2 tablespoons butter
1/2 cup arborio rice
1/4 teaspoon ground cardamom
1/4 teaspoon ground cinnamon
2 1/2 cups whole milk
2 tablespoons sugar
1/4 cup unsalted shelled pistachio, toasted
2 teaspoons liquid honey

Steps:

  • In a saucepan, melt the butter at medium heat. Add rice, cardamom, cinnamon and stir to coat the rice. Add milk and sugar and bring to boil. Reduce heat, cover and let simmer, stirring often, 25 to 30 minutes or until almost all liquid has absorbed and rice is tender. (You can prepare this step in advance, let cool and put in an hermetic container. It will be good up to the next day in the fridge). Serve the rice pudding warm, sprinkle with pistachios and honey.

This particular rice pudding is popular in north India, and is scented with super-aromatic cardamom as well a light splash of rose water.

1/3 cup basmati rice
2 quarts whole milk
1 1/2 teaspoons ground cardamom, more to taste
3/4 cup granulated sugar, more to taste
6 tablespoons chopped pistachios
1/2 teaspoon salt
1 1/2 teaspoons rose water

Steps:

  • Rinse the rice well, then combine with the milk and cardamom in a heavy saucepan over medium-high heat. Bring to a bubble, then reduce the heat to a gentle simmer. Cook, stirring occasionally, until the rice is very tender and the milk has been reduced by almost half, about 45 to 50 minutes.
  • Stir in the sugar and 4 tablespoons of the pistachios and continue to cook, stirring more frequently, until the pudding is the consistency of a thin porridge (it will thicken as it cools), another 15 minutes or so. Remove from heat, add salt and more sugar or a dash of ground cardamom if you like, then stir in the rose water. Serve room temperature or chilled, topped with the rest of the pistachios.

  • Combine water, rice flour, and sugar in a saucepan over medium heat. Cook, stirring constantly, until the mixture thickens, about 5 minutes.
  • Mix milk, rose water. saffron, and cardamom together in a bowl; add to rice mixture. Bring to a boil and stir until there are no clumps, about 5 minutes.
  • Carefully ladle hot mixture into 6 cups; garnish each with 3 pistachios. Refrigerate for at least 1 hour.

1 tablespoon Indian Clarified Butter (Ghee) or melted butter
1/2 cup sliced almonds
1/2 cup raisins

Steps:

  • Bring milk, rice, cardamom, cinnamon, and salt to a boil in a 3-quart heavy saucepan over medium-high heat. Reduce heat to medium-low and simmer, uncovered, stirring frequently, until rice is tender, about 20 minutes. Add sugar and cook, stirring, until slightly thickened, about 5 minutes.
  • Heat ghee in a 10-inch heavy skillet over medium heat until hot, then cook almonds, stirring, until golden. Add raisins and cook, stirring, until coated with ghee and slightly puffed.
  • Stir almond mixture into rice pudding and serve warm.

1 1/2 cups honey
1/2 cup sugar
1 cup milk
1 cup Arborio rice

1 cup heavy cream
5 large egg yolks
1/4 cup plus 2 tablespoons sugar
Pinch salt
1 cup muscat or late harvest riesling
3/4 cup heavy cream
2 teaspoons freshly squeezed orange juice
Orange-Cardamom Madeleines, for serving, recipe follows
1/2 stick (4 tablespoons) unsalted butter, plus more for pan
3/4 cup all-purpose flour, plus more for pan
1 tablespoon honey
1 teaspoon vanilla
1 teaspoon baking powder
3/4 teaspoon ground cardamom
1/4 teaspoon salt
1/4 cup sugar
2 large eggs

Steps:

  • For the glazed oranges: Bring a large pot of water to a boil. Add the orange slices and cook until translucent, about 5 minutes. Transfer to a baking sheet.
  • Cut a piece of parchment into a circle to fit a large shallow saucepan. Bring 2 cups water, the honey and sugar to a boil. Add the orange slices and place the parchment directly on top. Reduce the heat and simmer until the oranges are soft and the liquid has reduced to a syrup, 30 to 40 minutes.
  • For the rice pudding: Put 1 3/4 cup water, the milk, rice, water, sugar, salt and vanilla seeds into a medium saucepan. Bring to a boil, and then simmer until almost all the liquid has absorbed, 18 to 20 minutes.
  • Remove from the heat and stir until smooth. Remove the vanilla bean and cool.
  • Whip the heavy cream until soft peaks form. Fold into the rice pudding.
  • For the sabayon: Prepare a large ice bath and set aside. Fill a medium saucepan with 2 inches of water and set over medium heat to bring to a simmer.
  • In a large stainless steel bowl, whisk together the egg yolks, sugar and salt until very pale yellow. Add the wine and whisk to combine. Place the bowl over the pan of simmering water and whisk until the eggs have thickened and tripled in volume, 5 to 10 minutes. Remove from the heat and transfer to the ice bath. Whisk until chilled.
  • In a large bowl, whip the heavy cream until soft peaks form. Add the orange juice and fold into the chilled sabayon.
  • Divide the pudding among serving dishes and top with the oranges slices and their syrup. Finish with the orange sabayon. Serve with Orange-Cardamom Madeleines.
  • Preheat the oven to 325 degrees F. Butter and flour a madeleine mold pan.
  • Melt the butter in a small saucepan over medium heat. Remove from the heat and stir in the honey and vanilla. Let cool for 10 minutes.
  • Whisk the flour, baking powder, cardamom and salt together. Stir together the sugar and eggs in a medium bowl. Gently fold in the flour until well combined. Add the butter and fold until combined. Cover and refrigerate for 30 minutes.
  • Spoon the batter into the prepared madeleine mold pan, filling each mold halfway Tap the pan on a work surface to eliminate air bubbles. Bake until the cookies are golden, 7 to 8 minutes.

750 ml whole milk
10 whole cardamom pods
8 tablespoons sugar
2 tablespoons long grain rice
1 egg yolk
2 tablespoons sultanas
2 tablespoons blanched slivered almonds
150 ml whipping cream

Steps:

  • Combine milk, cardamom pods and 6 Tbsp of the sugar in a saucepan. Bring to boil, turn to low and stir in rice. Continure stirring until sugar dissolves. Cover and cook over a very low heat for 1 hour. Remove from heat.
  • Put egg yolk in a cup and beat lightly. Add 2 Tbsp hot pudding to the cup and mix slowly. Pour mixture back into the pan and stir through.
  • Stir in remaining sugar. Bring to a simmer and cook, stirring every so often until pudding is thickened, about 5 to 7 minutes. Remove and discard cardamom pods. Add sultanas and half the slivered almonds. Mix well and let cool completely.
  • Whip cream until stiff. Reserve 3 Tbsp and fold in rest into cooled rice pudding. Transfer to a 1/5 litre gratin dish. Sprinkle remaining almonds on top.
  • Preheat grill (broiler) to maximum and place pudding under it briefly until lightly browned. Leave to cool and refrigerate until ready to serve.

1/2 cup heavy cream
1 vanilla bean, seeds scraped
8 cardamom pods, lightly crushed
120 grams short-grained rice
30 grams unsalted butter
2 tablespoons condensed milk
1 tablespoon acacia or other mild flavored honey
1 pinch salt
3 tablespoons unsalted pistachios, roasted and slivered or lightly crushed
1 tablespoon dried edible rose petals
1 tablespoon acacia or other mild flavored honey - for syrup
1.5 teaspoons rose water - for syrup
1 teaspoon water - for syrup

Steps:

  • Put the whole milk, cream, vanilla bean pod and seeds and cardamom in a medium saucepan and place over high heat. As soon as the mix is about to boil, remove from the heat, allow to cool down, and leave in the frifge to infuse overnights or at least a couple of hours.
  • To prepare the syrup, stir together the honey, rose water and water until the honey dissolves. Set aside.
  • Add the rice to the pan with the infused milk and cream, bring to a boil, and simmer over medium heat, stirring all the time, for 20 minutes. The rice should be cooked through but still retain a bite and the pudding should be thick. You will need to add a little bit of water, up to 3.5 tablespoons, toward the end of the cooking time if the pudding becomes too thick before the rice is done.
  • Remove the pan from the heat and carefully pick out the cardamom pods and vanilla pod. Stir in the butter, condensed milk, honey and a pinch of salt. You can chill the mix now and reheat in a microwave later or serve immediately in little flat bowls, sprinkle with pistachios and rose petals, and drizzle with the syrup.

BAKED CARDAMOM-SCENTED RICE PUDDING WITH ORANGES IN HONEY & POMEGRANATE SYRUP

50g butter , plus more for the dish
50g caster sugar
1 cardamom pod , seeds removed and ground
100g pudding rice
1l whole milk
150ml double cream
1unwaxed orange , zested
¼ tsp vanilla extract
2 large oranges , juiced and 2 broad strips of orange zest
200ml pomegranate juice
1 tbsp pomegranate molasses
5 tbsp honey
75g granulated sugar
4-5 oranges (a mixture of regular and blood; if mostly blood oranges, you will need 5, as they're smaller)

Steps:

  • Heat the oven to 150C/130C fan/gas 2 and butter a wide 1.5-litre ovenproof baking dish. Put the butter, sugar, cardamom, pudding rice and milk in a saucepan and bring gently to the boil, stirring to help the sugar dissolve. Add the cream, a pinch of salt, orange zest and vanilla and bring to a simmer. Simmer for about 4 mins, stirring, until you can feel that the rice grains have become slightly swollen. Pour into the buttered baking dish and bake for 2 hrs, uncovered. The rice should be cooked but not dry or sticky. It might need a little longer, but keep an eye on it.
  • Meanwhile, make the compote. Heat the orange juice, pomegranate juice, molasses, honey and sugar, stirring to help the sugar dissolve. Simmer for 8 mins until reduced slighty. Transfer to a jug. If you have more than 300ml, reduce it by boiling a bit more. The mixture will thicken as it cools. Strain, cover and chill in the fridge.
  • Cut the top and bottom off the oranges to form a flat base. Using a sharp serrated knife, cut away the pith and peel. Cut the fruit into slices, catching any juice if you can (add it to the syrup). Put the oranges in a bowl, pour on the syrup and serve with the rice pudding.

1/2 cup short grain rice
1/3 cup golden baker's sugar
1 1/3 cups 1% milk
1/2 cup half-and-half
3 whole cardamom pods, seeds removed and ground to a powder
3 1/2 oz white chocolate, grated
For the Sauce:
1/3 cup marmalade
1/3 cup Cointreau

Steps:

  • Place the rice and sugar into a medium saucepan, then pour in the milk and half-and-half. Add the cardamom powder.
  • Bring to a boil, then lower the heat and simmer for 15 to 20 minutes, until the rice is swollen and tender. Add a little hot water if it's looking a little dry.
  • Remove from the heat and stir in the grated white chocolate. Cover the pan and set aside.
  • To make the sauce, combine the marmalade with the Cointreau and heat gently in a pan.
  • Divide the rice pudding between four bowls and drizzle with the sauce.
  • Serve decorated with a few shavings of white chocolate, if desired.

CARDAMOM RICE PUDDING WITH GOLDEN RAISINS

1 whole vanilla bean
6 cups whole milk
1 cup sugar
3/4 cup uncooked basmati rice (see Note)
1/2 teaspoon kosher salt
1 large egg
2 large egg yolks
3/4 teaspoon ground cardamom
Finely grated zest of 1 orange
3/4 cup golden raisins (or other dried fruit)

Steps:

  • Split the vanilla bean lengthwise and scrape the beans from the pod. Add them both to a large saucepan, along with 4 cups of the milk and the sugar, rice, and salt. Bring just to a boil over medium-high heat (watch carefully-it boils over easily!), partially cover the pan, and lower the heat to a gentle simmer. Cook until the rice is very soft, about 45 minutes, stirring occasionally at first and more frequently as the mixture thickens. Remove the pan from the heat and carefully remove the vanilla bean pods. (You can rinse the pods and store them in a jar of sugar, which will infuse the sugar with vanilla flavor.)
  • Meanwhile, position a rack in the center of the oven and heat to 350°F.
  • In a medium bowl, whisk together the remaining 2 cups milk with the egg, yolks, cardamom, and orange zest. Using a heatproof measuring cup, scoop out about 1 cup of the hot rice mixture. Whisking the egg mixture constantly, add the rice mixture to the eggs in a steady stream and whisk to blend. Repeat with another 1 cup of the rice. Then pour the egg mixture back into the saucepan and whisk to blend. Stir in the raisins.
  • Transfer to an 8 by 12-inch glass or metal baking dish and place the dish in another, larger baking or roasting pan at least as deep as the baking dish. Fill the pan with enough hot water to come halfway up the sides of the baking dish.
  • Bake uncovered, stirring occasionally, until the pudding is thickened but still fairly fluid, about 40 minutes. (The rice will absorb the remaining liquid as it cools.)
  • Let cool slightly. Serve while still warm.
  • Note
  • You could use jasmine or other long-grain rice instead, but basmati seems to hold up the best under the long cooking time.

1/3 cup long-grain rice
1/4 cup sugar
1/2 teaspoon ground cardamom
2 cups skim milk
1/2 cup dried cherries
1/2 cup heavy cream, whipped

Steps:

  • Place the rice, sugar, cardamom, milk and one-third cup of the cherries in a heavy saucepan. Bring to a boil, lower heat to a gentle simmer and cook, covered, stirring from time to time, until the rice is very tender, about 40 minutes.
  • Divide the mixture in half and pack into two one-cup heart-shaped molds and refrigerate until well chilled, at least four hours, then unmold. Alternatively, the mixture can be refrigerated in a small bowl and, once it has been chilled, shaped into two hearts by hand.

1/4 c uncooked white basmati rice
1/2 c water
3 c whole milk *see note at bottom of directions
2-4 cardamom pods
Small handful slivered or sliced almonds, or pistachios
1/2 tsp rosewater
1/4-1/2 c sugar

Steps:

  • 1. In a heavy bottomed saucepan over high heat, boil water with rice until rice has absorbed all the water, about 3 minutes.
  • 2. Add the milk, and bring to a rolling boil, constantly stirring. Reduce heat to medium.
  • 3. Slightly crush cardamom pods & add. If you want very strong cardamom flavor, you can release the seeds from the pods before adding, but it will make them hard to retrieve if you decide the pudding has absorbed enough flavor (the flavor will intensify if leftovers are stored with the cardamom still in it.) If I plan to eat all of it right away, I enjoy the seeds released from the pods, but can find it too strong in leftovers.
  • 4. Simmer about 15- 25 minutes, stirring often. If skin forms on the top, stir it back in, but don't scrape up any scorched milk that forms on the bottom. Once milk has thickened sufficiently to your preference, stir in sugar, nuts, and rosewater. Taste and feel free to add more sugar or rosewater, to your preference. If the cardamom flavor is sufficiently strong, remove the pods. This can be served warm (my favorite) or chilled, which will thicken it.
  • 5. *This is plenty creamy to me, and healthier (I even enjoy it made with 2% milk), but if you decide you want something more indulgent, you may replace part of the milk with cream. Just wait to add the cream till the last 5-10 minutes of the simmering time.
