This is from the Weight Watchers Slim Ways Grilling cookbook. It sounds really simple and good. Here's what the cookbook says about it - "This naturally sweet condiment is perfect with grilled fish or chicken--or try it on burgers made with beef, chicken, turkey or fish."

2 teaspoons olive oil
1/4 teaspoon salt
4 cups onions, thinly sliced
1 teaspoon cider vinegar
2 teaspoons fresh gingerroot, slivered pared

Steps:

  • Place medium skillet over medium heat 30 seconds; heat oil 30 seconds more.
  • Add onions and 1/4 cup water; cook, stirring frequently, until just beginning to color, about 12 minutes.
  • Add ginger, salt and 1/4 cup water.
  • Continue cooking, stirring frequently, until onions are sweet and deep brown, about 30 minutes.
  • Just before using, stir in vinegar.
  • SERVING (3 TABLESPOONS) PROVIDES: 1/2 Fat, 2 Vegetables.

1/4 cup maple syrup
2 tablespoons maple syrup
3 tablespoons teriyaki sauce
1 tablespoon lemon juice
2 teaspoons minced garlic
6 (6 ounce) swordfish fillets
1 large vidalia onion
2 teaspoons butter, melted

Steps:

  • Combine 1/4 cup maple syrup, teriyaki sauce, lemon juice and garlic in a large zipper bag. Add fish. Marinate in refrigerator for 20 minutes.
  • Prehet grill. While fish marinates, coat one side of 12-in square of tin foil. Place onions on half of tin foil. Combine 2 T maple syrup and butter, stirring well. Drizzle syrup mixture over onions. Fold foil over onion and crimp edges to seal.
  • Place foil packet on grill. Cover and grill for 20 minutes or until onion is tender and golden. Set aside and keep warm.
  • Remove fish from marinade, reserving marinade. Place marinade in a small saucepan and bring to a boil. Set aside.
  • Place fish on grill rack and grill 4-6 minutes on each side or until fishflakes easily with a fork, basting often with reserved marinade.
  • Place fish on platter, top evenly with onions.

This recipe comes from my Weight Watchers Magazine, November/December 2008. This issue has several "make ahead recipes" for easy Holiday planning. "Make 1 month ahead." 1 point for a 1 1/3 cup serving.

1 tablespoon olive oil
1 (16 ounce) bag white pearl onions, frozen
1 1/4 cups water
1 (16 ounce) bag baby carrots
1 tablespoon sugar
1/2 teaspoon dried thyme
1/2 teaspoon salt
1/2 teaspoon black pepper

Steps:

  • Heat the oil in large nonstick skillet over high heat. Add the onions and cook, stirring occasionally, just until softened, about 2 minutes. Add 3/4 cup of the water and cook, stirring occasionally, until the water evaporates, 5-6 minutes.
  • Add the carrots, sugar and thyme; reduce the heat and cook until the onions are golden, about 6 minutes. Add the remaining 1/2 cup of water, salt and pepper; cook until the vegetables are crisp-tender, about 3 minutes.
  • If making ahead, let cool; freeze in an airtight container up to 1 month. Thaw in the refrigerator overnight. Cook in a skillet with 1/3 cup water until hot and the water evaporates.
