Grilled Pork Chops with Roasted Apples and Steamed Brussels Sprouts in Caramelized Onions image

4 (1 1/2-inch) thick pork chops
1 tablespoon salt
1 tablespoon onion powder
1 tablespoon garlic powder
1 teaspoon black pepper
1 teaspoon ground coriander
1/4 cup olive oil
1 tablespoon sesame seed oil
1 tablespoon dried herbs (blend of dried and ground oregano, thyme, rosemary, black pepper, and basil, recommended: Daddy's)
4 Granny Smith apples, quartered
1 1/2 sticks butter, melted and slightly browned
1/4 cup ground cinnamon
2 tablespoons ground nutmeg
1/4 cup brown sugar
2 1/2 pounds Brussels sprouts
3 cups water
3 tablespoons olive oil
1 large onion, sliced thin
1 tablespoon onion powder
1 tablespoon garlic powder
1 tablespoon dried herbs (blend of dried and ground oregano, thyme, rosemary, black pepper, and basil, recommended: Daddy's)
1 teaspoon paprika
2 chicken bullion cubes
salt and pepper

Steps:

  • Pork Chops:
  • Wash and season the chops with salt, onion powder, garlic powder, black pepper, coriander, olive oil, sesame seed oil, and dried herbs. Marinate in the refrigerator for a minimum of 2 hours or up to 24 hours.
  • Preheat a grill or grill pan to medium high. Preheat oven to 375 degrees F.
  • Remove chops from marinade and place on the preheated grill. Grill chops on both sides for about 2 minutes each side. Transfer to an ovenproof dish and place in the oven until done. Set aside and keep warm.
  • Apples:
  • Raise oven to 400 degrees F.
  • Place the apples in a large bowl and add half of the butter, cinnamon, nutmeg, and brown sugar. Mix well and let sit for 20 minutes.
  • Place apples on a greased baking sheet and pour the remaining butter over the apples. Put in the oven and roast until caramelized and fork tender. When serving, pour the juices over the apples.
  • Brussels Sprouts:
  • Cut ends off Brussels sprouts and wash them. In a pasta pot with insert bring the water to a boil. Add Brussels sprouts, cover, and steam for 7 minutes. Drain.
  • Heat a skillet over medium-high heat and add the olive oil. Add the onions and saute until caramelized. Add the Brussels sprouts, onion powder, garlic powder, dried herbs, paprika, and bouillon cubes, crushing the cubes to combine with the onion mixture. Saute Brussels sprouts until browned. Lower heat, cover and simmer until Brussels sprouts are fork tender. Serve with pork chops and apples.

Vietnamese Caramelized Grilled Pork image

6 (1/4-inch-thick) boneless pork loin chops
1/3 cup sugar
1/4 cup finely chopped shallots (about 2)
1 tablespoon fresh lime juice
1 tablespoon Asian fish sauce
1/2 teaspoon salt

Steps:

  • Pound chops between 2 large sheets of plastic wrap with flat side of a meat pounder or with a rolling pin until less than 1/8 inch thick. Make several small 1/4-inch-deep slits around edge of each chop to prevent curling, then halve chops lengthwise and transfer to a bowl.
  • Cook sugar in a dry 1-quart heavy saucepan over moderate heat, undisturbed, until it begins to melt. Continue to cook, stirring occasionally with a wooden spoon, until sugar is melted into a golden caramel. Add shallots, lime juice, fish sauce, and salt (caramel will harden) and cook, stirring constantly, until caramel is dissolved and shallots are softened, about 2 minutes. Pour sauce over pork and toss until well coated.
  • Heat a lightly oiled well-seasoned ridged grill pan over moderately high heat until hot but not smoking, then grill pork in batches, turning over once, until just cooked through, about 1 minute per side. (Discard any remaining caramel sauce.)

3 tablespoons olive oil
8 cloves garlic, peeled
1 red bell pepper, roasted, peeled and coarsely chopped
2 ancho chiles, soaked in boiling water until soft, seeded
1 slice white bread, crust removed, cut into small cubes
1/4 cup red wine vinegar
1/2 cup walnuts, divided
1/4 cup golden raisins, divided
1/4 cup dried apricots, coarsely chopped
2 pork tenderloins (1 1/2 pounds each) butterflied
Salt and freshly ground pepper
Walnut Romesco
2 tablespoons olive oil
2 tablespoons unsalted butter
1/2 cup thinly sliced shallots
2 tablespoons sugar
Salt and freshly ground pepper
1/2 cup red wine
1/2 cup white wine
1 cup coarsely chopped dates
5 cups homemade chicken stock
1 tablespoon molasses

Steps:

  • Heat the oil in a medium saute pan over high heat, until smoking. Saute the garlic, bell pepper, chiles, and bread cubes until lightly browned, about 2 minutes each. Stir in half of the walnuts. Remove each ingredient with a slotted spoon as it is done. Deglaze the pan with the vinegar. Place all sauteed ingredients and the deglazing liquid into a food processor and blend until smooth. Add the remaining walnuts, raisins and apricots and puree until smooth and thickened, season with salt and pepper.
  • For the Grilled Pork Tenderloin: Preheat grill or oven to 400 degrees F. Season both sides of the pork tenderloin with salt and pepper. Spread a thin layer of the Walnut Remesco down the center, fold each side over the filling, and tie with butcher's twine. Brush each tenderloin with oil and grill for 4 to 5 minutes on each side or until just cooked through. If using oven, heat oil in a large ovenproof saute pan over high heat. Sear the meat on both sides, until golden brown, place in oven and roast for 10 minutes. Let rest 10 minutes before slicing.
  • For the Caramelized Date Sauce: Melt the butter in a medium saucepan over medium heat. Add the shallots and the sugar and cook until caramelized, about 5 to 7 minutes. Season with salt and pepper to taste. Increase the heat to medium-high. Add both wines and reduce the mixture to 1/4 cup. Add the dates, stock and molasses and continue cooking until reduced to 2 cups, and reaches the consistency of a slightly thick sauce, about 30 minutes, keep warm.
  • To serve, slice tenderloin into 1-inch thick pieces and top with a little Remesco sauce and drizzle with date sauce.

1 ½ quarts water
5 tablespoons kosher salt
2 tablespoons white sugar
6 pork loin chops, 1/2 inch thick
½ cup olive oil
4 cloves garlic, minced
1 tablespoon fresh rosemary, minced
½ cup balsamic vinegar
1 tablespoon butter
1 tablespoon olive oil
2 Vidalia onions, each cut into 8 wedges
2 pears, cored and each cut into 8 wedges
1 teaspoon salt

Steps:

  • In a large bowl, stir together the water, kosher salt, and sugar. Add pork chops to this brine, and let them soak for no more than one hour. Drain and discard the brine. Pat pork chops dry with paper towels.
  • In a shallow dish, stir together the olive oil, garlic, and rosemary. Place pork chops in the dish, and turn to coat. Cover, and marinate in the refrigerator for at least 1 or 2 hours.
  • Pour the balsamic vinegar into a small saucepan. Bring to a boil, and cook until reduced by 1/2, about 10 minutes. When the vinegar cools, it should be the consistency of syrup.
  • Melt butter with olive oil in a large skillet over medium-high or high heat. Add the onions and pears, and quickly brown being careful to keep the wedges intact. Once the onions and pears are browned, reduce heat to low, and cook for about 7 minutes, or until tender. Stir in the reduced vinegar and salt. The recipe can be prepared up to this point several hours before grilling.
  • Preheat the grill for medium-high heat.
  • Warm pears on a cool section of the grill (in the skillet), while placing the pork chops over the hot part. Cook pork for about 3 minutes per side, or to desired doneness. Remove to a serving plate, cover with aluminum foil and let rest for a few minutes. Uncover, top with the pear onion sauce, and serve.

6 boneless pork chops (1/4 inch thick)
1/2 cup sugar
1/4 cup shallot, chopped
1 tablespoon lime juice
1 tablespoon asian fish sauce
1/2 teaspoon salt

Steps:

  • Pound chops between 2 sheets of plastic wrap or wax paper with a meat pounder (flat side) or rolling pin until meat is 1/8 inch thick.
  • Make several small slits around edge of each chop.
  • Half each chop lengthwise and transfer to bowl.
  • In a saucepan cook sugar over medium heat until it begins to melt, continue cooking stirring until sugar is melted into a golden caramel.
  • Add shallots, lime juice, fish sauce and salt and cook 2 minutes longer or until caramel is dissolved and shallots are softened.
  • Pour sauce over pork, toss.
  • Heat a grill pan over heat until hot, but not smoking.
  • Grill pork in batches, turning once until cooked through (1-3 minutes per side).
  • Discard any remaining caramel sauce.
