Crust
3 cups pecans, toasted (about 11 ounces)
1/2 cup firmly packed golden brown sugar
3 tablespoons butter, melted
Filling
2 1/2 cups chilled whipping cream
1 cup firmly packed golden brown sugar
8 large egg yolks
1 1/2 cups canned solid pack pumpkin
1/2 cup light corn syrup
3 tablespoons dark rum
1 1/2 teaspoons ground ginger
3/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
Topping
1 1/2 cups pecan halves, toasted (about 5 1/2 ounces)
1 17-ounce jar butterscotch caramel fudge sauce

Steps:

  • For Crust:
  • Preheat oven to 350°F. Finely chop nuts and sugar in processor. Add butter and blend, using on/off turns, until moist crumbs form. Using plastic wrap as aid, press mixture onto bottom and all the way up sides of 9-inch-diameter springform pan with 2 3/4-inch-high sides, covering completely. Freeze 10 minutes. Bake crust until golden, about 10 minutes. Cool.
  • For Filling:
  • Whisk 1 cup cream, sugar and yolks in heavy medium saucepan. Stir constantly over medium heat until candy thermometer registers 160° about 6 minutes. Strain into large bowl. Using electric mixer, beat mixture until cool and slightly thickened, about 8 minutes. Beat in pumpkin, corn syrup, rum and spices.
  • Using electric mixer, beat remaining 1 1/2 cups cream in large bowl to medium-stiff peaks. Fold cream into pumpkin mixture. Transfer filling to crust. Cover and freeze overnight.
  • For Topping:
  • Arrange pecans side by side atop torte, covering completely. Drizzle 1/2 cup caramel sauce over, covering nuts completely (pan will be filled to top). Freeze until caramel sets, at least 3 hours or overnight.
  • Run sharp knife around pan sides to loosen torte. Release pan sides. Stir remaining caramel sauce in heavy small saucepan over medium heat until warm. Slice torte and serve with sauce.

Sinfully delicious! Found this recipe in my America's Test Kitchen's Family Cookbook. Prepare the casserole the night before and add the topping just before baking. Great way to use up your leftover homemade bread. As you can see this is one of those 'splurge' recipes . . . . do not make substitutes! Time indicated includes soaking. This recipe can easily be cut in half to serve four!!

1 loaf French bread, sliced 1/2 inch thick (I use sourdough)
8 large eggs
2 cups whole milk
2 cups half-and-half
1 tablespoon sugar
2 teaspoons vanilla extract
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
12 tablespoons butter (1 1/2 sticks)
1 1/3 cups light brown sugar, packed
3 tablespoons corn syrup
1 1/2 cups pecans, chopped

Steps:

  • Casserole:.
  • Heat oven to 325°F.
  • Arrange bread in a single layer on two baking sheets.
  • Bake bread until dry and lightly browned; about 25 minutes.
  • Remove from oven and allow bread to cool.
  • Butter or spray the bottom and side of 9 by 13 pan with non-stick cooking spray.
  • Layer the baked bread tightly in the prepared dish; you should have two layers.
  • Whisk together the eggs, milk, half and half,sugar, vanilla, cinnamon and nutmeg.
  • Pour evenly over bread.
  • Press lightly on the bread to submerge. (I've found it helpful to cover the pan with plastic wrap and then place a weighted saucer on the top).
  • Refrigerate for 8 to 24 hours.
  • Before Baking:.
  • Preheat oven to 350°F.
  • Mix the butter, brown sugar and corn syrup together until smooth.
  • Stir in the pecans.
  • Spoon the topping over the casserole and spread evenly.
  • Place the dish on a rimmed baking sheet and bake until puffed and golden, about 60 minutes.
  • Cool for 10 minutes before slicing and serving.

3/4 cup pecans, toasted
1 1/2 cups graham cracker crumbs
2 tablespoons (packed) golden brown sugar
6 tablespoons (3/4 stick) unsalted butter, melted
2 quarts butter pecan ice cream, slightly softened
Purchased caramel ice cream topping

Steps:

  • Coarsely shop nuts in processor. Set aside 1/4 cup nuts for garnish. Add graham cracker crumbs and brown sugar to remaining nuts in processor and blend until nuts are finely ground. Add melted butter and process until moist clumps form. Press nut mixture onto bottom and up sides of 9-inch pie dish. Freeze crust 15 minutes.
  • Spoon ice cream into crust, packing firmly and mounding in center. Freeze pie until ice cream is firm, about 1 hour.
  • Drizzle some caramel topping over pie. Sprinkle with reserved chopped nuts. Serve pie immediately or cover and freeze up to 2 days

  • Preheat oven to 350°F In a mixing bowl, beat eggs slightly with fork. Add sugar, stirring until dissolved. Stir in caramel topping and butter; mix well. Stir in pecan halves. Pour filling into pie shell. Bake at 350°F for 45 minutes or until knife inserted off-center comes out clean.

2 pie crusts
4 -5 medium apples
3/4 cup sugar
4 tablespoons flour
1/2 teaspoon cinnamon
1/4 teaspoon salt
2 tablespoons butter
caramel, pecan topping
4 tablespoons butter
1/2 cup brown sugar
2 tablespoons milk 1/2 cup pecans

Steps:

  • Place one pie crust in a 9 inch deep dish pie pan.
  • Fill pie crust with sliced or cubed apples.
  • Mix sugar, flour, cinnamon and salt in a bowl.
  • Pour this mixture over apples and top with butter.
  • Seal top crust to bottom crust.
  • Cut ventilation holes in top of crust. (If crust is not well sealed it will leak when baking. I bake on a cookie sheet).
  • Bake at 350 degrees for 50 minutes or until crust is done.
  • Remove from oven, press down top.
  • Mix butter brown sugar and milk in a pan and bring to a boil.
  • Add pecans to this mixture and stir to coat.
  • Pour over pie and return to oven for 5 minutes.

1 1/2 cups (150 g) pecans, toasted
3 tablespoons (45 g) packed light brown sugar
3 tablespoons (1 1/2 ounces/45 g) unsalted or salted butter, melted
1/4 teaspoon ground cinnamon
Filling
1 1/2 pounds (675 g) cream cheese, at room temperature
1 1/4 cups (250 g) granulated sugar
Grated zest of 1/2 lemon, preferably organic
4 large eggs, at room temperature
2 tablespoons (15 g) all-purpose flour
1/2 cup (120 g) plain whole-milk yogurt
1 can (15 ounces/425 g) pumpkin purée
1 teaspoon ground cinnamon
3/4 teaspoon ground ginger
1/4 teaspoon freshly ground nutmeg
1/4 teaspoon ground cloves
Large pinch of salt
1 teaspoon vanilla extract
Topping
6 tablespoons (3 ounces/85 g) salted butter, cut into small pieces
1/2 cup (125 ml) heavy cream
1 cup (215 g) packed dark brown sugar
1/4 cup (60 ml) light corn syrup or agave nectar
1/2 teaspoon salt
1/4 cup (60 ml) whiskey
1 1/2 cups (150 g) pecan pieces, toasted
1 teaspoon freshly squeezed lemon juice

Steps:

  • Preheat the oven to 350°F (175°C). Lightly butter the bottom and sides of a 9-inch (23-cm) springform pan.
  • To make the crust, in a food processor fitted with the metal blade, pulse the 1 1/2 cups (150 g) pecans, light brown sugar, 3 tablespoons (1 1/2 ounces/45 g) melted butter, and 1/4 teaspoon cinnamon until the nuts are in fine pieces and the mixture begins to hold together. Transfer the mixture to the prepared springform pan and press it evenly into the bottom and a little way up the sides. Bake until deep golden brown, about 15 minutes. Let cool completely.
  • Wrap a large sheet of aluminum foil around the outside of the springform pan, making sure it's absolutely watertight. Set the pan in a large roasting pan.
  • To make the filling, in a stand mixer fitted with the paddle attachment (or in a bowl by hand), beat together the cream cheese, granulated sugar, and lemon zest on medium-low speed just until smooth. Add the eggs, one at a time, stopping the mixer and scraping down the sides of the bowl as needed, until completely incorporated. Mix in the yogurt, pumpkin, cinnamon, ginger, nutmeg, cloves, large pinch of salt, and vanilla until combined.
  • Scrape the filling into the crust in the pan. Pour hot water into the roasting pan to reach halfway up the outside of the springform pan. Bake until the edges are just set and the center still quivers, about 1 hour and 15 minutes.
  • Remove the roasting pan from the oven and let the cheesecake stand in the water bath for 30 minutes. Dip the blade of a sharp knife in hot water and run it around the sides of the cheesecake to loosen it from the sides of the pan, then remove the cheesecake from the water bath. Let cool completely, then cover and refrigerate until chilled.
  • To make the topping, in a medium saucepan, bring the 6 tablespoons (3 ounces/85 g) salted butter, the cream, dark brown sugar, corn syrup or agave nectar, and 1/2 teaspoon salt to a gentle but full boil stirring gently until the sugar dissolves. Cook for 2 minutes without stirring. Remove from the heat and stir in the whiskey and 1 1/2 cups (150 g) pecan pieces. Let cool to room temperature and stir in the lemon juice.
  • Serve the cheesecake chilled or at room temperature. Cut into wedges and spoon topping over each serving.
  • Storage
  • The cheesecake can be stored in the refrigerator for up to 3 days. The topping should be made the day of serving; if chilled, it will lose its shine and will need to be rewarmed.

1 c water
2 1/2 c coarsley chopped toasted pecans

Steps:

  • 1. In a heavy-bottomed 6-8 quart pan, mix sugar, syrup, and water. Bring to a boil over medium heat, stirring constantly; reduce heat to medium-low and simmer 5 minutes. Stir in pecans.
  • 2. Ladle hot topping into hot jars, leaving 1/2 inch headspace. Gently run a narrow nonp- metallic spatula between topping and jar sides to release air bubbles. Wipe rims and threadsclean; top with hot lids, then firmly screw on bands. Process in boiling water canner for 10 minutes. Or omit processing and ladle into hot jars; apply lids. Let cool; then refrigerate
