POMEGRANATE PANNA COTTA

Number Of Ingredients 8

Nonstick vegetable oil spray
3 tablespoons plus 2 cups pomegranate juice (such as Pom)
2 teaspoons unflavored gelatin
1 cup sugar
Peel from 1 orange, removed in strips with vegetable peeler
1/2 cup fresh orange juice
1/2 cup whipping cream
1 1/2 cups buttermilk

Steps:

  • Spray six 3/4-cup ramekins or custard cups with nonstick spray. Place 3 tablespoons pomegranate juice in small bowl. Sprinkle gelatin over; let stand 10 minutes. Meanwhile, heat remaining 2 cups pomegranate juice, sugar, and peel in large saucepan over high heat, stirring to dissolve sugar. Boil until syrup is reduced to 1 1/4 cups, about 10 minutes. Remove from heat.
  • Remove peel from pan; transfer 1/3 cup syrup to small bowl and reserve for sauce. Add gelatin mixture to remaining hot syrup in pan, and stir until dissolved. Add orange juice and whipping cream, then buttermilk. Strain. Divide among prepared ramekins. Chill until set, at least 4 hours or overnight. Cover and chill sauce separately.
  • Run knife around edge of ramekins; invert onto plates. Drizzle with sauce and serve.

1 large pomegranate, rinsed well and quartered
4 cups cold water
Few sprigs mint (optional)
Few tablespoons honey (optional)

Steps:

  • In a small saucepan, bring pomegranate and the water to a boil; reduce heat. Add mint, if using; simmer until fragrant and colorful, about 15 minutes. Stir in honey, if using; strain tea, and serve hot.

If you start your panna cotta the day before you want to eat it, this classic Italian recipe is about as simple as it gets.

1 (.25 ounce) envelope unflavored gelatin
3 tablespoons cold water
2 ½ cups heavy cream
½ cup white sugar
3 strips lemon peel
½ pinch kosher salt
⅛ teaspoon vanilla extract
½ cup buttermilk
1 tablespoon fresh lemon juice

Steps:

  • Sprinkle gelatin over cold water; stir and let sit 5 or 10 minutes until it thickens and becomes rubbery.
  • Pour heavy cream into a saucepan. Whisk in sugar. Place over medium heat and cook, stirring occasionally, until mixture just barely starts to simmer, 3 to 5 minutes. Add lemon peel as mixture is coming up to temperature. As small bubbles begin to appear here and there, remove pan from heat. Add tiny pinch of salt, vanilla, and bloomed gelatin. Whisk until gelatin melts into the cream mixture. Add buttermilk and lemon juice; whisk until blended.
  • Strain through fine sieve to remove zest and any lumps. Pour into serving dishes or ramekins. Allow to cool to room temperature. Cover with plastic wrap and refrigerate 5 hours or, ideally, overnight.

This tart, smooth dessert can be made up to a day ahead but must be unmolded and brought nearly to room temperature before serving. Very lightly sweetened raspberries, blueberries and strawberries create a wonderful foil. Chopped fresh peaches and nectarines do as well. Almost any combination of summer fruit will flatter this delicate and satisfying dessert.

1 cup, plus 2 tablespoons, heavy cream
1/2 cup sugar
3 tablespoons cold water
1 package powdered gelatin
1 2/3 cup buttermilk
1/8 teaspoon salt
Fresh fruit for garnish

Steps:

  • Place the cream and the sugar in a medium saucepan over medium heat until the sugar dissolves, about 7 minutes. Meanwhile, place the water in a small bowl and sprinkle the gelatin over it, but do not stir. Let it stand for 5 minutes.
  • Stir the gelatin into the warm cream mixture until melted. Stir in the buttermilk and salt and ladle the mixture into 6 6-ounce ramekins. Refrigerate, loosely covered, until set, at least 2 hours.
  • To serve, run the tip of a small knife around the panna cotta and unmold onto individual plates. Let stand until almost at room temperature, about 1 hour. Serve surrounded by fresh fruit.

1 1/4 cups heavy cream
1/3 cup sugar
Pinch each ground cardamom and kosher salt
2 1/2 cups low-fat buttermilk
1/4 cup pomegranate seeds
3 small seedless mandarin oranges, thinly sliced
1/4 cup toasted coconut flakes

Steps:

  • In a small saucepan, soften gelatin in 1/4 cup water for 5 minutes. Add cream, sugar, cardamom, and salt; heat over medium, stirring, until sugar and gelatin dissolve. Stir in buttermilk. Pour into a 1 1/2-quart dish and refrigerate until set, about 3 hours. Serve,sprinkled with pomegranate seeds, oranges, and toasted coconut.
