Blondie Caramel Heaven image

The greatest brownie/blondie I have ever eaten. Addicting and delicious. I also like top them with a fluffy white frosting.

10 ounces individually wrapped caramels, unwrapped
½ cup evaporated milk
1 (18.25 ounce) package yellow cake mix
½ cup evaporated milk
¾ cup butter, melted
¾ cup milk chocolate chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). In a small saucepan combine caramels and 1/2 cup of evaporated milk. Cook over low heat, stirring frequently until smooth; set aside. Grease an 8x10 inch baking pan.
  • In a large bowl, stir together the dry cake mix, melted butter and remaining 1/2 cup of evaporated milk. Press half of the mixture into the bottom of the prepared pan, reserving the rest.
  • Bake for 6 minutes in the preheated oven. Remove the pan from the oven and let cool slightly. Sprinkle chocolate chips evenly over the surface. Pour the caramel mixture over the chocolate chips, then top with the remaining cake mixture. The top should be swirled with caramel and cake mixture.
  • Return pan to the oven for an additional 18 to 20 minutes, until firm. Cool on a wire rack, then refrigerate for 1 hour before cutting into bars.

Of every recipe ever given to me, I am most grateful for this one. I am happy to share it with you. I can also quit fretting that I will loose the slip of paper it was written on 10 yrs. ago, and find it on my favourite recipe site.

Yield 1 large roaster

Number Of Ingredients 6

2 cups salted butter
2 1/2 cups white sugar
1 cup white corn syrup
1 teaspoon vanilla
1 1/4 cups unpopped popcorn
3 cups whole almonds

Steps:

  • You will need a large roaster, sprayed with Pam.
  • Pop the corn, transfer into roaster with your hands, shaking out the unpopped kernels.
  • Stir in the nuts.
  • Place the butter in a large heavy pot over medium high heat.
  • When it is almost melted, add the sugar and syrup.
  • Stir constantly to dissolve the sugar, then often to avoid scorching.
  • When it reaches a boil, set timer for 5 minutes.
  • When it has finished boiling, stir in the vanilla.
  • Pour over the popcorn/nut mixture in the roast pan.
  • Mix well, then stir about every 10 minutes til cool.
  • Optional: You can substiture mixed nuts or walnuts if you desire.
  • Makes a nice hostess gift.
