1 cup store-bought caramel sauce
1/2 cup milk (preferably not skim)
Assortment of "dunking" ingredients:
Sliced bananas
Sliced apples
Sliced peaches
Angel food cake, cut into cubes
Marshmallows
Graham crackers

Steps:

  • Melt the chocolate in a double boiler or in a large bowl set over simmering water or in the microwave for a few minutes on HIGH (stirring every minute). Stir in the caramel sauce and milk until blended and smooth.
  • Remove from the heat and transfer to a serving bowl. Arrange the fruit, cake, and other goodies around the chocolate mixture and start dunking!

Another recipe I adapted from a local fondue restaurant. This is comforting in winter and yet goes perfect with fresh summer fruits. Also a great way to serve dessert at a dinner party. One year for our neighbors for Christmas we layered all the ingredients substituting marshmallows for the marshmallow cream and w/o the cream in fancy gift bags. We tied it with ribbon and a tag explaining how to finish the recipe. What a hit!!!

  • Combine sugar and 2 tablespoons water in heavy medium saucepan. Stir over low heat until sugar dissolves. Increase heat; boil without stirring until mixture is deep amber color, occasionally brushing down sides of pan with wet pastry brush and swirling pan, about 3 minutes.
  • Add warm cream to caramel. Stir over medium-high heat until sauce is smooth and reduced to 1 1/4 cups, about 5 minutes. Add Cognac and cook 1 minute longer. Remove from heat. Add butter and stir until melted. (Can be prepared 8 hours ahead. Cover and chill. Rewarm over medium-low heat before serving.)
  • Transfer sauce to small fondue pot or flameproof ceramic bowl. Set pot over candle or canned heat burner. Serve with strawberries, apples or pears, bananas, tangerine segments and star fruit.

1 vanilla bean, split lengthwise and seeds scraped

Steps:

  • In a saucepan, combine sugar and 1/4 cup water. Cook over medium-low heat, stirring with a wooden spoon, until sugar has dissolved. Cover; bring mixture to a boil. Keep covered, about 1 minute, to let condensation wash down inside of pan to prevent crystals from forming (or wash down sides of pan with a wet pastry brush).
  • Raise heat to medium-high. Without stirring, cook, swirling pan, until mixture turns a medium to dark amber. At arm's length, carefully add cream (it will spatter). Add vanilla-bean seeds to pan, and whisk to combine. Transfer to a fondue pot, and set over a warming candle. Serve immediately with assorted accompaniments, as desired.

This makes enough fondue to partly fill a medium-sized crockpot.

1 (14 ounce) package caramels, unwrapped
1 (12 ounce) can evaporated milk

  • In a 2-quart saucepan, combine chocolate chips, caramels, milk, butter, raspberry jam.
  • Cook over low heat, stirring often, until melted and smooth- this may take a while, about 20-30 minutes (do not be tempted to rush things by raising the heat or your fondue will burn).
  • When everything has melted together, pour into a either a fondue pot or a crockpot set on low heat.

1 cup light corn syrup (recommended: Karo)
1/2 cup water
3 cups heavy cream
2 sticks unsalted butter, cut into cubes
4 teaspoons pure vanilla extract
Marshmallows, graham crackers, strawberries, raspberries, blueberries, pound cake cubes

Steps:

  • Add the first 3 ingredients to a saucepan and bring it to a boil over medium heat. Cook the mixture until the sugar has dissolved, about 10 to 15 minutes.
  • Lower the heat to a simmer and cook until the sugar mixture becomes an amber color, about 20 to 30 minutes. Remove from the heat and stir in the remaining ingredients. Bring the mixture back to a light simmer and cook for 5 minutes. Set aside and let cool for about 30 minutes.
  • Serve in a fondue pot with dipping choices surrounding the pot so they can be easily dipped in the caramel.

1 poundcake, cut into cubes

Steps:

  • Make the dulce de leche:.
  • Pour sweetened condensed milk into top of double boiler. Place over boiling water. Turn heat to low and simmer 1 1/2 hours or until thick and caramel-colored, stirring occasionally.
  • Whisk until smooth. Keep warm.
  • Make the chocolate caramel cream:.
  • Heat sugar and water in small saucepan. Bring mixture to a boil. Cook without stirring until syrup becomes caramel color. Remove from heat and gradually stir in heavy cream.
  • Return to heat and stir until syrup is dissolved. Remove from heat.
  • Break up chocolate and add to cream mixture. Let stand 1 minute. Whisk until smooth. Gradually stir in butter and salt.
  • To serve: Whisk warm dulce de leche into chocolate caramel cream until smooth. Pour into fondue pot to keep warm. Serve with fruit, pound cake cubes and/or Godiva demitasse pieces. Makes about 2 1/2 cups.

One 15.85-ounce jar prepared dulce de leche (about 1 1/3 cups)

Steps:

  • Build a medium-low campfire that has a grate for cooking. Break the chocolate bar into small pieces using the handle of a wooden spoon (or you can smack it against a picnic bench).

I bought caramel candies before I looked on racipezaar for a recipe, but when I got home and looked for a recipe, I couldn't find one that called for caramel candies and only served a few people and didn't have lots of other ingredients that I did not have on hand. So this is what I came up with. It was very tasty. It is the right amount for one apple and one banana and some tortilla chips which, believe it or not, are delicious in the caramel sauce as it is like yummy warm caramel corn! I served this with other snack food for four adults and one young child. It seemed to be the right amount. Use caution with your fondue pot, mine sits over a candle and the caramel started to scorch on the bottom.

2 tablespoons butter or 2 tablespoons margarine
2 tablespoons milk

  • Remove plastic wrap from caramels.

  • Add a little more milk if it is too thick.
