Reduce heat to low, carefully add potatoes cook and stir until smooth - about 6 to 8 minutes.
  • Remove from heat and add the egg yolks and mix well.
  • Return to low heat for 2 to 3 minutes stirring constantly.
  • Remove from the heat mix in either the sherry or the vanilla (NOT BOTH) Note: I like to add 1 teaspoon of cinnamon here, but it's optional.
  • Allow the paste to cool at room temperature for about 10 to 15 minutes.
  • Transfer to a serving bowl or individual dishes and refrigerate for at least 2 hours.
  • Sprinkle with cinnamon and serve cold.

1 lb. sweet potatoes (about 2), peeled, cut into 1/2-inch cubes
1 plantain, peeled, cut into 1-1/2 inch-thick slices
2 cloves garlic
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, cubed
1 Tbsp. fresh lime juice
1 green onion, chopped
1 fresh jalapeño pepper, chopped
1 Tbsp. chopped fresh cilantro
1/2 tsp. ground cumin
4 slices OSCAR MAYER Bacon, cooked, crumbled, divided

Steps:

  • Cook potatoes, plantains and garlic in large pan of boiling water 15 to 20 min. or until potatoes are tender; drain. Return potato mixture to pan.
  • Add cream cheese and lime juice; mash until cream cheese is melted and potato mixture is desired consistency. Stir in all remaining ingredients except 2 Tbsp. bacon. Spoon into serving bowl.
  • Sprinkle with remaining bacon.
