CHEESECAKE CARAMEL TOFFEE CHOCOLATE CHIP COOKIE BARS
This recipe combines my love of cookies with my love of cheesecake. Plus, it has some toffee bits and caramel bits thrown in for my pleasure good measure. If you're not familiar with caramel bits, they can be found right in the chocolate chip section in your supermarket. They are made by Kraft. They come in an eleven-ounce bag and cost around three dollars. They are super adorable (well, as adorable as little balls of caramel can be). They are just like Kraft wrapped caramel candies, but in little ball form - perfect for baking.

- Preheat oven to 350 degrees.
- Prep a 9 x 13 pan by lining it with parchment paper. Set aside.
- Cream together the butter, sugars, salt and vanilla. Beat in the egg, then the baking soda and flour.
- Stir in the chocolate chips, caramel bits and toffee pieces.
- Divide mixture in half. Spread half of the dough evenly into the prepared pan. I use my fingers to do this. Set aside.
- In a medium bowl, cream together the cream cheese and white sugar until fully blended. Beat in the egg and vanilla. Mix until completely smooth.
- Pour and spread cheesecake layer over the pressed cookie dough layer.
- Using your hands, press pieces of the remaining dough into flat discs. Lay on top of the cheesecake layer. You don't have to have the entire cheesecake layer totally covered. In fact, leaving a bit of the cheesecake layer peeking through in spots looks good once the bars bake and cool.
- Bake for 20 - 30 minutes or until the bars are cooked through and top is lightly brown.
- Allow to cool completely before removing from pan by way of the parchment paper.
- Once cooled and removed from pan, cut into twelve equal bars.
- Store in refrigerator.
- NOTE: If you use the caramel bits in this recipe, allow the bars to come almost to room temperature (after refrigerating) prior to serving. The caramel bits harden up a bit in the fridge.

BLOODY CHEESECAKE BARS WITH BROKEN GLASS CARAMEL

- Preheat the oven to 375 degrees F. Line a baking sheet with parchment paper, leaving excess paper on both ends to use as handles later on.
- In a large mixing bowl, prepare the sugar cookie mixes according to the package instructions. Stir the food coloring into the cookie dough to create a bright red dough. Press the dough into an even layer in the prepared baking sheet. Bake until crispy around the edges, about 20 minutes. Allow to cool completely.
- Meanwhile, prepare the cheesecake layer. Put the cream cheese in the bowl of a stand mixer. Using the beater attachment, whip the cream cheese on medium speed until light and fluffy, about 2 minutes. Add the confectioners' sugar, honey, vanilla and salt. Whip on high speed for 1 minute more to incorporate the ingredients.
- Spread the cheesecake mixture over the cooled cookie layer. Use an offset spatula to make the top of the cheesecake very smooth. Tap the baking sheet against the counter several times to remove any air bubbles. Put the baking sheet in the refrigerator to chill the cheesecake until firm, at least 6 hours.
- Lift the cheesecake out of the baking sheet, using the excess parchment paper as handles. Cut the bars into jagged triangles of various sizes (see Cook's Note) and place on a serving platter. Decorate the bars with pieces of Broken Glass Caramel and Raspberry Blood Sauce.
- Line a baking sheet with a silicone mat.
- Attach a candy thermometer to a heavy-bottomed pot. Pour the granulated sugar, light corn syrup and 3/4 cup water into the pot and place over medium heat. Cook, stirring occasionally, until the sugar is dissolved. Bring to a simmer and simmer until the mixture reaches 300 degrees F, about 40 minutes. Immediately pour the caramel onto the prepared baking sheet. Allow the caramel to cool until set, about 20 minutes.
- Break the caramel into pieces to resemble shards of broken glass.
- Put the preserves into a small saucepot over medium heat. Heat until the preserves melt into a thin syrup, about 3 minutes. Strain the syrup with a fine-mesh sieve; discard any seeds and pulp. The strained syrup is ready to be used as a "bloody" sauce for dessert. Store in an airtight container, refrigerated, for up to 3 weeks.

SALTED CARAMEL DULCE DE LECHE CHEESECAKE BARS

- 1. Preheat oven to 350°F (175°C). Coat 13x9x2-inch metal baking pan coated with nonstick spray. Mix graham cracker crumbs, sugar, and cinnamon in medium bowl. Add melted butter; stir until coated. Transfer crumb mixture to pan. Press evenly onto bottom of pan. Bake until crust is light golden, about 10 minutes. Cool completely on rack. 2. Blend the cream cheese and sugar together until smooth and creamy, about 1 minute. Add the eggs 1 at a time, blending for 3 to 5 seconds each time until incorporated. Add in the dulce de leche and vanilla and blend until just mixed - about 10 seconds. Spread the batter evenly over the cooled crust and bake until the cheesecake mixture is just set in center and the edges are puffed and slightly cracked, about 38 minutes. Transfer to rack and cool completely. 3. Once the cheesecake bar is cooled, pour 2/3 cup dulce de leche sauce and a the 3 tablespoons of whipping cream in a glass measuring cup. Microwave at 10 second intervals stirring between each interval. Do this until the mixture is smooth and combined. Next, take about 10 caramel chews and heat them in the microwave for 15-20 seconds until just melted. Quickly dump the melted caramel chews into the dulce de leche mixture and stir continuously until combined. The consistency should be pourable, but not too liquid. You want the caramel topping to be soft and gooey, but not too runny that is pours down the side of your bar once you cut it. Cover and chill. 4. Lastly - (and this is the best part!) when you're ready to serve the bars sprinkle the caramel glaze lightly with some fleur de sel. *Fleur de sel is a light and flaky sea salt, with a less salty and bitter taste than regular table or sea salt.

- Salted Caramel Sauce:
- Combine the sugar and water in a medium saucepan and bring to a boil over medium-low heat; continue to cook, without stirring, until the sugar has dissolved (about 4 min.).
- Increase the heat to medium-high, then cook until the caramel has turned to a deep golden color (about 6 to 7 min.).
- Remove from heat. Add the heavy cream and whisk to incorporate, being careful as the heavy cream will bubble heavily.
- Return the saucepan to the heat. Add the butter and salt; stir. Cook for another minute.
- Turn off the heat and let the caramel sauce cool down before using. (The caramel will get thicker after it cools down but it won't harden at room temperature.)
- Pretzel Crust:
- Preheat the oven to 400°F.
- Line a 2-inch-deep 8x8-inch pan with parchment paper.
- In a small bowl, combine the pretzel crumbs, sugar and butter.
- Press the mixture into the bottom of the pan and bake for 12 min. or until golden brown.
- Cheesecake:
- Reduce the oven temperature to 325°F.
- In a medium bowl, beat the cream cheese and sugar until smooth.
- Add the eggs, one at time, and mix until just blended.
- Stir in the vanilla and flour just until combined.
- Pour the cream cheese batter over the crust. Add ½ cup of the salted caramel sauce and swirl it into the cream cheese batter. Bake for 30 min. or until the center of cheesecake is set.
- Let the cheesecake cool completely at room temperature.
- Pour the remaining 1 cup salted caramel sauce over the cooled cheesecake, then refrigerate overnight (or at least 4 hours).
- Before serving, decorate with whole pretzels and salted caramel popcorn.

- 1. First pre-heat the oven to 350F. Then spray the bottom & sides of a 13x9 inch baking pan with cooking spray. Then placethe cookie mix in a medium bowl & cut in the butter until mixture is crumbly. Reserve 1 1/2 cups of the mixture forthe topping. Then press the remaining mixture into the bottom of the baking pan. Then Bakefor about 10 mins.
- 2. Next in a large bowl beat the cream cheese,sugar, flour,1/4 cup of the caramel topping ,vanilla & egg with an electric mixer on medium speed until smooth.
- 3. Next spread the cream cheese mixture evenly overthe partially baked cookie base. Then sprinkle with the reserved crumb topping,almonds & toffee bits.
- 4. Then bake for about 35 to 30 minsor until lightly golden brown. Let fully cool about 30 mins. Then refrigerate for about 2 hours or until fully chilled. The drizzle with the remaining 1/4 cup caramel topping. Then cut into 9 rows by 4 rows to make the bars. Store in the refrigerator.
