1/2 cup blanched almond (2 oz)
1/2 cup unsalted roasted cashews (2 oz)
1/2 cup whole pecans (2 oz)
1/2 cup whole walnuts (2 oz)
vegetable oil, for greasing foil
1/4 cup sugar
1/4 cup water
1 1/2 tablespoons honey

Steps:

  • Preheat oven to 350°F.
  • Combine almonds, cashews, pecans, and walnuts in a large bowl.
  • Line baking pan with foil and lightly oil.
  • Bring sugar, water, and honey to a boil in a small saucepan over moderate heat, stirring until sugar is dissolved.
  • Pour over nuts and stir until nuts are well coated.
  • Transfer nuts with a slotted spoon to baking pan (discarding syrup) and roast in 1 layer in middle of oven, stirring nuts occasionally, until golden brown, 10 to 12 minutes.
  • (gotta watch them, they burn easily) Lightly oil another sheet of foil, spread nuts in 1 layer on foil and cool completely.
  • Break apart any nuts that are stuck together.

WARM SPINACH SALAD W/ CARAMELIZED ONION, MUSHROOM, FETA AND NUTS



Warm Spinach Salad W/ Caramelized Onion, Mushroom, Feta and Nuts image

An incredible salad. Cook so the spinach just gets warm and coated with the carmalized onion dressing! It smelled and tasted so good, I'm going to have to wait until next time to snap a picture of it. I usually serve this salad with some sort of white fish and other veggie as a main course. It may seem like a lot of butter, but it's what makes up the dressing and is necessary. I used "I can't believe it's not Butter" to cut the saturated fat in half that real butter would give and it came out great! The idea for this salad came out of a vegetables book in the grocery store and was a real winner!

4 tablespoons butter or 4 tablespoons I Can't Believe It's Not Butter® Spread
1 large sweet onions (sliced into thick bite sized pieces) or 2 medium yellow onions (sliced into thick bite sized pieces)
8 -10 large mixed mushrooms (cut in half)
1/2-1 teaspoon anchovy paste (a squirt from the tube about 3/4 inch to 1 inch long)
1 (4 ounce) package feta cheese (crumbled)
1/4-1/2 cup almonds or 1/4-1/2 cup pecans
1 (9 ounce) bag fresh spinach leaves or 5 -6 cups fresh spinach leaves

Steps:

  • Melt the butter in a deep frying pan or pot that will eventually be able to handle all the spinach being tossed around in it.
  • Toss in the onions and mushrooms and turn down the heat to medium low / low medium. Allow onions and mushrooms to caramelize for approx 30 minutes until onions are soft, transparent and golden stirring occasionally. This is a prime time to get the main course a cookin! These onions can be made well in advance and then reheated for just the moment you want to serve the salad. If the onions start to dry out with the amount of butter used add a little more. 4 Tbsp Butter worked out for me at the heat I caramelized the onions on.
  • Stir in the squirt of anchovy paste (optional), pine nuts (or nut of choice) and the crumbled feta a little sea salt and black pepper for taste with the caramelized onions and mushrooms. Once these are somewhat warm and melted, carefully fold in the spinach leaves until they're all coated, making sure not to cook too long. We don't want them soggy or wilted, just coated and warm. Serve immediately and enjoy!

1 cup granulated sugar
2 cups whole macadamia nuts (about 9 ounces)
1 pound bittersweet chocolate, chopped
1/3 cup confectioners’ sugar

Steps:

  • Place granulated sugar and macadamia nuts in a 4-quart saucepan. Cook over medium-high heat, stirring constantly with a wooden spoon, until the sugar melts and begins to recrystallize and the nuts become white and coated with sugar, about 12 minutes. Transfer the nuts to a baking sheet, and set aside until cool enough to handle. Separate the nuts, and let cool completely.
  • Line a baking sheet with parchment paper. In a medium bowl, melt the chocolate in the top of a double boiler or a heatproof bowl set over a pan of simmering water. Using a fork, dip the sugared nuts in the melted chocolate, coating completely. Place on a lined baking sheet. Refrigerate until chocolate has set.
  • Coat nuts a second time, as in step 2, with chocolate. Refrigerate until set.
  • Sift confectioners' sugar over a baking pan. Roll nuts in sugar. Transfer the sugar and the nuts to an airtight container, and store in a cool, dry place up to 1 week.

VEAL MEDALLIONS WITH CARAMELIZED APPLES, BEEREN AUSLESE RIESLING, AND PINE NUTS

4 tablespoons pine nuts
8 (3 ounce) veal medallions (2 per person)
Salt and freshly ground white pepper
1 tablespoon flour
2 tablespoons oil
1 cup Beeren Auslese Riesling
1/2 cup brown chicken stock, recipe follows
6 tablespoons unsalted butter
2 apples, peeled, seeded and cut into eighths
1/2 lemon, juiced
3 cups watercress
3 tablespoons Shallot-Citrus Vinaigrette, recipe follows
5 to 6 pounds chicken bones, including necks and feet, coarsely chopped
1 medium onion, peeled, trimmed, and thinly sliced
2 cups water, plus 3 quarts
3/4 cup fresh orange juice
1 teaspoon minced shallot
1/2 teaspoon minced fresh thyme leaves
1 tablespoon balsamic vinegar
1/2 teaspoon orange zest
1/3 cup extra virgin olive oil
Salt
Freshly ground black pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • Toast the pine nuts in the oven in a pan. When browned, remove and set aside.
  • Season both sides of the veal medallions with salt and pepper, and then dust each side very lightly with flour. Pat off any excess.
  • Heat the oil in a heavy saute pan large enough to hold the veal without crowding it. When the oil is hot, brown the medallions approximately 3 minutes per side, or until they are golden brown and just cooked through. Transfer the meat to a heated plate and keep warm. Pour off any excess fat from the pan.
  • Deglaze the pan with the wine, and then reduce to 1/4 of a cup. Add the stock and also add any of the veal juices that have collected on the plate. Reduce the sauce until it thickens slightly. Slowly whisk in 4 tablespoons of the butter, a little at a time. Season the sauce, to taste, with salt and pepper and strain into a small saucepan. Keep warm.
  • In a medium saute pan, heat the remaining 2 tablespoons of butter. Add the sliced apples, and the lemon juice. Saute until tender and golden brown.
  • Mix watercress with citrus vinaigrette. Divide watercress evenly among 4 plates. Place a few slices of apple on top of the salad. Top with 2 veal medallions per plate, and spoon sauce over meat. Sprinkle with the reserved pine nuts.
  • Preheat the oven to 400 degrees F.
  • Spread the bones and onion slices in a roasting pan and set in the oven. Turn the bones to brown all sides until they are a deep golden brown, about 30 minutes. Do not allow them to burn, since that will give the stock a bitter taste.
  • Transfer the bones and onion to a stockpot, and place the roasting pan on the stove. Over medium high heat, deglaze the pan with 2 cups of water, scraping up all the bits that stick to the bottom of the pan. Pour into the stockpot and add 3 quarts of water. Bring to a boil, lower heat, and simmer for 3 hours.
  • Strain into a clean stockpot and boil for 20 to 30 minutes, until the stock is reduced to 2 cups. At this point, the stock is more concentrated and more flavorful. Strain into a clean bowl and cool.
  • Since brown stock is primarily a base for sauces and only a small amount is used, pour the cooled stock into an ice-cube tray. When completely solid, release the cubes, enclose in a plastic bag, and return to the freezer. When needed, one or two cubes can be defrosted and used.
  • In a medium saucepan, bring orange juice to a boil. Lower to a simmer and reduce until only 1/3 cup remains. Cool to room temperature.
  • In a medium bowl, combine orange juice, shallot, thyme, vinegar and orange zest.
  • Slowly whisk in olive oil until thick and emulsified. Season with salt and pepper. Refrigerate until needed.

1/2 cup blanched almonds (2 ounces)

Steps:

  • Toast hazelnuts in a shallow baking pan until fragrant and a shade darker, about 8 minutes.
  • When hazelnuts are cool enough to handle, wrap in a kitchen towel and rub to remove skins. (Not all skins will come off.) Transfer hazelnuts to a large bowl with almonds, cashews, pecans, and walnuts. Line baking pan with foil and lightly oil.
  • Bring sugar, water, and honey to a boil in a small saucepan over moderate heat, stirring until sugar is dissolved. Pour over nuts and stir until nuts are well coated. Transfer nuts with a slotted spoon to baking pan (discarding syrup) and roast in 1 layer in middle of oven, stirring and redistributing nuts occasionally, until golden brown, 10 to 12 minutes.

2 ounces white chocolate
12 ounces eggs
1 cup plus 4 tablespoons sugar
2 cups cake flour, sifted
4 tablespoons butter, melted
6 ounces finely chopped macadamia nuts
7 ounces pineapple
1 cup sugar
1/2 -ounce star anise
1/2 -ounce cinnamon stick
1 vanilla pod
6 tablespoons butter
12 ounces macadamia nuts
2/3 cup sugar
6 ounces milk
1 gelatin leaf
8 ounces white chocolate
12 ounces whipped cream
4 tablespoons mango puree
4 teaspoons gelatin

Steps:

  • Chocolate Ring:
  • Begin by melting the milk and white chocolate. Cut 4 sterilized, food-safe flexible plastic strips 1 1/2 inches wide and 5 inches long. Spread a thin layer of milk chocolate on the plastic strips. Using the tine of a fork, scrape the length of the strip through the chocolate to create lines. Spread a layer of white chocolate immediately, directly over and then fold to form a ring. Seal edge with a plastic strip. Set aside to harden.
  • Preheat the oven to 360 degrees F.
  • Mix the sponge by whisking the eggs and sugar on high speed for 15 minutes, until pale yellow and thick. Take out of the mixer and fold in by hand the sifted flour, chopped macadamia nuts, and melted butter. Spread thinly on a buttered, floured and parchment lined baking tray and bake for 15 minutes.
  • Lower the oven to 340 degrees F.
  • To roast pineapple, begin by cutting the pineapple into grape size pieces and then toss in sugar and spices. Bake for 2 hours. Let cool.
  • To caramelize the macadamia nuts, first warm the nuts in the oven for 5 minutes. While nuts are warming, place the sugar in a small saucepan and cook over medium heat until the sugar melts and turns an amber color, about 10 minutes. Carefully add the nuts to the sugar mixture and stir to coat the nuts. Carefully remove from the pan and cool on a marble table or baking tray.
  • To make mousse, boil the milk, remove from the heat and add the gelatin while mixing in the white chocolate. Cool down slightly before folding in the whipped cream.
  • To make the jelly, melt the gelatin with the mango puree and strain into a container for future use.
  • To plate, place a circle of sponge in the base of the chocolate ring, sprinkle with chopped caramelized macadamias. Pipe 1/3 of the cup with mousse; place a spoonful of pineapple mix, top with mousse and a layer of mango jelly. Place in the refrigerator for 1 to 2 hours. Once chilled, remove the plastic strip, top with caramelized macadamia nuts and macadamia sponge.
  • Serve immediately.

1 teaspoon kosher salt
Freshly ground black pepper
3 tablespoons grapeseed oil
3/4 cup grapeseed oil, divided
1/2 cup pine nuts
1 teaspoon Sichuan peppercorns
2 shallots, diced
1 3-inch piece of ginger, peeled and diced
Zest of one orange
1/2 cup Champagne vinegar
kosher salt
Freshly ground black pepper
1/4 cup black sesame seeds
1/2 bunch scallions, chopped

Steps:

  • For the broccoli: Preheat oven to 375 F. Prepare the broccoli by cutting away and discarding the bottom of the stalk, then slicing lengthwise into "steak" pieces. Cut the pieces in half, then lengthwise again. Place in a large bowl and toss with salt, pepper, and grapeseed oil. Place on a rimmed baking sheet and roast in the oven, 15 minutes.
  • For the vinaigrette: In a small skillet, heat 1/2 tsp grapeseed oil and toast the pine nuts until lightly brown and aromatic, about 4 minutes. Remove from heat and add the peppercorns. Toss and set aside. In a food processor, blend the remaining grapeseed oil, shallots, ginger, and orange zest. While the motor is running, add the vinegar in a steady stream to combine; then taste to adjust the seasonings with salt and pepper. Scrape mixture into a bowl, and stir in sesame seeds, pine nuts, peppercorns, and scallions. Vinaigrette will be chunky.
  • Remove the caramelized broccoli from the oven to a mixing bowl and add the vinaigrette. Toss to coat and serve.

3 tablespoons pine nuts
2 teaspoons extra virgin olive oil
1 cup chopped onion
4 cups broccoli florets

Steps:

  • Add oil to pan and heat over medium heat. Add onion and salt. Cook, stirring occasionally until soft and golden brown. Approximately 15-20 minutes.
  • Steam the broccoli until just tender. Transfer to a large bowl. Add the nuts, onion, and pepper. Toss to coat and serve immediately.

1/2 cup granulated sugar
1 1/2 cups cashews
2 teaspoons butter
1/8 teaspoon cayenne pepper
Pinch salt
2 tablespoons butter
1 cup shredded coconut
2 cups whole milk
2 cups coconut milk
2 cups coconut ice cream
1/2 teaspoons ground nutmeg
1/2 teaspoon ground cinnamon
2 teaspoons freshly chopped mint leaves

Steps:

  • Nuts:
  • Place sugar into heavy bottomed saucepan and cook over a high flame until sugar begins to change color and become golden brown.
  • Add cashews, butter, cayenne pepper and pinch of salt. Stir to coat all the nuts with evenly with the sugar. Spread onto waxed paper lined sheet pan and allow to set. Be careful as the nuts will be very hot. When cool break up into small bite-size clumps and set aside.
  • Soup:
  • Melt the butter in a large sauce pot, over medium heat, and add the coconut. Toast the coconut until golden brown. Add whole milk, coconut milk, coconut ice cream, and spices. Lower the heat and stir constantly until the mixture is heated through.
  • Place in serving bowls and garnish with caramelized nuts and chopped mint.

With my Pecan Bounty this is one way to preserve nuts. Pecans, Walnuts etc. You may chip fine or leave in bigger clumps. Sprinkle on a variety of foods from deserts, ice cream, salads or a snack from a bowl.

CARAMELIZED NUTS
1/2 cup(s) nuts
2 tablespoon(s) brown sugar
1/2 tablespoon(s) light corn syrup
1/2 tablespoon(s) butter

Steps:

  • Place brown sugar, corn syrup, and butter in a non stick, heavy skillet on a stove top burner set to medium to medium high temperature. Stir as it begins to bubble. Add nuts and stir to cost well. Continue cooking and stirring about 5-7 minutes.
  • Transfer to cookie sheet lined with Parchment Paper, spread out while warm. Cool completely, break apart with fingers. May Pulse pieces in a 1 cup food processor and freeze in pint plastic freezer bag to use later. Leave in bigger pieces to dress up foods or leave in a small closed container as a snack.
