- In medium bowl mix together flour, rolled oats, baking powder, baking soda, salt and nutmeg.
- In large bowl, with electric mixer, cream together butter and sugar until light and fluffy.
- Add eggs and vanilla, beating well.
- Add dry ingredients alternately with bananas and buttermilk, mixing lightly after each addition.
- Pour batter into greased 13 x 9 inch (32 x 23 cm) cake pan.
- Bake at 350 F ( 180 C) for 35 - 40 minutes or until toothpick inserted in centre comes out clean.
- Cool completely on cake rack.
- Ice with Caramel Fudge Frosting.
- Frosting: 1/3 cup butter 1 cup lightly packed brown sugar 1/4 cup milk, 2% 2 cups sifted icing suga r Melt butter in saucepan.
- Stir in brown sugar.
- Heat to boiling, stirring constantly.
- Boil and stir over low heat 2 minutes.
- Stir in milk.
- Heat to boiling.
- Remove from heat. Gradually stir in icing sugar.
- Spread on cooled cake. Yield: 24 servings Garnish plate with a sliced strawberry and banana slices that have been dipped in orange or lemon juice.

- HEAT oven to 350 degrees F. Coat 13x9-inch pan lightly with no-stick cooking spray.
- PREPARE cake mix according to package directions. Pour 2 cups batter into prepared pan. Bake 15 minutes.
- MELT caramels and butter in heavy saucepan over low heat. Remove from heat. Stir in sweetened condensed milk until blended. Spread caramel mixture evenly over cake. Spread remaining cake batter over caramel mixture.
- BAKE an additional 25 minutes or until cake springs back when lightly touched. Cool. Mix caramel topping and pecans in small bowl. Spread over cooled cake.

- Heat oven to 350°F (325°F for dark or nonstick pan). Make and bake cake mix as directed on box for 13x9-inch pan. Cool 15 minutes. With handle of wooden spoon, poke top of warm cake every 1/2 inch.
- In small microwavable bowl, microwave hot fudge topping uncovered on High about 15 seconds or just until pourable. Pour sauce over warm cake, spreading evenly with rubber spatula. Grab the pan with both hands, and whack it against the counter two times. This is to help the fudge topping sink down into the holes. Cover the cake, and place in the fridge 10 minutes to set up slightly.
- In medium bowl, toss 1 1/2 cups of the toasted coconut and 1/4 cup of the caramel topping. Remove cake from the fridge, and pour remaining caramel topping over the cake, reserving 2 tablespoons for drizzling later. Use your hands to shake cake pan from side to side to help evenly distribute caramel over cake. Top with caramel-coated coconut in an even layer.
- Sprinkle with remaining toasted coconut, and drizzle with reserved caramel topping. Cover loosely; refrigerate about 2 hours or until chilled. Store covered in refrigerator.

CHOCOLATE CARAMEL FUDGE CAKE
This is one of the most decadent cakes I have ever eaten! The chocolate flavor is wonderful on its own, but when you add the caramel and condensed milk filling it takes it up not just one level, but several!

- 1. NOTE: Melt chocolate in double boiler over simmering (not boiling) water. Preheat oven to 350 degrees. Grease and flour a 9 by 13 cake pan; set aside.
- 2. Sift together the cake flour, baking soda and salt and set aside.
- 3. Beat the butter and sugar together in a large mixing bowl; blend in the eggs and beat until light and fluffy.
- 4. Stir in the vanilla and melted chocolate; alternately add the dry ingredients and the sour cream to the butter mixture - beat well after each addition.
- 5. Stir in boiling water. Batter will be thin.
- 6. Divide cake batter in half; pour one half into the prepared cake pan and bake 10 - 12 minutes, or until firm to the touch, and remove from the oven.
- 7. Meanwhile, prepare the filling: Mix butter, caramels, and condensed milk in a sauce pan and melt over low heat, stirring often.
- 8. Remove from the stove and pour the mixture over the baked half of the cake; pour the remaining cake batter over the caramel mixture and return to the oven. Bake for 15 - 20 minutes or until firm to the touch.
- 9. When cool, serve with ice cream, whipped cream or frost with your favorite chocolate frosting.
