5 ounces bittersweet chocolate, chopped
1 tablespoon unsalted butter
1/4 cup plus 3 tablespoons sugar
2 tablespoons all purpose flour
1 teaspoon unsweetened cocoa powder
3/4 cup whole milk
1/4 teaspoon vanilla extract
4 large egg yolks
5 large egg whites
1/4 teaspoon coarse kosher salt
Cardamom Crème Anglaise

Steps:

  • Place chocolate and butter in medium bowl. Whisk 1/4 cup sugar, flour, and cocoa powder in small bowl. Bring milk and vanilla to boil in heavy small saucepan. Gradually whisk hot milk mixture into sugar mixture to blend. Return mixture to same saucepan. Cook over medium-high heat until thick paste forms, stirring constantly, about 2 minutes. Scrape mixture into bowl with chocolate and butter; stir until chocolate is melted (mixture may look curdled). Add egg yolks and whisk until mixture looks shiny and creamy. (Soufflé base can be prepared 1 day ahead. Press plastic wrap directly onto surface and refrigerate. Bring soufflé base to room temperature before continuing.)
  • Butter eight 3/4-cup soufflé dishes or custard cups; dust with sugar. Using electric mixer, beat egg whites until frothy. With mixer running, gradually add 3 tablespoons sugar, then salt; beat just until soft peaks form. Fold 1/3 of whites into soufflé base until well combined. Gently fold in remaining egg whites just to blend (some white streaks may remain). Divide batter among prepared dishes. Place dishes on rimmed baking sheet. (Can be prepared 2 hours ahead. Let stand at room temperature.)
  • Preheat oven to 350°F. Bake soufflés until puffed above rim of dish, tops are flat, and edges are set, about 12 minutes. Serve immediately with Cardamom Crème Anglaise.

2 tablespoons whole green cardamom pods, crushed
1 cup whole milk
1 cup whipping cream
1/2 cup sugar, divided
1/4 vanilla bean, split lengthwise
4 large egg yolks

Steps:

  • Place cardamom pods with seeds in heavy medium saucepan over medium-high heat. Stir until pods brown, about 5 minutes. Add milk, cream, and 1/4 cup sugar. Scrape seeds from vanilla bean into pan; add bean. Bring mixture to boil. Whisk egg yolks and remaining 1/4 cup sugar in medium bowl. Gradually whisk in hot milk mixture. Return mixture to same saucepan. Stir over medium-low heat until custard thickens and leaves path on back of spoon when finger is drawn across, stirring constantly, about 2 minutes (do not boil). Cover and chill until cold, about 3 hours. Strain into medium pitcher. (Can be made 2 days ahead. Cover and refrigerate.)

1/4 cup green cardamom seeds
2 cups heavy cream
6 egg yolks
4 tablespoons sugar
1 large ripe banana
1 tablespoon sugar
1 cup heavy cream, whipped to stiff peaks
Mint sprigs, for garnish

Steps:

  • Crush cardamom seeds with the back of a heavy knife and combine, outer shells and all, with cream in a saucepan. Bring to a boil, cover and simmer for 10 minutes. In top of a double boiler whisk yolks with sugar until sugar dissolves. Cook eggs over simmering water, whisking constantly, until thickened. Remove from heat and gradually strain cream into yolks, whisking. Pour sauce back into top of double boiler and cook, stirring constantly, for 10 minutes until thickened. Temperature of sauce should not exceed 165 degrees F or it will curdle. Remove sauce from heat and continue to stir for 3 minutes to cool. Strain into a clean bowl and cool to room temperature, stirring frequently. Cover and chill.
  • In food processor combine banana and sugar and puree. Scrape puree into a bowl and gently fold in whipped cream. Cover and chill 1 to 2 hours. To serve, mound mousse in centers of 4 dessert plates. Pour some cardamom sauce around and serve immediately, garnished with mint.

James Martin is a master at dessert & here is another one of his creations - can you see why he's one of my favourite chefs? This recipe is for one individual cheesecake but can easily multiply the ingredients.

butter, for greasing
140 g cream cheese
3 tablespoons icing sugar
1 tablespoon cocoa powder
50 ml double cream, whipped until soft peaks are formed when the whisk is removed
3 digestive biscuits, crushed
55 g dark chocolate, grated
1 orange, peeled, segmented
1 sprig of fresh mint
200 ml milk
150 ml double cream
3 free-range egg yolks
85 g caster sugar
3 cardamom pods, lightly crushed
1 vanilla pod, split, seeds scraped out
30 g caster sugar

Steps:

  • Grease a 10cm/4in chefs' ring with butter and place onto a plate.
  • Place the cream cheese, icing sugar, cocoa powder and cream into a bowl and whisk together.
  • Press the biscuit crumbs into the bottom of the ring mould, then add the cream cheese mixture to fill the ring.
  • Smooth over the top and sprinkle the chocolate over.
  • Carefully remove the ring and top with the orange segments and mint.
  • For the crème anglaise, heat the milk and cream in a saucepan over a medium heat, until nearly boiling, then remove from the heat.
  • In a bowl, beat together the egg yolks and sugar, then gradually add the warmed cream mixture, stirring constantly.
  • Return the mixture to the saucepan. Add the cardamom and vanilla seeds and stir over a low heat, until thickened enough to coat the back of a spoon.
  • Strain the mixture through a sieve into a bowl and allow to cool.
  • For the spun sugar, melt the sugar in a small frying pan until golden, then remove from the heat. Using a fork, flick strands of the caramel over an upside-down bowl.
  • Allow to set, then remove and serve over the cheesecake with the crème anglaise poured around.

Chocolate Pastry (this makes enough for 2 tarts)
• 320g plain flour
• 60g cocoa
• 160g caster sugar
• 160g cold unsalted butter, diced
• 2 eggs
Filling
• 160g unsalted butter, room temperature
• 1 cup almond meal
• ¾ cup sugar
• 3 large eggs
• 1/3 cup unsweetened cocoa powder
• 1 tablespoon vanilla extract
• 3 firm, ripe pears (use 4 if pears are small)
Cardamom Crème Anglaise
• 3 egg yolks
• 55g caster sugar
• 6-8 cardamom pods
• 250ml milk
• 250ml pouring cream

Steps:

  • To make the chocolate pastry, place the flour, cocoa, sugar, butter and a pinch of salt in the bowl of a food processor and process until mixture resembles fine breadcrumbs. Add eggs and process until dough just starts to come together. Turn onto a lightly floured surface and gently knead until smooth. Flatten into a disc shape, wrap in clingwrap and place in the fridge for 30 minutes to rest.
  • Roll out the pastry to about 3mm thick. Line the base and sides of two tart tins (I used 20cm round tins) with the pastry, and trim any excess. Alternately, halve pastry, wrap excess in plastic wrap and freeze for up to 6 months. Place in the fridge for 15 minutes to rest. Line the pastry with baking paper and fill with baking weights or rice. Bake at 160°C (320°F) for 10 minutes. Remove paper and weights and bake for a further 5-10 minutes or until firm to the touch. Allow to cool.
  • To make the filling, place butter, almond meal, sugar, eggs, cocoa and vanilla extract in the bowl of a food processor and process until combined. Spread mixture evenly in prepared tart crust. Peel, halve and core pears. Cut into quarters and slice horizontally, but not all the way through. Arrange on top of chocolate mixture, pressing in very slightly.
  • Increase oven temperature to 180°C (350°F). Place pan on baking sheet and bake for 45-50 minutes or until top is puffed and toothpick inserted into the center comes out with only a few moist crumbs attached. Cool completely in pan.
  • In the meantime, make the cardamom crème anglaise. Lightly whisk the egg yolks and sugar together in a bowl. Place the milk, cream and cardamom in a saucepan and bring almost to the boil. Remove from the heat and allow to infuse for 30 minutes. Return to the heat and rewarm. Whisk the hot milk mixture into the egg mixture, and return to the saucepan.
  • Using a wooden spoon, stir constantly until the custard thickens and coats the back of the spoon. Do not let it boil. Strain through a fine sieve, allow to cool to room temperature, then refrigerate until cold. Crème anglaise will keep refrigerated for one or two days. To serve warm, gently reheat in a saucepan over low heat.
