Steps:

  • Put lukewarm water, milk powder, salt, brown sugar, molasses, butter, whole wheat flour, bread flour, rye flour, caraway seeds, and yeast into the pan of a bread machine in the order suggested by the manufacturer. Select the Grain setting and 2-pound loaf size.

2 packages (1/4 ounce each) active dry yeast
2 cups warm water (110° to 115°), divided
1/4 cup packed brown sugar
1 tablespoon caraway seeds
1 tablespoon canola oil
2 teaspoons salt
2-1/2 cups rye flour
2-3/4 to 3-1/4 cups all-purpose flour, divided

Steps:

  • In a large bowl, dissolve yeast in 1/2 cup warm water. Add brown sugar, caraway, oil, salt and remaining water; mix well. Stir in rye flour and 1 cup all-purpose flour; beat until smooth. Add enough remaining all-purpose flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down; divide in half. Shape each half into a ball; place in 2 greased 8-in. round baking pans or ovenproof skillets. 2 cups bread flour
¼ cup buttermilk
2 tablespoons caraway seeds
1 ½ tablespoons vital wheat gluten
2 teaspoons flaked kosher salt, crushed
1 ¾ cups warm water
2 teaspoons white sugar
⅜ teaspoon active dry yeast

Steps:

  • Mix rye flour, bread flour, buttermilk, caraway seeds, vital wheat gluten, and kosher salt together in a very large bowl.
  • Combine water, sugar, and yeast in a bowl until yeast softens and begins to form a creamy foam, about 5 minutes. Stir yeast mixture into flour mixture until well mixed and caraway seeds are evenly distributed. Cover bowl with plastic wrap and let sit for 18 hours.
  • Transfer dough to a heavily floured work surface. It will be somewhat elongated, so take the right and left sides and fold them into the middle. GERMAN COUNTRY STYLE SOURDOUGH RYE BREAD WITH CARAWAY SEEDS



German Country Style Sourdough Rye Bread With Caraway Seeds image

When I lived in Germany I loved all the different types of breads that were on offer; so many different textures and flavours - lots of them with seeds, onions, cheese and grains. This has to be my all time favourite however - a light and slightly chewy sourdough rye bread with caraway seeds - the very essence of traditional German flavours! This bread has been adapted for the Bread Machine/Maker, and works EXTREMELY well when made this way. However, you can of course make it by hand in the more traditonal manner, as I like to do when I have lots of "bread making time"! This bread makes superb sandwiches and is perfect when served with soups, pates, cold meats, hams, corned beef, cheese and pickles. The "sponge" sourdough starter needs to ferment only overnight, making this a light style sourdough bread. This bread also keeps very well for up to 4 to 5 days.

50 g strong white bread flour
1/2 teaspoon fast-rising active dry yeast
3 tablespoons water
1 tablespoon milk
250 ml tepid water
2 tablespoons caraway seeds
225 g rye flour
2 teaspoons salt
2 tablespoons sugar
225 g strong white bread flour
1 1/4 teaspoons fast-rising active dry yeast

Steps:

  • To make the sourdough Sponge.
  • Mix all the ingredients together to make a smooth paste, cover with a tea towel and leave to ferment overnight at room temperature, for between 8 to 12 hours.
  • To make the bread.
  • When you are ready to make the bread, pour the water into the bucket, followed by all of the sourdough sponge and then add the caraway seeds.
  • The add in this order: rye flour, salt, sugar and then the white bread flour.
  • Finally sprinkle the dried yeast over the top and fit the bucket into the bread machine/maker.
  • Set to the rapid wholemeal setting, for a medium sized loaf (750g) with the crust setting of your choice.
  • Once the bread has cooked - take it carefully out of the bucket and leave to cool on a wire cooling rack. Remove the paddle if it is still in the bread before slicing.
  • Serve with soups, hams, cold meats, cheese and pickles or make sandwiches of your choice.

BEER BARREL CARAWAY RYE BREAD

Like many of my favourite recipes, this came from Bon Appetit magazine. It appeared in the October 1983 edition as part of an article by Rita Sorci. It makes a lovely sandwich with dry salami and mayo and even makes really good toast. I adapted it to make a 2 pound loaf using dough cycle in the breadmaker. The amounts of yeast and salt seem high but they work out very well.

1 (12 ounce) bottle beer (any kind, wheat beer or bock is good)
1 1/2 tablespoons sugar
3 1/4 teaspoons bread machine yeast
3 cups unbleached all-purpose flour
1 1/2 tablespoons honey
1 tablespoon vegetable oil
2 1/4 teaspoons salt
3/4 teaspoon caraway seed
1 cup rye flour
1 egg
1 tablespoon water
1/4 teaspoon salt

Steps:

  • Bring beer to a boil in a saucepan and simmer 3-5 minutes. Do not let it boil over.
  • Measure beer into a measuring cup and add water as needed to make 1 1/2 cups. Let cool if necessary until the right temperature for your machine.
  • Place all ingredients except for the egg, water and 1/4 tsp salt in your breadmaker in the order recommended by the manufacturer.
  • Using "dough" cycle, start breadmaker and allow to complete its mixing, kneading and rising.
  • Transfer dough to a clean oiled counter top and knead lightly.
  • Grease a large baking sheet. Form dough into a long narrow loaf and transfer to baking sheet. Combine glaze ingredients (if you are using them) and brush over the loaf. Cover loosely with greased waxed paper, place in a warm area and let rise until doubled in bulk, about 45 minutes.
  • Bake at 375º about 30-32 minutes or until the loaf sounds hollow when tapped.
  • Cool on a rack before slicing.

I recently got myself a bread machine and made my first loaf with it today. I think it will take some practice to get used to using the machine, but half the fun is learning how. I tweaked the recipe to suit my tastes and didn't use any dairy. This recipe came from the site the-recipes.com. If you do make this be careful to keep the yeast away from the liquids. Best to add the liquids first and the yeast last. I added the caraway seeds right into the mix, but if your bread machine has a timer the machine will beep and let you know when you can add extra things. I'm going to serve with with a nice cold bowl of Vichyssoise.

  • Place 8oz of the rye flour and the yeast in a large mixing bowl. Add around 3/4 cup of tepid water and mix it thoroughly to make a thick batter

I was forced to experiment and find a recipe when my favorite ethnic bakery closed and I could no longer buy my favorite sourdough rye bread. I hope I've done it justice. Start the day before you want the bread -- the sour flavor develops best if allowed a slow rise in the refrigerator.

1 cup sourdough starter, proofed
1 cup warm water
1 1/2 cups rye flour
3 cups bread flour
2 teaspoons salt
2 tablespoons caraway seeds
2 tablespoons canola oil, for oiling the bowl

Steps:

  • Mix sourdough starter with warm water with a whisk until thoroughly combined.
  • Add rye flour a little bit at a time, incorporating well before each addition.
  • Add bread flour in the same way, first in the mixing bowl and then turned out on to a floured surface while kneading, until you get a uniformly elastic ball of dough that is tacky but not sticky. This may take about 10 minutes.
  • Make a hole into the center of the dough and add the salt and caraway seed, and continue kneading another 5 minutes or so, until the seeds are dispersed throughout the bread dough.
  • Coat a bowl with a thin layer of canola oil, add the dough and roll the dough around until all sides are covered with oil. Cover well, and refrigerate for 24 hours.
  • Punch down dough, cut in half and form loaves.
  • Leave out on a warm counter, covered, to rise until doubled in size. The length of time will depend on the vigor of your starter, but this may take a few hours.
  • Preheat oven to 350°F.
  • Bake for 30 - 35 minutes, bread will appear lightly browned.
  • Cool on racks.
  • Freezes well.

40 grams rolled oats
60 grams (approximately 1/2 cup) rye flour

LIGHT RYE BREAD WITH CARAWAY SEEDS

This doesn't use a "starter" and so can be made a little more on demand that the breads where it may take a week or longer to make a starter. It also uses some whole wheat flour as well as rye flour making this loaf is a little "lighter". You can leave out the caraway seeds if you prefer a bread without them. Read the directions thoroughly...I was confused the first time I read through as the flours are added at different times.

2 cups scalded milk
2 tablespoons butter
2 tablespoons sugar
1 teaspoon salt
2 1/4 teaspoons active dry yeast (1 pkg)
1/2 cup lukewarm water
4 cups rye flour
2 1/2 cups whole wheat flour
2 tablespoons caraway seeds
1 egg white (beaten for egg wash)

Steps:

  • In a large heat-proof bowl or stand mixer bowl, pour scalded milk over butter, sugar and salt. Stir and cool.
  • Dissolve the yeast in the lukewarm water. Add softened yeast and 3 c of the rye flour to the milk mixture. Either beating by hand or with the paddle attachment of the stand mixer, beat thoroughly. Add the remaining rye flour and beat again until the flour is thoroughly combined.
  • Scrape dough out into a greased bowl, cover, rise in a warm place until doubled; about 1 hour.
  • If using a stand mixer, scrape dough back into clean bowl and using the dough hook, knead in the whole wheat flour and the caraway seeds until smooth. If you are doing it by hand knead the wheat flour and caraway seeds on a well floured surface.
  • Divide the dough in half and shape into 2 oblong or round loaves. Place on parchment lined or greased baking sheets or in 9x5 loaf pans. Cover and let rise until doubled- about 1 hour.
  • Preheat oven to 450 degrees. Brush loaves with with beaten egg white . Bake for 15 minutes. Reduce heat to 350 and bake 35-40 minutes.
  • Remove from oven and cool on wire racks.
  • For a tender crust, brush with butter about 5 minutes before removing from the oven.
  • Store in an airtight container. Can be frozen.

This recipe earned me a first place ribbon at our state fair a few years ago. The bread's coarse texture makes it great for toasting.

Number Of Ingredients 10

2 packages (1/4 ounce each) active dry yeast
1-1/2 cups warm water (110° to 115°)
2/3 cup honey
3 tablespoons butter, softened
1 tablespoon caraway seeds
1 tablespoon finely grated carrot
1 teaspoon salt
2-3/4 cups rye flour
2 to 3 cups all-purpose flour
Melted butter

Steps:

  • In a large bowl, dissolve yeast in warm water. Add the honey, butter, caraway seeds, carrot, salt, rye flour and 1 cup all-purpose flour. Beat until smooth. Stir in enough remaining all-purpose flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1-1/4 hours. , Punch dough down. Turn onto a lightly floured surface; divide in half. Shape into loaves. Place in two greased 8x4-in. loaf pans. Cover and let rise until doubled, about 45 minutes. , Bake at 350° for 40-50 minutes or until golden brown. Cool for 10 minutes before removing from pans to wire racks. Brush with melted butter. Cool.

Caraway Rye Bread image

I don't know how authentic this recipe is but I do know it is delicious. You can make it free form on baking sheets but I use loaf pans because it's easier for me to bag it up and freeze.

1 1/4 cups coffee
1 1/4 cups water
2 teaspoons brown sugar
2 tablespoons molasses
2 tablespoons caraway seeds
1 tablespoon yeast
2 tablespoons oil
2 teaspoons salt
2 cups rye flour
5 -5 1/2 cups bread flour

Steps:

  • Heat water and coffee in microwave to 110 degrees; pour into large mixing bowl.
  • Add sugar, molasses, caraway seeds, and yeast and stir to dissolve yeast.
  • Let sit for a few minutes for yeast to proof.
  • Stir in oil, salt, and rye flour.
  • Add 2 cups of bread flour and beat for 2 minutes.
  • Stir in enough remaining flour to make stiff dough and knead for about 10 minutes until dough is smooth and elastic (dough will be heavier than plain white bread dough).
  • Place in an oiled bowl and turn to coat all sides of dough; cover and let rise until doubled in size.
  • Punch down and shape into 3 loaves.
  • Place in greased non-stick loaf pans (dark pans help the bottoms brown properly) and let rise until doubled in size.
  • Bake in 375 degree oven for 30 to 40 minutes.
  • Remove from pans immediately and cool on wire rack.

My daughter, Seane Marie, is quite the successful young business woman. Like me, she has a creative mind. She's been making her paternal grandmother's candy recipes as gifts for many years, and this year decided to create a company called "Ingleside Candies" - Ingleside was her grandmother's hometown in Texas. I'm so proud of my baby for carrying on Memaw's tradition. She gave me two bags of the peanut brittle for Christmas (better than See's, I swear!), and on a whim, I thought I'd switch up the date walnut rye bread I was making New Year's day to caraway peanut brittle. It was awesome!

1 1/2 tablespoon(s) active dry yeast
1 1/2 tablespoon(s) kosher salt, plus a little pinch
3 cup(s) lukewarm coffee
2 tablespoon(s) unsweetened cocoa powder
5 1/2 cup(s) bread flour
1 cup(s) rye flour
- cornmeal to cover the pizza stone or cookie sheet
1/2 cup(s) caraway seeds, or more to taste - i like a lot of caraway
1 cup(s) peanut brittle, crushed, but not pulverized
2 tablespoon(s) cornstarch
1/4 cup(s) water

Steps:

  • This recipe, a revamping of one from "Artisan Breads in 5 Minutes a Day", makes 3 one pound loaves, or as many smaller loaves as you want. It can be doubled or halved. An ounce of dough is about right for a dinner roll.
  • Put yeast, salt, and warm coffee in a big bowl. No need to stir it up. If you get a few bubbles in a minute or two, your yeast is good. Proceed to step 2.
  • Add the bread flour, rye flour, and cocoa powder, and blend until smooth with an electric beater and dough hook or a wooden spoon.
  • Cover loosely with a clean dish towel and let it sit at room temperature for 2 to 4 hours. BUT NO MORE THAN 4 HOURS! Bread left to rise for too long will develop alcohol. Drunken bread sounds fun, but it's not very tasty, trust me.
  • After 2 hours at room temperature, you can either proceed to the next step or refrigerate your dough for up to 2 weeks. You can also divide and freeze it.
  • When you're ready to bake, line one or more cookie sheets or pizza stones with parchment, and cover with dry cornmeal.
  • Wet your hands and pull off as much of the dough as you want to use that day.
  • Form the dough into a large disc by pulling out and rolling under at the edges. Then flatten it on a clean wet surface to about a 1/4" thickness.
  • Sprinkle an appropriate percentage of the caraway seeds evenly onto the dough, depending on the size of your loaf, making sure to get some caraway to the very edges.
  • Sprinkle the crushed peanut brittle evenly onto the dough.
  • Starting from the side farthest from you, with wet hands, roll the dough toward you. Use a wet spatula to release the dough from the surface if it gets stuck.
  • Shape the dough into a loaf or roll and transfer it to the cornmeal covered cookie sheet or pizza stone.
  • Cover loosely with a clean dish towel and let it rest 40 minutes for room temperature dough, or 1 hour and 40 minutes for refrigerated dough.
  • 20 minutes before baking, preheat the oven to 400 F.
  • 5 to 10 minutes before baking, use a fork or whisk to blend the cornstarch with the 1/4 cup of water until smooth.
  • Put the cornstarch water in the microwave for a minute or two, or heat it in a small saucepan, stirring constantly, until it is glossy. You just want the cornstarch to form bonds with the water.
  • Just before baking, brush the tops of the loaves with the cornstarch mixture.
  • With a sharp, wet knife, make a few slices in the top of the loaf to allow it to expand while baking. If the knife is sharp, it won't collapse the risen dough.
  • Bake at 400 F for 35 to 40 minutes - more or less depending on the size of the loaves. Toward the end, you can pick up a loaf and check the underside. If it still seems too wet on the bottom, continue baking. Dinner rolls might only take 20 minutes or so - keep a close eye on them to make sure you don't over bake them.
